Lemon Bars.
Lemon bars are quite simple to make. The first part is a perfectly crumbly shortbread base followed by a gooey lemon topping.
The final special touch – magic sugar dust …and the princess came to our blog.
Her name is Martina McBride and she is a very famous country singer. She is also very famous for her cooking and baking.
Her book “Around the Table” is must have. For today and for this blog I am going to make “Lemon Coconut Bars”.
So, if you need some magic in your life…try this recipe.
PRINTING THE RECIPE
Stars who love to cook-Lemon Bars
Ingredients
- Crust:
- 2 cups AP flour
- 1/2 cup sugar
- 1 1/2 cups sweetened flaked coconut
- 1 1/2 sticks butter, chilled and cubed
- Filling:
- 1 1/2 cups sugar
- 4 large eggs
- 1/2 cup fresh lemon juice
- 2 tsp AP flour
- 1 tsp baking powder
- 1/3 cup icing sugar
Instructions
- Heat oven to 350 F.
- Line 13x9 baking pan with aluminum.
- Combine flour, sugar and 1/2 tsp salt in processor. Add coconut and butter.
- Process until a fine meal forms, press into pan.
- Bake for 15 min.
- For the filling:
- Combine first 6 ingredients and a pinch of salt in processor,blend until smooth.
- Pour over hot crust.
- Bake for 20 min.
- Let it cool. Dust with magic and say
