Let me repeat. This recipe is the combo of bars and cookies. And not just any cookies but the best 5 star cookies. The chocolate chip cookies. Fill that with Nanaimo bar’s filling and you have the winner of 2020.

EQUIPMENT NEEDED
-Mixer (KitchenAid, hand mixer or your favorite)
-Mixing bowl
-Baking sheet
ACTION TIME
MAKING NANAIMO BARS COOKIES
Ingredients
1/2 cup butter
1/2 cup shortening
1 cup brown sugar
1/2 cup white sugar
1 tsp water
1 tsp pure vanilla extract
2 eggs
3 cups flour, all purpose and unbleached
1 tsp baking soda and 1 tsp salt
1 3/4 cups chocolate chip cookies
Nanaimo Bars Filling
1/4 and 1/8 cup butter
3 TBSP milk
3 TBSP Bird’s custard powder
2 1/4 cups icing sugar
INSTRUCTIONS
Making Nanaimo Bars Filling
In a mixing bowl combine custard powder and milk.
Stir until smooth.
Add icing sugar and butter.
Mix using the whisk attachment for about 3 to 5 minutes. (high speed)
Scoop Nanaimo’s filling by 1 TBSP sized spoonful and freeze them. Freeze for at least 2 hours and up to 3 days.
Making Cookies
In a small bowl combined your dry ingredients, flour, baking soda and salt. Set aside.
Combine butter, shortening and sugars and beat for 3 minutes.
Then add eggs, mix in.
Then add vanilla and water. Mix until all combined.
After that add flour mixture and mix until all ingredients are combined.
Stir in chocolate chips.
Chill dough in the refrigerator for 30 minutes.
ASSEMBLE THE COOKIES
Remove cookie dough from the refrigerator.
Roll cookie dough, 1 1/2 TBSP each into balls
Using your thumb, make an indent into cookie dough ball.
Place nanaimo filling ball inside the indentation.
Cover with another cookie ball and mold around the yellow filling, making sure it is completely covered and concealed. (add more dough as needed)
Repeat with remaining cookie dough and Nanaimo filling.
Return to the freezer for about 10 minutes.
Preheat oven at 350 F.
Place 6 large cookies on your baking sheet and bake for about 14 minutes.
Remove from the oven. Cool.
IMPORTANT NOTES for Nanaimo Bars Cookies
Unbaked cookie dough balls with Nanaimo filling inside will freeze well. (for about 3 months)
You can also make the Nanaimo filling and freeze for up to 7 days.
To make Nanaimo Bars Cookies you can use your own favorite chocolate chip cookies.
If you want to make Christmas version of this recipe, you can use Mint Nanaimo Filling.

The filling always runs out. What could be causing that? I left the filling freeze for two days.
Ok, this was very important question.
Why did it happen?
Did you follow the recipe? (did you measure correctly?)
If you did, the next step we need to check is your baking skills.
Did you assembly the cookie correctly? (I believe this was your problem). Please check the pictures below and be sure the filling is inside of the cookie. (you should not be able to see the yellow filling)
BTW, see the picture 2 below. I can’t repeat this enough: You can’t see the filling. Then place cookies into the freezer for 10 minutes or longer.
If you still are having the same problem, please read super important note below.
SUPER IMPORTANT NOTE: Be sure you can’t see the filling. If you still have the same problem, you will have to return cookie to the freezer 2 times. After the first assembly place the cookie into the freezer for 10 minutes. Then remove from the freezer and cover the top (above the filling) with additional layer of chocolate chip dough. Then return to the freezer again for another 10 minutes. (so you increase the security of the filling. It can’t escape because it has additional dough layer).
