Lay out your tortilla chips on a baking sheet.
Add 1/2 tsp basil pesto to each tortilla chips.
Sprinkle on the cheese and top with 1/2 tsp feta cheese.
Place the tortilla mini pizza under the broiler until the cheese just melts.
(please check after one minute…it can burn very quickly)
Take it out and serve with cherry tomato.

Ariel’s Divine Cheese Sandwich
(for 4 people)
Ingredients
8 pieces Naan Bread
8 pieces smoked Gouda cheese
8 pieces sweet red peppers
4 TBSP basil pesto
4 TBSP feta cheese
Instructions
Heat panini press to medium. (you can also grill on skillet or George Foreman)
Spread thin layer of basil pesto on naan slices. (I used 1 TBSP per sandwich)
Add 1 TBSP of feta cheese and 2 pieces of smoked Gouda cheese for each sandwich.

Grill until heated through and crispy on the outside. (about 5 minutes)

1.In a Jar in the fridge – Fill a jar to the top. Drizzle a little olive oil over the top and seal closed to keep pesto green.
You can keep it in the fridge for about 2 weeks if you continue to cover the top with olive oil.
2. Ice cube tray – place basil pesto into ice cube tray and freeze. Then use frozen pesto cubes and store in plastic freezer bags.
You can keep in the freezer for up to 6 months.
