  • M&M
  • Jelly Beans
  • sprinkles
  • your choices ……………….

Equipment

-cookie cutter(s) (any shape you like)

-baking sheet

ACTION TIME – COOKIE CANDY

Ingredients

1 bag of white chocolate chips (Hershey’s-it is not advertisement…yet)

M&M

sprinkles

Jelly Beans

Instructions

Using a double boiler method melt the white chocolate.

Meanwhile, line a baking sheet with parchment paper.

Place cookie cutter of your choice on parchment paper.

IMPORTANT:

Cookie cutter must have flat bottom because you don’t want chocolate to leak out.

(also, leaking is crime and you don’t want your chocolate to finish in jail)

Use as many cookie cutters as you like. (as long as chocolate is able to support you)

When the chocolate is melted, pour it into each cookie cutter, while holding cutter steady with the other hand.

Top with M&M, jelly beans, sprinkles, Oreos or anything you like.

Place the baking sheet in the fridge for about 1 hour or until harden.

When chocolate is hardened,  press the chocolate around the edges and pop out of the cookie cutters.

1 cup spinach

10 slices of mozzarella cheese or as many as you want it

1/8 cup feta cheese

1/4/ cup diced peppers

3 TBSP basil pesto

Instructions

Preheat oven to 350 F.

Place large tortilla on 9 inch glass pie plate.

Hello my dear readers,

I got this recipe from my roommate and I would like to share it with you.

Super easy, super fun and super tasty.

To summarize this recipe in one word: FABULOUS!

Shopping Time

  • Organic large oat flakes
  • Milk
  • sugar
  • Dr. Oetker vanilla pudding (not instant pudding, please check the picture above)

Action Time – Making Sunshine Horse Breakfast

Ingredients

1 1/4 cup milk (2%) + 2 TBSP milk

1 cup oats

1 1/2 TBSP sugar

1 TBSP pudding powder

Optional: raspberries, hazelnuts, walnuts

Instructions

Mix 1 TBSP of vanilla pudding, 1/2 TBSP sugar and 2 TBSP cold milk using a small cup.

Shopping List

  • butter, sugar, eggs
  • walnuts, flour, baking powder
  • milk

ACTION TIME – MAKING “Blast from the past”

SPECTACULAR WALNUT CAKE

Ingredients

1/2 + 1/8 cup butter (unsalted)

2/3 cup regular sugar

5 egg whites

3 TBSP flour (AP)

1 and 1/4 cups ground walnuts

1 tsp baking powder (aluminum free)

Filling

5 egg yolks

5 TBSP regular sugar

Walnut Topping

1/4 cup butter

1/4 cup sugar

1/4 cup milk

3 cup grated walnuts

Instructions

Prepare 9×13 baking pan with aluminum foil.

Preheat oven to 350 F.

Bowl 1:

Mix flour and baking powder. Set aside.

Bowl 2:

Using a large bowl beat 5 egg whites to stiff peaks. Set aside.

Bowl 3:

In another bowl mix butter and sugar until light and fluffy.

Add egg whites from bowl 2 and mix all ingredients in a very low speed.

Add flour mixture and walnuts.

Mix all ingredients until incorporated.

Pour batter into the prepared 9×13 baking pan.

Bake at 350 F for about 12 minutes.

While your cake is baking, mix 5 egg yolks and 5 TBSP sugar

until the mixture becomes thick and triples in volume. (about 5 minutes)

Set aside.

After 12 minutes remove cake from the oven.

Spread egg yolks mixture on top of the cake.

Return cake to oven and bake for additional 12 to 14 minutes.

Use toothpick to test if cake is done.

Spread walnut topping. (recipe is below)

Using a small bowl add 1/4 cup butter, 1/4 cup sugar and 1/4 cup milk.

Heat on a medium temperature until boils.

Add 3 cups grounded walnuts and mix all ingredients together.

ACTION TIME-Making Macarons

Ingredients

75 gr almonds (about 1/2 cup)

117 gr icing sugar (1 cup + 1/8 cup)

2 large egg whites, organic and room temperature

53 gr regular sugar (1/4 cup)

Instructions

Place almond in a food processor and process for about 1 minute.

Add icing sugar and process for about 2 minutes.

Then sift the mixture to remove any lumps.

If you have any large pieces, grind them using the electric coffee grinder.

Sift twice the almond mixture.

Mix 2 egg whites and regular sugar by hand to combine.

Using a KitchenAid mixer mix egg whites and sugar for 2 minutes using speed 4.

After 2 minutes, increase speed to 6 and mix 2 minutes.

Again, after 2 minutes, increase speed to 8 and mix for 2 minutes.

Add pink color and mix 30 seconds at high speed.

Next step is very, very important.

Add 1/2 almond flour mixture and mix using a spatula.

Folding: Cut through the meringue and then fold up and over.

Be sure to scrape the bottom and sides of the bowl.

Add second half of the almond flour mixture and fold using the method above.

