Our recipe today is for all fathers who like cookies.
Pair cookies with a special beer tasting and you have the winner.
Yes, cookies + beer = Happy Fathers Day!
BTW, not just any cookies.
Our selection is very specific.
Empire cookies with apricot jam.

So, let’s start with our first step which is always shopping.
You need to buy the following ingredients:
- butter
- icing sugar
- eggs
- flour
- apricot jam
- almond and vanilla extract
Super simple, don’t you think.
Our next step is…
Making Empire Apricot Cookies
Ingredients
1 cup butter, unsalted
3/4 cup icing sugar
2 egg yolks
1 whole egg
1/2 tsp vanilla extract
2 +1/2+ 1/8 cups flour (AP)
Apricot jam
Icing
1 1/2 cups icing sugar
3 TBSP warm water
1/2 TBSP almond extract
INSTRUCTIONS
Line baking trays with parchment paper.
Set aside.
Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)
Add egg yolks,whole egg and vanilla extract and mix for about 1 minute.
Add sifted flour and stir until blended.
Shape into a disc and wrap in plastic wrap.
Chill for about 3 hours.
After chilling….
Time to play with your dough…
Roll it out to 1/4 inch thick.
Cut out the cookies using any cookie cutter you like.
Place the cookies on the baking tray with 1 inch space between them.
Bake cookies at 350 F for 10 minutes.
(it should be lightly browned around the edges)
Cool the cookies.
Spread half of the cookies with 1/2 TBSP apricot jam and top with remaining cookies.
Repeat with the remaining cookies.
Icing
Combine icing sugar, almond extract and enough hot water to make a thin icing.
Frost tops of cookies and decorate with sprinkles, color sugar, dry apricot.
Allow icing to dry. (about 1 hour)
Keep them in airtight container. (3 days)

From the recipe above you will get about 14 large cookies.
The baking time for this cookies were 10 minutes and 30 seconds.
If you use 3 inch cookie cutter the baking time is 11 minutes. (or was for me)
