Yes, this is healthy 9 to 5 breakfast or lunch option. So, let’s do it. For you or your family and friends you need to buy the following ingredients under the title called…
SHOPPING LIST
- spinach
- eggs (large, organic)
- mozzarella cheese
- feta cheese
- milk
- COLLAGEN
- red pepper
- onion
- garlic
- black pepper
- salt
- olive oil (organic)
EQUIPMENT NEEDED
-12 cup muffin pan
-medium size sauce pan
-bowl or I like to use large size glass measuring cup
MAKING HEALTHY BREAKFAST PROTEIN BITES-Collagen Power Magic
Ingredients
1 1/2 TBSP olive oil
3 cups spinach, chopped
1/8 cup chopped onion
1/2 cup mozzarella cheese
1/3 cup feta cheese
8 eggs
1 cup chopped red peppers
1/4 cup milk
1/3 cup collagen
3 cloves of garlic
1 tsp salt
1/2 tsp black pepper (or use to your taste)
INSTRUCTIONS
Preheat oven to 350 F.
Coat 12 muffin pan with cooking spray. Set aside.
Using a medium nonstick skillet or sauce pan add olive olive, swirl to coat. Add diced onion, saute until almost tender. (2-3 min)
Then add chopped spinach, saute 1 min, stirring constantly.
Cool for 5 minutes.
Add shredded mozzarella cheese, feta cheese, diced red pepper and minced garlic. Stir to combine.
In a small bowl combine 8 eggs, 1/4 cup milk, 1 teaspoon salt, 1/2 teaspoon ground black pepper.
Stir in cheese mixture.
Your next step is to add collagen and stir all ingredients together until the magic is completed.
Then divide your magical mixture with collagen evenly among 12 muffin cups.
Bake at 350 F for about 25 minutes.
Remove from the oven and cool for a 10 minutes.
Enjoy and share.
Important: If you don’t have 12 cup muffin you can use 6 cup muffin and baked 2 x.
Quick Note
Collagen – I used this collagen. See the image below. You can buy it in any health store or online.
Eggs – use large, organic eggs.
Spinach – this recipe was made with fresh, organic spinach.
Milk – this recipe was made with 2%. You can use 3.25%
Garlic and onions – I don’t like onion and I use as little as possible. However, I love garlic and I like to add fresh, minced garlic as much as I can.
Salt and black pepper – for this recipe I used 1 tbs of each. Please use to your taste. You can also add dry oregano or fresh Italian parsley to this recipe.
