Baby, It is cold outside. So cold that I need to make something hot…
Since Valentine’s day is in 2 days I am going to make Pink Coconut Hot Chocolate.
To make this you only need some milk, some cream and a lots of chocolate….and one special ingredient “LOVE”.
Pink Coconut Hot Chocolate
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Ingredients
3/4 cup milk (2%)
1/3 heavy cream
4 squares or 50 gr White Coconut Chocolate (I used Lindt)
1/4 cup pink chocolate chips
1/2 tsp rum
Instructions
Heat milk and cream until just below simmering point.
Remove from heat and add chocolate.
Let stand for 3 min and add rum.
Whisk everything together. Reheat on very low head until chocolate is melted.
Pour into glasses.
Garnish with whipped cream, chocolate...or anything your red heart is asking for. ( listen to your heart)
Drink and love your life.

Happy Chinese New Year, Lady in Red or Raspberry Truffle Cake
Ingredients
Chocolate Base
3oz. unsweetened chocolate
1/3 cup of butter
1/4 cup raspberry jam
2 eggs
1 cup sugar
1/2 cup flour
Topping
2 Tbsp. light cream
2 Tbsp. raspberry jam
1 Tbsp. butter
4 oz. semi-sweet chocolate chopped
1 cup raspberries
Instructions
Chocolate Base
Preheat oven to 300 F.
Line an 9 inch square pan with foil-set aside.
Combine chocolate, butter and jam in a small saucepan. Stir over low heat until smooth. Remove from heat.
Beat eggs in a large bowl until foamy. Mix in sugar, vanilla and chocolate mixture. Stir in flour just until incorporated.
Spread batter evenly in pan and bake for 30 minutes, or until set. Cool completely in pan on rack.
Make the topping
Combine cream, jam and butter in a saucepan.
Heat to a simmer stirring constantly until melted. Remove from heat and add chocolate, stirring until smooth.
Let stand until cool about 20 minutes then spread over chocolate base.
Immediately top with raspberries and chill until cold. Cut into small squares.

You can add some blueberries or blackberries as decoration or any other fruit that you like.

Chocolate Cinnamon Cake, Novak Djokovic and Victory
Ingredients
Cake
1/2 cup unsalted butter
1 1/2 cups sugar
3 large eggs, separated
1 tsp vanilla extract
2 cups sour cream
3 cups AP flour
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
Filling/Topping
2 cups chocolate chips
1/2 cup sugar
2 tsp cinnamon

Instructions
Preheat oven to 350 F.
Use 9x13 pan, cover with foil or parchment paper.
Cream butter and sugar. Beat in egg yolks and vanilla.
Sift flour,baking soda, baking powder and salt into a separate bowl.
Alternately mix in sour cream and then dry ingredients into butter mixture until both are used up.
In a medium bowl, beat eggs whites until stiff, then fold into batter.
Filling / Topping
Whisk together sugar and cinnamon.
Spread half the cake batter in the bottom of pan. Sprinkle with half of cinnamon mixture and add 1 cup chocolate chips,
Dollop remaining cake batter over filling in spoonfuls. Gently spread it over the filling and smooth the top. Sprinkle with the remaining cinnamon mix and 1 cup chocolate chips.
With the palm of your hand, ever -so - gently press the chocolate chips a bit into the batter.
Bake for 40 to 50 min. (I baked for 46 min).

Whole Wheat Tortilla
Instructions
Make omelette of 2 eggs, pinch of salt and pinch of pepper.
Now your are ready to build your Tortilla House.

Another option is with tomatoes, eggs, kale, eggs and feta cheese. Super easy and so simple.
IMPORTANT NOTES
Eggs – I used large, organic eggs for this recipe. You can use 1 or 2 eggs per tortilla.
Feta Cheese – Buy the best you can find and afford. (I like to used the feta cheese made from goat’s milk)
Tomatoes – cheery tomatoes from Mexico
Kale – organic
Red Peppers – PC Whole Sweet Red Peppers
Tortillas – Spinach, Whole-Wheat or use your favorite. The size – Large.
FINAL NOTE
This is a very filling sandwich with fresh and your choice ingredients. Yes, you are the boss of this amazing homemade wrap.
You can add a little or a lot of diced red onion, splash of hot sauce or minced garlic.
