DESCRIPTION
Breakfast chocolate banana muffins is combining two of my favorite ingredients: rich, dark or semi-sweet chocolate and ripe bananas. These muffins are super easy to make and if you don’t have much experience in the kitchen this recipe is the one to try. So, if you are asking the question: What should I bake as a beginner?

SHOPPING LIST
- flour (all purpose, unbleached)
- sugar
- cocoa
- olive oil
- egg
- bananas (ripe and dark)
- chocolate chips
- chocolate
- baking soda
- baking powder
- cinnamon

EQUIPMENT NEEDED
-your favorite mixer (my favorite is the best one – KitchenAid Mixer)
-1 mixing bowl
-1 plastic bowl for dry ingredients
-muffin pan (12 cups)
ACTION TIME
Breakfast Chocolate Banana Muffins
Ingredients
1 egg, large size
1 1/2 cups mashed bananas (use very ripe bananas)
1/3 cup olive oil
1 1/2 cups flour, all purpose and unbleached
3/4 cup sugar
1/3 cup baking cocoa
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 tsp baking powder (no aluminum)
2 oz chocolate (chopped)
1 cup chocolate chips
INSTRUCTION FOR MAKING BREAKFAST CHOCOLATE BANANA MUFFINS
Preheat oven to 350 F.
Line a 12 cup standard muffin pan with cupcake liners or spray with nonstick spray.
Important: be sure to use mashed bananas. (picture 2 below)
In a medium size bowl add dry ingredients: flour, sugar, cocoa, cinnamon, baking soda, baking powder and salt.
Whisk together the dry ingredients and set aside.
In a mixing bowl add egg, oil, mashed bananas and whisk until incorporated. (picture 1 and 2 below)
Add the flour mixture and stir until just combined. (picture 3 and 4)
IMPORTANT STEP: MIX DRY INGREDIENTS AND WET INGREDIENTS UNTIL JUST COMBINED.
Then fold in chocolate chips and chopped chocolate.
Spoon chocolate batter equally into muffin pan. (about 2 oz for each muffin cup)
Bake at 350 F for 24 minutes or until toothpick inserted into the center, comes out clean.
IMPORTANT LESSON FOR BEGINNERS!
Why is it so important not to over mix the muffins?
Because you don’t want to make dense muffins. So, be sure when you combine dry and wet ingredients it is not over done. So, how are you going to know? Well, just stir until moistened. (no flour visible)
How to know when chocolate muffins are baked if they are full of chocolate?
This is how. When you insert the toothpick into the center, some melted chocolate on toothpick is OK (after all toothpick is just like us, in love with chocolate.) However be sure there is NOT batter on toothpick.
So, yes some chocolate on toothpick is OK!
This is the most important – use your imagination and create, create until it hurts. Don’t be afraid.

Quick Note for Chocolate Muffins
Eggs – use large, organic egg
Chocolate – use your favorite one. It can be dark or semi sweet chocolate. It is your choice.
Flour – I used all purpose, unbleached flour.
Chocolate Chips – for this recipe use mini chocolate chips but regular is also OK.
Bananas – use very ripe bananas.
Oil – I used organic olive oil.
