This cake was not just the part of my school lunch days but also part of my family gathering, lazy Sunday afternoons or
just my family TV dessert.

So, how do I describe this cake to you?
I am not sure I can, but I will try. (don’t judge me)
Description of Raspberry Cake
Soft, moist and tender cake filled with raspberry jam and rolled into a log.
Perfect cake for the summer or winter time. Or really any day of your life.
Did I mention the recipe is super simple, the ingredients are everyday ingredients.
Eggs, sugar, flour, raspberry jam and just a little fancy addition, Dr. CHOCOLATE.
How easy is that?
And yes, I know you are ready to make this roll cake.

- EGGS (organic)
- SUGAR
- FLOUR (AP)
- RASPBERRY JAM
- BAKING POWDER, SALT
- CORNSTARCH
ACTION TIME
Making the best homemade mini roll cake

RASPBERRY ROLL CAKE

Ingredients
6 large eggs (organic)
3/4 cup sugar
1 cup flour (AP)
1/8 tsp salt
1 tsp baking powder
1 tsp cornstarch
Raspberry Jam
INSTRUCTIONS
Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).
Spray with baking spray and set aside.
Preheat oven to 350 F.
In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)
Sift the flour, cornstarch, baking powder and salt.
Add into eggs mixture and fold gently using a spatula.
Important: Don’t use mixer when adding flour mixture.
Fold using a spatula.
Be sure that flour mixture is incorporated into eggs mixture.
Spread the batter on the prepared jelly roll pan.
Bake at 350 for 15 minutes.
Cool completely. (for about 2 hours)
Cut the cake with a knife into five equal pieces.
The size is 3×12 inches.
Important About the cake instructions
Cut through the underlying foil so you can each move independently. (don’t worry)
Use your first piece (3×12 inch) and spread with raspberry jam.
You can use as much as you want.
Roll the first cake. Don’t be afraid, just do it.
You have to be sure that your cake is aware who the boss is.
In case you feel just a little insecure regarding the rolling,
please use the aluminum foil as the cake support.
Begin to roll the cake into a roll and continue tucking cake
as you peeling away the aluminum foil.
Repeat this process until all 5 pieces are rolled.
Cover with plastic wrap or aluminum foil.
STORAGE OF ROLL CAKE
Keep the cake in the fridge or freezer.

Ingredients
5 oz chocolate chopped (semi-sweet)
1/4 cup heavy cream
Melt the chocolate and heavy cream using a double boiler method.
Cover all or some of your mini raspberry roll cake.
Decorate as you wish.
Serve and enjoy this elegant and gorgeous cake.
