  • eggs, milk, mozzarella cheese
  • spinach, salt, pepper
  • tortilla

ACTION TIME-AMAZING BREAKFAST

Ingredients

2 eggs

1 TBSP milk (2%)

1/4 cup mozzarella cheese, (cut into small cubes)

1/2 cup chopped spinach

2 pcs tortillas (medium size)

1/8 tsp salt

pepper to taste

Optional: garlic, tomato, feta cheese, basil, Italian parsley

Directions

Preheat oven to 350 F.

Line 2 ramekins (10 oz) with medium size tortilla, pressing

against bottoms and sides. Set aside.

Mix 2 eggs, 1 TBSP milk, salt and pepper. (use fork)

Add cubed cheese and spinach.

Mix everything together and spoon over sleeping tortillas.

Place ramekins on a baking pan.

Bake in the oven for 20 minutes.

After 20 minutes, use aluminum foil to cover the ramekins.

Bake for another 10 minutes.

Remove from oven, let stand for 10 minutes.

After 10 minutes of rest, remove the aluminum foil.

Take a moment and enjoy your life.
