How to make Maple Carrot Cheese Cake?
INSTRUCTIONS
3/4 cup butter
3/4 cup brown sugar
3 eggs
1/2 TBSP vanilla extract
1 3/4 + 1/8 cups flour
2 tsp cinnamon
1/2 tsp salt
1/2 tsp + 1/4 tsp baking powder
1 tsp baking soda
1/2 cup + 1 TBSP maple syrup
1/4 + 1/8 cup milk (2%)
3 cups grated carrots
1 cup walnuts (toasted)
Maple Cheese Filling
8 oz cream cheese
2/3 cup butter
1/2 cup heavy cream
6 3/4 cups icing sugar
1/8 cup maple syrup
1 tsp vanilla extract
INSTRUCTIONS
Use 3 6-inch round cake pans, line the bottoms with parchment paper.
Preheat oven to 350 F.
Making the moist carrot cake
In a medium size bowl whisk flour, cinnamon, baking powder, baking soda and salt. Set aside.
For your next step you will need to use the best mixer you have.
Beat the butter until creamy, add brown sugar and keep beating until fluffy.
After that add one egg, mix, add second egg, mix, add third egg and mix.
IMPORTANT: Don’t worry if the mixture look curdled.

Bake at 350 F for about 36 minutes or until done. (use a tester to insert into the center of the cake)
Cool it.
IMPORTANT: At this point you can wrap the carrot cake layers and freeze for about 6 weeks.
Thaw before making maple cheese filling.
