Hello my dear readers,
In this post all my pigs get along…the chocolate one and the ones in the blanket.
Isn’t life fun when we get along.
Of course it is. So, let’s learn from our pigs.
And let’s have 2019 as the year of fortune, love and JOY!

After all it is December 31 of 2018. and I want to dream.
Along with that I also want to share this easy and amazing recipe.
The name is….
Pigs in a blanket
This is super easy recipe and you need only a few ingredients to make it happen.
It is a great appetizers for kids or adults and/or it can be your work lunch for the next day.
Needless to say I love this recipe and I make it all the time.
It is a personal favorite of mine…
So, let’s start our baking show. Time for….
SHOPPING LIST
- butter puff pastry
- hot dogs Wieners
- cheese
- sesame seeds
ACTION TIME
Making the best and my personal favorite appetizer …
**********************************************************
PIGS IN A BLANKET
**********************************************************
Ingredients
Butter puff pastry, thawed (450 gr)
Hot dogs Wieners ( I cut into 2.5 inches but you can cut longer)
Optional: cheese, sesame seeds
Instructions
Thaw the dough in its individual sealed cellophane wrapper or in the unopened box at room
temperature for two hours or overnight in the fridge.
Preheat oven at 400 F.
Line baking sheet with aluminum foil (dull side up). Set aside.
Mix 1 egg and 1/8 tsp salt by fork. Set aside.
Now, let’s imagine your dough is thawed and we are ready for
fun time in the kitchen.
Your first step is to remove cellophane wrap and gently unroll the dough.
Find the sharp knife and cut into 3 x 3 inches.
Place a wiener piece on 3 x 3 pastry square and roll.
Place on prepared baking sheet and brush with egg.
Optional: Sprinkle with sesame seeds and salt.
Repeat until all pastry is used.
Bake at 400 F for 25 to 30 minutes.
Cool and eat.
Don’t forget. Be kind and share with your family and friends.
Or bring to your office and share with your co-workers. You are also sharing calories.

ACTION TIME – TIME FOR MAGIC

OREO TIRAMISU MADNESS
*******************************************************************
Ingredients
17 pcs of Oreos (crushed)
1/8 cup melted butter
Gelato Tiramisu – Haagen-Dazs 500ml
1 cup chocolate chips (melted)
Instructions
Line 6 cup muffin tin with paper liners. Set aside.
In a medium bowl combine melted butter and crushed Oreo.
Use 1 TBSP + 1 tsp of mixture and press into the bottom of muffin liner.
Add 1/4 cup of Tiramisu ice cream and top with 1 TBSP of Oreo mixture.
Cover the muffin tin with plastic wrap and freeze for a few hours of overnight.
Next day: Serve with melted chocolate and whip cream.
Decorate with Oreos, sprinkles and chopped chocolate.
So, let’s recapture the MAGIC:
-Line muffin tin with paper liners
-Mix Oreo crumbs and melted butter
-Press 1 TBSP + 1tsp Oreo mixture into paper liner in a muffin pan
-Add 1/4 cup Tiramisu gelato
-Top with 1 TBSP of Oreo/butter mixture
-Cover and freeze
-Serve with melted chocolate, whip cream and sprinkles.

Vintage Grandma’s Nostalgia Cake – Nutella and Einstein
Hello my dear readers,
This amazing cake is both elegant and easy.
It is my family recipe and an integral part of so many family events.
From birthdays to weddings and so much more.
This cake have many, many versions and today I am going to share one of my favorite.
Nutella Version.
My grandmother use to say:

As you can see, the formula above is way more important to me
than Alert Einstein’s

Sorry Einstein…plus did you hear that he may have actually stolen his wife’s theories….

Before we start to make this recipe, please read important NOTE below.
IMPORTANT NOTE
- Please, make the filling 2 days before you plan to make the cake.
- Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).
- Spray with baking spray and set aside.
Now, I am ready to to make cake.
Let’s start shopping.
SHOPPING LIST
- flour
- eggs (organic if you can)
- sugar
- baking powder
- cornstarch
- salt
- Nutella
- heavy cream
- raspberry jam
- chocolate
ACTION TIME

