Our recipe today is going to bring you very quick comfort and coconut bliss called…
COCONUT BLISS COOKIES.
Description

Cookies are soft, tasty, delicious and full of coconut.
So, if you like coconut you will like these cookies.
Also, this recipe is the perfect snacking treat for YOU, your kids and your family.
Overall, definitely my go to recipe for yummy and delicious cookies.
Since you are ready for action, let’s make Coconut Bliss Cookies.
COCONUT BLISS COOKIES
(14 large cookies)
Ingredients
1 cup butter
3/4 cup icing sugar
1 egg
1 egg yolks
1/2 tsp vanilla extract
2 +1/2+ 1/8 cups flour (AP)
Coconut Topping
1/4 cup water
1 1/3 cups sugar
3 TBSP corn syrup
1/2 cup heavy cream
2 1/8 cup coconut, toasted (use sweetened coconut)
Decoration:
1 cup melted chocolate chips
INSTRUCTIONS
Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)
Add egg, egg yolks and vanilla extract and mix for about 1 minute.
Add sifted flour and stir until blended.
Shape into a disc and wrap in plastic wrap.
Chill for about 3 hours or overnight.
After chilling….
Time to play with your dough…
Roll it out to 1/4 inch thick.
Cut out the cookies using large cookie cutter. I used 3 1/2 inches or about 9 cm.
From this recipe I got 14 large cookies.
Place the cookies on the baking tray.
Bake cookies at 350 F for 11 minutes.
(it should be lightly browned around the edges)
Cool the cookies.
Making Coconut Topping
Combine sugar, water and corn syrup in a medium size saucepan.
Heat over medium temperature until boils. (don’t stir)
When it boils, cover with lid and boil for 2 minutes.
Your next step is to uncover and continue boiling until amber colored.
For me it was 9 minutes. (again, don’t stir, just let it boil for 9 minutes)
At this point reduce heat to low and add heavy cream.
Please, add heavy cream very carefully and stir until incorporated. (about 1 minute)
Remove from heat and add toasted coconut.
Spread 1 TBSP over each cookie and then keep building.
You can add as much or as little as you want to each cookie.
Drizzle with melted chocolate, caramel…

How to toast coconut in oven?
Preheat oven to 350 F.
Line the baking sheet with parchment paper.
Spread coconut in an even layer over a baking sheet.
Bake at 350 F.
IMPORTANT:Stop to stir every 2 minutes because you want even browning.
It will be done in 8 to 10 minutes.
How to store cookies?
Store in airtight containers or wrap each cookie in plastic wrap or cellophane.
