It is that time of the year when I need something to pick me up, cheer me up or just lift me up.
Yes, ladies and gentlemen I am talking about the one and only – TIRAMISU!
I or we need to make the tiramisu. Why?
Because it is Italian.(do I need to say more?) Of course, NOT.
But, still I will continue…
The tiramisu is a popular coffee-flavored dessert made of ladyfingers dipped in coffee,
layered with a whipped mixture of mascarpone cheese, whip cream and sugar.

TIRAMISU Pick me up
Ingredients:

1 1/4 cup mascarpone cheese
1 3/4 cup whip cream
5 TBSP icing sugar
5 tsp Nutella
Ladyfingers (200 gr or 7.05 oz)
2 cups very strong coffee
1 TBSP rum
1 tsp vanilla extract
cocoa powder for dusting
Directions for Tiramisu Recipe:
Make very strong coffee.
Add 1 Tbsp rum and 1 tsp vanilla. Stir all ingredients together.
Beat 1 3/4 cups whip cream.
In another bowl mix 1 cup mascarpone cheese and 5 TBSP icing sugar.
Add whipped cream into mascarpone cheese and fold gently.
Be sure that mascarpone cheese and whip cream are fully incorporated.
Line 9×5 inch loaf pan with foil.(see the picture)

One at a time, dip both sides of ladyfinger into the coffee mixture, lining the bottom of 9×5 pan.

(I used 3 whole + 3 trimmed ladyfingers for the bottom)

Spread half of the cheese mixture on top of ladyfingers.
Add 5 tsp of Nutella.

Add another layer of ladyfingers. (dip and line second layer of ladyfingers)

Spread remaining mascarpone filling on top.

Dust with cocoa magic.
Chill for 8 hours or overnight.
Cut into desired pieces and enjoy.

The best Tiramisu. You will impress your family and friends. It can be made ahead of time.
Ingredients

Mix until tripled in volume!

In another bowl (bowl #2) sift 2 TBSP flour, 2 TBSP cocoa and 2 tsp baking powder.
Then add 2 cups ground hazelnuts and mix all dry ingredients together.
Using spatula fold dry ingredients into the eggs, in 3 additions. (slowly)
IMPORTANT: Be very gently when mixing with a spatula.
I will repeat, be very gently because you don’t want to upset the dough.
You want the dough to have the fluffiness. Even if you are a jerk you will have to control your anger and be gentle.
Pour batter into prepared pan and bake at 350 F for about 30 minutes.
Use a toothpick to check if the cake is done.
Just stick a toothpick into the center of cake. If it comes out clean, your cake is done!
Once baked, leave in the pan for 10 minutes, then transfer to a cooling rack.
Once the cake is cool, slice it into two layers.
Making the best Nutella Filling
Mix 1 cup Mascarpone and 2 cups Nutella.
In another bowl mix 1 cup of whip cream.
Now add whipped cream to Nutella Mascarpone mixture.

Mix all ingredients together for about 1 minute until colour is dark brown.

Using your food processor ground 1 cup wafers and 1/2 cup hazelnuts together.

Now, you have everything: Cake, Filling and ground hazelnut/wafers mixture.
The Final Steps – ASSEMBLY LINE
First layer cake + 1/2 of Nutella filling and sprinkle with crushed wafers/hazelnut mix

Dream Chocolate Torte
Ingredients
5 large eggs
6 TBSP sugar
2 cups ground Hazelnuts
2 TBSP flour
2 TBSP cocoa powder
2 tsp baking powder (no aluminum)
Instructions

Second layer cake and cover with Nutella filling.
Decorate outside with crushed wafers/hazelnuts mixture.
