What can I say? As a person I promise to continue good practices and make as many as possible … well I have to stop at this point. Can I say I will make as many as possible Nutellas recipes, chocolate recipes, Milka tortes, my favorite Ferrero tortes (mini and not so mini)… How about some gluten free torte or pizza dough recipe? Yes, my dear readers my soul is deeply involved in practices where no cure exist. It is called chocolate addiction and I know I don’t want help.

However, from time to time my soul wakes up and say time for the HEALTHY! And I immediately obey.

So, today is the day. Day for very easy and super healthy recipe. Since you want to learn more … read below.

This jam is made of three healthy ingredients: prunes, dates and water.

The recipe is super quick and easy to make. This jam is known by my grandmother as the medical jam or the hospital jam.

  • prunes (dried prunes)
  • dried dates
  • water

EQUIPMENT NEEDED

-saucepan (medium size)

-glass jar to store homemade healthy jam

ACTION TIME

MAKING Healthy Homemade Jam Recipe-Dates Prunes Recipes

Ingredients

1 cup dried prunes (chopped)

and 1 cup dried pitted dates

1 cup and 3 TBSP water

INSTRUCTIONS TO MAKE HEALTHY HOMEMADE JAM

Add chopped dried prunes, dates and water to a medium size saucepan.

Cook over medium heat, stirring regularly and mashing the prunes and dates until a jelly consistency is reached.

IMPORTANT: BE SURE YOU ARE STIRRING NON STOP IN THE LAST FEW MINUTES.

For me this recipe was done in 10 minutes. (remember it is super fast recipe)

Remove from heat and cool.

Transfer to an airtight jar.

Store in the fridge for about 2 weeks.

You can use as the filling for crepes, baked goods or just eat by itself. (no more than 1 TBSP per day)

Also, if you really want to eat this jam instead of Nutella, I suggest the recipe below:

CHOCOLATE JAM RECIPESLINDT Chocolate

Follow all the steps above.

Cook dates, prunes and water until desired consistency.

Remove from heat and add 3 oz or about 90 grams of Lindt chocolate, chopped.

Stir until chocolate is melted.

Cool and transfer to the jars.

Top with chopped walnuts, hazelnuts if you want to.

DESCRIPTION OF EASY STRAWBERRY CAKE RECIPE

This cake is made of two of my favorite recipes: Sponge cake and easy strawberry buttercream frosting.

The ingredients for the sponge cake are everyday ingredients: eggs, sugar, flour and baking powder.

Super simple, don’t you think? Add to that the best strawberry frosting made from fresh, organic strawberries and you have the winner! Pink Cake Winner.

IMPORTANT NOTES: The star of the sponge cake are the EGGS! So, please use fresh, organic, large eggs in order to make this 5 star strawberry cake.

To make the strawberry buttercream frosting you need to have: fresh strawberries, unsalted butter, icing sugar, pure vanilla extract, pink salt and heavy cream.

  • eggs
  • white sugar
  • flour (all purpose and unbleached)
  • baking powder
  • fresh strawberries
  • icing sugar
  • butter
  • pure vanilla extract
  • heavy cream

EQUIPMENT NEEDED

Mixer (I used KitchenAid mixer)

Mixing bowl

3 round 6 inch baking pan

medium size saucepan (for strawberry buttercream)

MAKING Easy Strawberry Cake Recipe

Easy Strawberry Cake Recipe for you

Ingredients for sponge cake

6 eggs

1 cup sugar

1/2 tsp baking powder

1 cup all purpose flour, unbleached

INSTRUCTIONS for Strawberry Cake

Add 6 eggs and 1 cup sugar into the mixing bowl.

Mix until the mixture becomes thick, fluffy and triples in volume, for about 10 minutes.

From this moment you will be using the spatula.(no mixer)

Mix 1 cup of flour and baking powder.

Then sift 1/3 cup of flour over the beaten egg and sugar. Using a rubber spatula, work in circular pattern, going over and under. This is very important. Be sure the flour is incorporated into egg sugar mixture.

Repeat step above 2 more times

Divide the cake mixture among 3 bake pans (6 inch baking pans).

I used 2 cups of mixture for each pan.

Bake at 350 F for about 19 minutes or until done.

Use toothpick to test if cake is done. Insert the wooden toothpick near the center of the cake. If it comes out clean, the cake is done.

Cool the cake.

HOW TO MAKE STRAWBERRY BUTTERCREAM FROSTING

Core the strawberries to remove the white center.

Place cleaned strawberries in a food processor and pulse until smooth.

You will have about 1 and 1/4 cup of puree.

Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)

Place strawberry puree in a small saucepan over a medium heat.

Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.

Place the reduced puree into the fridge to allow to cool.

Next Step:

Beat the butter. Be sure that there is no lumps.

Then add 2 1/2 cups of  icing sugar and mix until butter and sugar are combined.

Add your strawberry puree, vanilla and salt.

Beat together until combined.

Then add 2 cups of icing sugar and mix well until well combined.

Add 1 TBSP of whip cream if needed and wanted.

And you have it, your homemade Strawberry Buttercream Frosting made from fresh strawberries.

