How to make caramel filling?
Add 24 caramels candies and 3 TBSP of heavy cream into the sauce pan.
Heat the sauce pan over medium heat until caramel candies start to melt.
Be sure to stir often, specially when caramels start to melt.
When the mixture is smooth remove from the heat.

Line the baking sheet (16 by 12 inch) with aluminum foil.
Spray with baking spray and set aside.
Bowl 1: Add dry ingredients
Sift flour, cocoa and baking powder.
To that mixture add the ground hazelnuts and stir all ingredients together. Set aside.
Your next step will involve your favorite mixer (KitchenAid) and mixing bowl.
To the mixing bowl add fresh, room temperature eggs and sugar.
Mix on high speed for about 9 minutes or until tripled in volume.
The next step is to combine dry and wet ingredients. (remember bowl 1)
Using the spatula fold dry ingredients into the eggs, in 3 additions. (slowly)
SUPER IMPORTANT: Please, pay attention to this step.
Be very gently when mixing dry ingredients into the eggs mixture.
I will repeat again. Be sure the flour hazelnuts mixture is mixed or incorporated into the eggs mixture.
Pour batter into prepared pan and bake at 350 F for about 15 to 17 minutes.
Use a toothpick to check if the cake is done.
Remove from the oven.
Cool it for about 2 to 3 hours.

Add cheese to the mixing bowl and mix until smooth.
Then transfer to the plate.
Using the same bowl mix the heavy cream for 2 minutes.

Stir all ingredients using your favorite spatula.

If you are not on diet and you are not watching amount of sugar, you can make this chocolate glaze with semi-sweet chocolate.
Add chopped chocolate and corn syrup to the bowl.
Then heat the cream until almost boiling.
Pour it over chocolate and corn syrup mixture.
Let sit for 5 minutes.
Gently mix until smooth.
And yes, you just made the best chocolate glaze.
ASSEMBLYOF THE BEST CHOCOLATE CAKE
To make mini layer cakes, use knife and cut the ferrero cake into the sizes you like your birthday cake to be.
My choice is 5 by 5 square cakes. (you select the number you like).
Now, if you have your mini cakes we can start our assembly line.
Place the bottom layer of the cake to a plate.
Important: You can make this birthday cake using 2 or 3 layers.
Add Nutella filling, second layer cake, Nutella filling and then add the third layer of the ferrero rocher cake. Return to fridge until filling is set. (see note below why is this important)
Note: At this point, I find it is important to chill the cake before continuing to help the Nutella filling firm up. Usually, 30 minutes is enough.
Keep going until you use all mini cakes you have from 16 by 12 inches size.
Important: Keep all your mini cakes in the fridge until you are ready for chocolate icing.
EASY RECIPE CHOCOLATE ICING
BTW, you are almost done.
You just need to pour the best chocolate glaze over the cakes.

Cheese – for this recipe I used the Philadelphia cheese. (use light version) It has to be the room temperature. You can replace with any cream cheese you are using for baking.
Chocolate – For this recipe I used Lindt chocolate 70% cocoa. You can use semi sweet if you are not on diet.