Vintage Grandma’s Nostalgia Cake
*************************************************************************
Ingredients
6 large eggs (organic)
3/4 cup sugar
1 cup flour (AP)
1 tsp baking powder
1/8 tsp salt
1 tsp cornstarch
FILLING
1 1/2 cups heavy cream
2 1/2 cups Nutella
3 oz melted chocolate
1/3 cup raspberry jam
Instructions
Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).
Spray with baking spray and set aside.
Preheat oven to 350 F.
In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)
Sift the flour, cornstarch, baking powder and salt.
Add into eggs mixture and fold gently using a spatula.
Important: Don’t use mixer when adding flour mixture.
Fold using a spatula.
Be sure that flour mixture is incorporated into eggs mixture.
Spread the batter on the prepared jelly roll pan.
Bake at 350 for 15 minutes.
Cool completely. (for about 2 hours)
Filling
Melt the chocolate using a double boiler method.
Cool it.
In a mixing bowl mix 1 1/2 cups of heavy cream for about 3 minutes.
Add Nutella and chocolate and mix until incorporated. (1 minute)
Keep in the fridge until your cake is ready.
Now, if your cake is cool we can start my favorite part…
ASSEMBLY
Cut the cake with a knife into five equal pieces.
The size is 3×12 inches.
Cut through the underlying foil so you can each move independently. (don’t worry)
Use your first piece (3×12 inch) and spread with Nutella filling.
Roll the first cake.
Use the aluminum foil as the cake support, begin to roll the cake
into a roll and continue tucking cake as you peeling away the aluminum foil.
Place the rolled cake upright on a plate. (or what you have for your cake)
Then back to jelly pan where you have 4 strips of cake left.
Spread raspberry jam on second strip/cake and lift it from the foil.
Wrap the second cake around the roll on the serving plate.
Don’t be afraid, just do it.
Now use the third cake strip and cover with Nutella filling.
Lift from the aluminum foil and wrap around the roll on the serving plate.
Continue with the next 2 strips or until done.
Then…
Wrap the whole cake in plastic wrap and keep in the fridge for 3 hours.
DECORATE
Top the cake with Nutella filling and decorate with chocolate.
Keep in the fridge for about 5 hours before you start serving.
Enjoy and share.
You can keep this cake in the fridge for about 5 days.
Like I said this cake is easy to make and even easier to eat.

5 STAR HOT CHOCOLATE
*******************************************************
Ingredients
1 cup milk (2%)
1/3 cup heavy cream
50 gr Lindt Orange Intense chocolate (or 1/2 chocolate)
3 oz semi-sweet chocolate
1 TBSP Nutella
Instructions
Chop the semi-sweet chocolate and Lindt chocolate.
Set aside.
Combine milk and heavy cream in a small saucepan.
Heat over medium heat until almost boiled.
Turn off the heat, add chopped chocolate and Nutella.
Whisk until combined and silky smooth.
Pour into your favorite cup, top with whipped cream and decorate as you wish.
I used chocolate and caramel sauce.

- baking soda, salt and vanilla extract
ACTION TIME

BE BEST MELANIA SUGAR STAR COOKIES

Ingredients
6 TBSP butter, unsalted
1 cup icing sugar
2 egg yolks
1 egg white
2 TBSP sour cream
2 cups AP flour
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla extract
INSTRUCTIONS
In a medium bowl combine flour, baking soda and salt.
Set aside.
Beat butter and icing sugar until blended.
Add 2 egg yolks, 1 egg white and 2 TBSP sour cream.
Beat until smooth and add 1/2 tsp vanilla extract.
Mix until incorporated.
Add in flour mixture and mix until dough just comes together.
Divide into 2 disk and refrigerate for 1 hour or longer.
Preheat oven to 350 F.
Roll out one disk on wax paper .
Using a star cookie-cutter, cut out star shapes.
Bake at 350 F for 9 minutes.
Cool.
Decorate as you wish.

1 egg white
1 cup peppers (cut into squares)
1/2 cup chopped spinach
1/2 cup ricotta cheese
1/3 cup feta cheese
1/4 tsp salt
1/8 tsp black peppers
1 tsp oregano
1 TBSP Italian minced parsley
INSTRUCTIONS
Spray 6 cup muffin pan with baking spray. Set aside.
Whisk 2 eggs and 1 egg white.
Stir in 1 cup peppers, 1/2 cup spinach, 1/2 cup ricotta cheese and 1/3 feta cheese.
Add salt, pepper, oregano and Italian parsley.
Pour into muffin pan.
Bake at 350 F for about 21 minutes.
Enjoy and share.
