Perfect Chocolate Chip Cookies – Cook’s Illustrated.

Shopping List

  • butter, brown and white sugar, eggs, vanilla extract
  • flour, baking soda,salt
  • semisweet chocolate chips

Action Time – Making Chocolate Chip Cookies

Ingredients

14 TBSP unsalted butter (2/3 cup + 1/4 cup)

3/4 cup brown sugar

1/2 cup white sugar

1 egg

1 egg yolk

2 tsp vanilla extract

1 3/4 cup flour (AP)

1/2 tsp baking soda

1 tsp salt

1 1/4 cups semisweet chocolate chip cookies

INSTRUCTIONS

Preheat oven to 375 F.

Line baking sheets with parchment paper.

BOWL #1: Whisk together flour and baking soda. Set aside.

BROWN THE BUTTER

Place 2/3 cup butter in light colored pot.

Start melting your butter over medium heat.

Begin stirring with a wooden spoon.

First, it will look like nothing is happening.

But be patient. The magic is about to happen.

Once butter is melted, it will begin to bubble and foam.

Keep stirring.

The color will change from sunshine, golden to a toasty brown.

So, what is happening?

The water evaporates and the milk solids say “bye, bye” to butterfat.

The milk solids are heavier than the fat and they sink down to the bottom of the pan.

Shortly, they will begin to brown.

As soon as I see those brown specks, I turn off the heat, take the pot off the stove.

But don’t stop stirring.

Keep stirring for about 1 minute or until you achieve that gorgeous, amber-brown color.

See step by step pictures below.

Transfer into a heat proof bowl. .

Stir the remaining 1/4 cup butter into the hot butter until completely melted.

Set aside and let cool to room temperature.

When the brown butter is room temperature add white and brown sugars, salt and vanilla.

Whisk until fully incorporated.

Add the egg and egg yolk and whisk until mixture is fully smooth. (30 seconds)

Let the mixture stand for 3 minutes, whisk for 30 seconds

Repeat the process of resting and whisking 2 more times until the mixture is thick, smooth and shiny.

Add the flour mixture and mix until flour is incorporated.

Stir in chocolate chips.