-baking pan (your choices are: 9 by 9 inches, 9 by 13 or baking sheet)
-glass or plastic bowl (I like to use glass measuring cup, 8 cups capacity or 2 L)
ACTION TIME
MAKING Best Focaccia Recipe and Focaccia Toppings
Ingredients
3 cups flour
2 tsp instant yeast
1 1/2 cups water
2 tsp salt
3 TBSP olive oil
Focaccia toppings: sea salt, rosemary, Italian parsley, salt, oregano, garlic, onions, thyme, tomatoes, red peppers, mozzarella cheese and more…
INSTRUCTIONS FOR MAKING THE BEST FOCACCIA RECIPE
In your favorite bowl add flour, salt and instant yeast.
Then add the water (temperature about 110 F)
Mix with the metal spoon or rubber spatula until the ingredients are incorporated and water is absorbed. (it is about 1 to 2 minutes).
Rub the surface with olive oil. (just a little)
Cover with plastic wrap and tea towel.
Transfer to the fridge for 24 to 72 hours.
Line the pan of your choice with parchment paper or aluminum foil.
Coat with baking spray or grease with butter. (this is important step).
Pour 1 TBSP of olive oil in the center of pan.
Remove the dough from the fridge.
Use two forks, gather up edges of dough farthest from you and lift up and over into the center of bowl.
Rotate the bowl in quarter turns 2 more times or until you deflate dough and for a rough ball.
Transfer into prepared pan with olive oil.
Roll the dough in the oil or coat it in oil.
Let rise in a warm spot until doubled in size.
DO NOT COVER THE DOUGH. Yes, let rise, UNCOVERED.
Time for rise: about 3 to 4 hours.
How do you know the dough is ready? The secret is in your finger.
BAKING FOCACCIA AND FOCACCIA TOPPINGS
Poke with your finger. If it spring back slowly it is ready.
Preheat oven to 425 F.
Lightly oil your hands. Dimple focaccia with your fingers, all the way to the bottom of the pan.
Sprinkle with sea salt and focaccia toppings of your choice.
If using Italian parsley, rosemary be sure to pour olive oil over it.
Important: you can bake using 8 by 8 inch pan, 9 by 13 (if you want thin focaccia for sandwiches or 9 inc round pie and so on…). Just check the time. Bake until golden brown.
Bake for about 24 minutes at 425 F or until golden brown.
Let it cool for 15 minutes before serving. (if you can wait)
Flour – I tested this recipe with all purpose, unbleached flour. I tried Robin Hood, original all purpose flour. Also, the NO Name all purpose flour worked.
Organic Flour – This is the more expensive version if you want to make the best homemade focaccio recipe. I used organic flour from Saskatchewan, Canada. The name is ONE ORGANIC FARM. Ingredients
1 cup dried prunes (chopped)
and 1 cup dried pitted dates
1 cup and 3 TBSP water
INSTRUCTIONS TO MAKE HEALTHY HOMEMADE JAM
Add chopped dried prunes, dates and water to a medium size saucepan.
Cook over medium heat, stirring regularly and mashing the prunes and dates until a jelly consistency is reached.
IMPORTANT: BE SURE YOU ARE STIRRING NON STOP IN THE LAST FEW MINUTES.
For me this recipe was done in 10 minutes. (remember it is super fast recipe)
Remove from heat and cool.
Transfer to an airtight jar.

Instructions
Add chopped dried prunes, dates and water to a medium size saucepan.

MAKING Easy Strawberry Cake Recipe
Easy Strawberry Cake Recipe for you
Ingredients for sponge cake
6 eggs
1 cup sugar
1/2 tsp baking powder
1 cup all purpose flour, unbleached
INSTRUCTIONSfor Strawberry Cake
Add 6 eggs and 1 cup sugar into the mixing bowl.
Mix until the mixture becomes thick, fluffy and triples in volume, for about 10 minutes.
From this moment you will be using the spatula.(no mixer)
Mix 1 cup of flour and baking powder.
Then sift 1/3 cup of flour over the beaten egg and sugar. Using a rubber spatula, work in circular pattern, going over and under. This is very important. Be sure the flour is incorporated into egg sugar mixture.
Repeat step above 2 more times
Divide the cake mixture among 3 bake pans (6 inch baking pans).
I used 2 cups of mixture for each pan.
Bake at 350 F for about 19 minutes or until done.
Use toothpick to test if cake is done. Insert the wooden toothpick near the center of the cake. If it comes out clean, the cake is done.
Cool the cake.
HOW TO MAKE STRAWBERRY BUTTERCREAM FROSTING
Core the strawberries to remove the white center.
Place cleaned strawberries in a food processor and pulse until smooth.
You will have about 1 and 1/4 cup of puree.
Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)
Place strawberry puree in a small saucepan over a medium heat.
Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.
Place the reduced puree into the fridge to allow to cool.
Next Step:
Beat the butter. Be sure that there is no lumps.
Then add 2 1/2 cups of icing sugar and mix until butter and sugar are combined.
Add your strawberry puree, vanilla and salt.
Beat together until combined.
Then add 2 cups of icing sugar and mix well until well combined.
Add 1 TBSP of whip cream if needed and wanted.
And you have it, your homemade Strawberry Buttercream Frosting made from fresh strawberries.

