Ingredients
9 Cherry tomatoes
1 Cucumber, medium size (cut into your favorite shape)
lettuce, chopped
1/8 cup Feta Cheese
Dressing:
2 TBSP apple cider (organic)
1 TBSP oil (olive or your favorite one)
1 clove of garlic minced
pinch of salt
ground black pepper to taste
OPTIONAL:
1 small clove of garlic, minced
INSTRUCTIONS
Begin by washing your salad ingredients: tomatoes, salad and cucumber.
Chop the salad and cucumber to your favorite size and shape. Set aside.
Let’s prepare the salad dressing.
Whisk together apple cider, salt and ground black pepper.
Slowly add olive oil and mix all ingredients.
Add minced garlic if you wish.
Pour the apple cider dressing into the jar.
Start layering.
IMPORTANT:
Start layering with firm veggies.
My starting point is red, happy and healthy cherry tomatoes. (use as many as you want to)
Top tomatoes with powerful cucumber.
After cucumber is happily inside of a jar add healthy and chopped lettuce.
Then top the lettuce with Greek goddess called FETA CHEESE.
Seal the jar and refrigerate.
You just made the best healthy, happy office lunch for your Monday or any day of the week.
Yes, you made 5 star Salad in a Jar.
Be kind and share.
IMPORTANT FOR THIS RECIPE:
- Chose firm veggies at the bottom of jar that wan’t soak up the dressing. (carrots, cherry tomatoes, kale, celery, chickpeas…)
- Pack the layers as tightly as possible. Why?
Because the salad will stay longer fresh if there is less air between layers.
- Finish it off with salad greens. (Romaine lettuce, spinach, baby arugula…)
By topping with greens you will create moisture barrier that prevent entire salad becoming saggy.
- If you are including cheese or nuts add them last.
- In case you want to use hard boiled eggs, tuna or other delicate ingredients, please add them
the day you want to eat salad.
