Making the best lava cake
BLACK AND WHITE LAVA CAKE
Ingredients
1 cup butter (unsalted)
1/3 cup sugar
9 oz semi-sweet chocolate
4 eggs + 4 yolks (room temperature)
2 TBSP flour (AP)
1 tsp rum
INSTRUCTIONS
You will need 9 ramekins.
Spray them with baking spray and dust with cocoa powder. (be generous). Set aside.
Preheat oven to 425 F.
Place the chopped chocolate and unsalted butter in a bowl set over a pan of gently simmering water, ensuring the bowl doesn’t touch the water.
Stir until chocolate and butter are melted. Add 1 tsp rum and set aside.
Using a large bowl, whisk together 4 large eggs, 4 yolks and 1/3 cup sugar until foamy.
Whisk in the melted chocolate and butter and then add 2 TBSP flour.
Slowly stir everything together.
Spoon chocolate batter into prepared ramekins.
Place each truffles into the center of each cake, press slightly but not to the bottom.
Bake at 425 F for 12 minutes.
IMPORTANT:
You can bake as many as you wanted.
The rest keep in the fridge. (no longer than 2 or 3 days)
Cover each ramekin with an inverted plate and turn over.
Decorate with icing sugar, whip cream, chocolate truffles…
