How to make Carrot Cake
Ingredients
3 eggs
1 cup brown sugar
1/3 cup sugar
3/4 cup oil
1/2 TBSP vanilla extract
2 cups flour (AP)
1/2 TBSP cinnamon
2 tsp baking powder
1/4 ground cloves
1/2 tsp baking soda
1/4 tsp salt
2 cups finely grated carrots
1 cup walnuts
Cream Cheese Frosting
8 oz cheese
1 3/4 cups heavy cream
1 tsp vanilla extract
1 1/3 cup icing sugar
Instructions for Carrot Cake
Preheat oven to 350 F.
Line 9×13 with aluminum foil.
Whisk 3 eggs, 1 cup brow sugar, 1/3 cup sugar and 3/4 cup oil.
Add 1/2 TBSP vanilla and mix it.
In a separate bowl, sift 2 cup AP flour, 2 tsp baking powder, 1/2 TBSP cinnamon, 1/4 salt, 1/4 cloves, 1/2 tsp baking soda.
Then add flour mixture to the eggs/oil/sugar mixture.
Mix everything together.
You are almost done. Just add 2 cups grated carrot and 1 cup walnut.
Mix all ingredients together.
Pour the mixture into 9×13 pan.
Bake for 30 to 35 minutes at 350 F or until toothpick inserted into center cake comes clean.
Cool it.
Carrot Cake Frosting
Beat 8 oz cheese and 1 1/3 icing sugar and then add 1 tsp vanilla extract.
In a bowl #2 whip 1 3/4 cups heavy cream until thick and fluffy.

In this baking escape I like to make cake that my grandmother made for me every week when I was a child.
It is my favorite and the best cake ever – THE CARROT CAKE.
My grandmother used to make different version of her basic recipe. It can be with cheese or with chocolate icing.
There are so much memory connected to this cake and very often when I need something to “hold on” and forget “reality” I make this cake.
And it makes me smile. I love the color, I love the taste and I love to pretend that I am eating the healthiest cake ever made..The Carrot Cake.
And because of memory of my grandmother I like to share this recipe with you.
I know somewhere she is watching over me and saying: “Still your favorite cake…” Yes, grandma still my favorite cake.