Ingredients

1/4 cup heavy cream

2 oz semi sweet chocolate

1 tsp butter

5 TBSP Nutella

1/2 tsp rum

Instructions

Finely chop chocolate. Set aside.

Heat the heavy cream until almost boiled and add chopped chocolate, butter.

Stir to combine.

Stir in 5 TBSP Nutella and rum.

Cool it.

Assembly Line

Take 2 cookies and sandwich them together with Nutella Chocolate Filling.

These cookies need to mature for a day or two.

Or you can eat them immediately.

Ingredients

  • 75 gr almonds (about 1/2 cup)
  • 117 gr icing sugar (1 cup + 1/8 cup)
  • 2 large egg whites, organic and room temperature
  • 53 gr regular sugar (1/4 cup)
  • ------------------------------------------------------------------
  • Nutella Chocolate Filling
  • 1/4 cup heavy cream
  • 2 oz semi sweet chocolate
  • 1 tsp butter
  • 5 TBSP Nutella
  • 1/2 tsp rum

Instructions

  1. Place almond in a food processor and process for about 1 minute.
  2. Add icing sugar and process for about 2 minutes.
  3. Then sift the mixture to remove any lumps.
  4. If you have any large pieces, grind them using the electric coffee grinder.
  5. Sift twice the almond mixture.
  6. Mix 2 egg whites and regular sugar by hand to combine.
  7. Using a KitchenAid mixer mix egg whites and sugar for 2 minutes using speed 4.
  8. After 2 minutes, increase speed to 6 and mix 2 minutes.
  9. Again, after 2 minutes, increase speed to 8 and mix for 2 minutes.
  10. Add pink color and mix 30 seconds at high speed.
  11. Next step is very, very important.
  12. Add 1/2 almond flour mixture and mix using a spatula.
  13. Folding: Cut through the meringue and then fold up and over.
  14. Be sure to scrape the bottom and sides of the bowl.
  15. Add second half of the almond flour mixture and fold using the method above.
  16. Now, the most important question is:
  17. HOW LONG DO I NEED TO FOLD?
  18. You need to fold until batter flows like lava.
  19. If this answer is confusing, just check the videos of lava or just check lava cakes.
  20. You need to get feeling of your final product.
  21. Another answer is that the batter will fall back into the bowl in a thick ribbon.
  22. Next step is to scoop batter into bag about 2/3 full.
  23. Twist off the top and pipe macarons into desired size.
  24. Slam or tap your pan 3 times against the counter to release air bubbles.
  25. Let the macarons sit at room temperature for about 45 to 60 minutes.
  26. Macarons will form top skin.

ACTION TIME-AMAZING BREAKFAST

Ingredients

2 eggs

1 TBSP milk (2%)

1/4 cup mozzarella cheese, (cut into small cubes)

1/2 cup chopped spinach

2 pcs tortillas (medium size)

1/8 tsp salt

pepper to taste

Optional: garlic, tomato, feta cheese, basil, Italian parsley

Directions

Preheat oven to 350 F.

Line 2 ramekins (10 oz) with medium size tortilla, pressing

against bottoms and sides. Set aside.

To make them you will use whipped egg whites and sugar.

Super easy and fast recipe.

Chocolate Meringue Cookies – Action Time

Shopping List

  • egg whites, cream of tartar, icing sugar
  • heavy cream, chocolate

Ingredients

3 egg whites (ROOM TEMPERATURE!)

3/4 cup icing sugar

1/2 tsp cream of tartar

Instructions

Preheat oven to 225 F.

Line baking sheet with parchment paper.

Be sure that mixing bowl is clean.

Place 3 egg whites into a mixing bowl and beat for about 1 min. (until frothy)

Add 1/2 tsp cream of tartar.

Beat until soft peaks form.

At this point start adding 3/4 cup icing sugar.

Please add very slowly.

This is important! Please add sugar very, very s-l-o-w.

Mix until sugar dissolved and stiff peaks form.

Pipe the rose on the parchment paper. ( I used a Wilton 1M open star or you can use 2D)

The size of rose is 2 inches.

Bake at 225 F for about 40 minutes.

Turn the oven off and don’t open the door.

Leave the meringues in the oven to finish drying for 1 hour.

After one hour, let cookies completely cool.

Chocolate Filling

300 gr Lindt chocolate with hazelnut (chopped into a small pieces)

3/4 cup heavy cream

Using a small sauce pan bring heavy cream to a simmer.

Pour over chopped chocolate.

Let stand for 5 minutes.

Stir until smooth.

Let cool in the fridge. (2 to 3 hours)

Assembly Line (think manufacturing)

Take the meringue cookie and pipe chocolate filling.

Place the second cookie on top.

Repeat until all cookies are done.

This is so easy and mess free project and you will get beautifully colored Easter eggs.

What do you need for this project? (check your shopping list below)

Shopping List

-dry rice ( I bought 2 lbs)

-food coloring ( I used Wilson food gel coloring)

-plastic bags (Ziploc from the dollar store)

-boiled eggs

-plastic gloves