You need a good quality chicken. For this recipe I used organic chicken from the local store.
From there you can add whatever makes you happy. Lemon, garlic, onions, Italian parsley, celery and so on.

MAKING Oven Roasted Whole Chicken – Best Chicken Recipe
Ingredients
1 whole chicken (3 to 5 lbs)
3 carrots
4 large potatoes
2 medium size onions
6 cloves of garlic
1 lemon, organic and washed
1/2 tsp black pepper
2 and 1/2 tsp salt
1 TBSP dry oregano
6 TBSP butter
3 TBSP olive oil
INSTRUCTIONS FOR MAKING THE BEST CHICKEN RECIPE
Melt butter in a small sauce pan and set aside. (be sure it is not completely melted)
Preheat oven to 425 F.
Rinse the chicken inside and out.
Then pat dry with paper towel.
IMPORTANT: Please be sure that chicken is as DRY as POSSIBLE. Why? Because it helps with browning.
Season chicken outside and inside with salt and pepper.
I used 2 tsp plus 1/2 tsp of salt and 1/2 tsp of ground black pepper. (you use salt and pepper to your taste)
Stuff the chicken cavity with 6 cloves of garlic, both halves of lemon.
OPTIONAL: You can add rosemary, Italian parsley, Thyme or any other herb you like to the chicken cavity.
Tie the legs together with kitchen string ( I did not)
Drizzle chicken all over with melted butter. Be very generous.
IMPORTANT: FOR MAXIMIZING FLAVOR USE THIS TRICK – TUCK UNDER OF CHICKEN SKIN A BIT OF BUTTER (or as much as you like)
Drizzle oregano all over the chicken.
BTW, you are almost done.
Add sliced onions, potatoes, carrots to the bottom of baking dish. (I don’t add salt but you can if you want to)
Drizzle olive oil over the veggies and toss to coat.
Place the chicken on top of vegetables. (breast side up)
BAKING THE CHICKEN
Bake at 425 F for 90 minutes or until done.
It is done when the internal temperature reaches 165 degrees.
Use a meat thermometer to check the temperature.
When chicken is baked remove from the oven.
Transfer the roasted chicken to the aluminum foil.
Be sure the whole chicken is covered with aluminum foil for about 30 minutes.
Slice the chicken onto your favorite platter.
Serve with a simple salad, potatoes and slice of my favorite bread.

They are the perfect Christmas cookies. Did I say Christmas? Yes, I did. But you can also make them every day when your soul is searching for cookies. They are the perfect gifts for your friends and family and easy solution when you need to bring desserts to the office parties.
Place the toasted hazelnuts into food processor and process until hazelnuts are coarsely chopped. (just for a minute)
Then add the flour, sugar, salt and process until the hazelnuts are finely ground.
Cut the cold butter into small pieces and add to the flour mixture.
Process everything until the mixture looks like course meal.
Then add egg yolk, pure vanilla extract, hazelnut extract and process until the mixture comes together.
Transfer the mixture from the food processor into the bowl.
Shape the dough into balls using a small cookie scoop and place on a baking sheet.
Wrap in plastic and transfer to freezer overnight.
NEXT DAY
Preheat oven to 325 F.
Line baking sheet with parchment paper or silicone mats.
Place 10 cookies on baking sheet and bake for 21 minutes or until done.
