Making the best gluten free recipe – gluten free torte
BLUEBERRY GLUTEN FREE TORTE
Ingredients
6 large ORGANIC eggs, separated
1/2 cup white sugar
1 bag of white chocolate chips (225 gr Hershey’s)
1/4 cup warm water
Filling
2 1/3 cups heavy cream
1/4 cup icing sugar
1 cup fresh blueberries
Instructions:
Prepare 2 round pans by lining them with parchment paper. Set aside.
Using a double boiler method, combine white chocolate and Ā¼ cup warm water.
Mix until white chocolate is melted and smooth. Set aside to cool slightly.
Meanwhile, find two mixing bowls.
You will need two mixing bowl. One will be for egg yolks, the other for egg whites.
BOWL #1: Add 6 egg yolks into the bowl number 1.
Mix until egg yolks are pale and thick. (4 to 5 minutes HIGH SPEED)
Then fold in the melted white chocolate. Set aside.
In a bowl number two, mix 6 egg whites until foamy.
Add 1/2 cup sugar and whip until soft meringue.
Gently fold ā whipped egg whites into yolk/white chocolate mixture.
Fold until incorporated.
Repeat same operation 2 more times for the remaining whites.
Be sure to quickly and gently fold until no streaks remain.
Pour butter into prepared 2 round pans. (6 or 7 inches)
Bake at 350 F for about 30 to 35 minutes.
Cool cakes in pans.
Make Filling
Mix heavy cream and icing sugar. Set aside.
Now, you are ready to finish your cake or ….
Assembly Cake Line
Layer 1 + Filling + Fresh Blueberries + Layer 2 +Filing + Decoration
Keep in the fridge for 8 hours or overnight.

So, let’s recapture this recipe.
IMPORTANT
-Using a double boiler method melt 1 bag of white chocolate chips (225 gr) with 1/4 cup warm water. Set aside.
-Now be sure to have 2 mixing bowls for this recipe.
BOWL #1
-Bowl number 1 will host 6 egg yolks.
-Mix 6 egg yolks until pale and thick. (for about 5 minutes)
-Add melted white chocolate. Mix everything together using a large spatula. Set aside.
BOWL #2
Bowl number 2 is the host for 6 egg whites.
Let them party until “foamy stage” and then add 1/2 cup white sugar.
Mix until they reach the stage of soft meringue.
BOWL #2 TO MERGE WITH BOWL #1
Now let’s bring yellow and white TOGETHER, again.
Add 1/3 part of white meringue into egg yolks mixture.
Fold in. Add second part of egg whites (meringue). Fold in.
Add 3rd part of meringue and fold in.
Are you tired? Of course not. This is the JOY recipe.
BAKING TIME – 350 F
Pour into prepared pans and bake at 350 F for about 30 to 35 minutes.
FILLING AND ASSEMBLY
Make the filling-Mix heavy cream and sugar.
Assembling the cake
Layer 1 + Filling + Fresh Blueberries + Layer 2 +Filing + Decoration
Keep in the fridge for 8 hours or overnight.
STORAGE
Keep in the fridge or freezer.
