INGREDIENTS
1 large cucumber, peeled and chopped
3 tomatoes, chopped (large or medium size)
small bell pepper, chopped
3/4 cup Feta cheese, cubed
2 cups organic spring mix
small onion (optional)
9 Greek olives (optional)
Healthy Greek Salad Dressing
INGREDIENTS FOR SALAD DRESSING
1/4 cup apple cider
3 TBSP Olive oil or use your favorite oil
1/2 TBSP dried oregano
3 cloves of garlic, minced
1 tsp fresh lemon juice
salt and pepper to taste
INSTRUCTIONS
Your first step is making healthy Greek Salad Dressing.
Whisk apple cider vinegar, olive oil, lemon juice, minced garlic, dried oregano until blended.
Season to taste with salt and grounded black pepper. Set aside.
Making the healthy Greek Salad – Combine all salad ingredients.
Using your favorite salad bowl, combine cucumber, tomatoes, bell pepper, onions and spring mix .
Then toss with dressing.
Finish with feta cheese and olives.
Important: You can cube or crumble Feta cheese. It is your choice.