Enjoy.

ASSEMBLY OF BEST SPONGE CAKE

Place your first layer of cake onto a platter.

Top with easy strawberry buttercream frosting.

Add second sponge cake.

Then add a layer of strawberry buttercream.

Finish with third layer of sponge cake.

Decorate as you wish or ask your friend to do it for you.

You can use only icing sugar or you can top with more strawberry frosting and sliced strawberries.

Or you can frost the outside of your sponge cake with the leftover strawberry buttercream.

Store in the fridge for a few hours and then serve.

EGGS – Please use organic eggs. It is more expensive but the eggs are the biggest star inside of the cake.

Strawberry – For this recipe I used organic strawberries. It was on sale. You can use regular, fresh strawberries from any food store or local farmers market.

Flour – use all purpose, unbleached.

Baking powder – I used organic, no aluminum added.

Sugar – for this recipe I used regular white, sugar.

Butter – use organic if you can. Be sure it is unsalted and room temperature for this strawberry cake.

I said this before and I will repeat: Sponge Cake for 6 inch baking pan is the recipe you must master in order to become 5 star baker.

MAKING Easy Hazelnut Cookies Recipe From Italy

Ingredients

1 1/2 cups hazelnuts, toasted

2 cups flour

1/2 cup sugar

1 cup butter, cold and unsalted

1/8 tsp salt

1 egg yolk

3 tsp or 1 TBSP pure vanilla extract

1/4 tsp hazelnut extract

icing sugar for dusting

Optional:

1/2 cup chocolate chips, melted

INSTRUCTIONS FOR MAKING ITALIAN HAZELNUTS COOKIES

Your first step is to toast hazelnuts. If you don’t know how check this link – Caramelized Lazy Hazelnuts-100 Percent Easy

Place the toasted hazelnuts into food processor and process until hazelnuts are coarsely chopped. (just for a minute)

Then add the flour, sugar, salt and process until the hazelnuts are finely ground.

Cut the cold butter into small pieces and add to the flour mixture.

Process everything until the mixture looks like course meal.

Then add egg yolk, pure vanilla extract, hazelnut extract and process until the mixture comes together.

Transfer the mixture from the food processor into the bowl.

Shape the dough into balls using a small cookie scoop and place on a baking sheet.

Wrap in plastic and transfer to freezer overnight.

NEXT DAY

Preheat oven to 325 F.

Line baking sheet with parchment paper or silicone mats.

Place 10 cookies on baking sheet and bake for 21 minutes or until done.

Remove from the oven and cool.

Dust with icing sugar and decorate with melted chocolate.

Butter – use the best quality of the butter. Be sure the butter is COLD for this recipe.

How to make Moist Easy Walnut Banana Bread

Ingredients

1/2 cup olive oil

1 1/8 cups mashed banana (about 4 medium size bananas)

2 large eggs

1 tsp pure vanilla extract

1 1/2 cups flour, all purpose unbleached

1/2 cup white sugar

1 tsp baking soda

1/4 tsp salt

1/2 cup brown sugar

3/4 cup walnuts, chopped

1/2 cup regular chocolate chips

3/4 cup mini chocolate chips

INSTRUCTION FOR MAKING THE BEST BANANA BREAD

Preheat oven to 350 F.

Line 9 by 5 baking pan with a strip of parchment paper, letting it hang over both side or use aluminum foil. Set aside.

Add the WET INGREDIENTS to the mixing bowl: oil, eggs, well mashed ripe bananas, vanilla extract.

Mix well until all ingredients are incorporated.

To the medium size bowl add ALL DRY INGREDIENTS:

flour, white and brown sugar, baking soda, salt, chopped walnuts and chocolate chips.

Your next step is to be the most amazing matchmaker.

Combine the wet ingredients with dry.

Beat with the mixer until is combined. This step is super fast (just a few seconds).

Transfer the batter into prepared 9 by 5 loaf pan.

Bake at 350 F for 55 minutes or until toothpick inserted near the center comes out clean.

Quick Note 

Flour – please use all purpose, unbleached flour.

Chocolate chips – I love the combo of mini chocolate chips and regular. If you don’t have mini chocolate chips use 1 1/4 cup regular chocolate chips

Bananas – use as ripe bananas. If you don’t have it, you can use your oven to make it happen. How? Place bananas on a baking sheet. Bake at 250 F for 15 minutes or until you achieve desired ripeness of the bananas.

OIL – I used organic, olive oil and this recipe was tested using it.

Vanilla Extract – if you can use pure vanilla extract. I used my homemade version. Check the recipe.

Extra special chocolate cookies. Tender chocolaty cookies filled with molten lava and when I say molten lava I really mean the best secret from the Universe. What it can be? Of course, you know it. The Nutella. So be prepared to discover the full meaning of “love at first bite”. I know I did.

The recipe for Nutella lava cookies is very simple. Also, the ingredients are everyday pantry ingredient.

MAKING Molten Lava Nutella Cookies

Ingredients

9 TBSP Nutella

1/2 cup butter

1/4 cup + 2 TBSP white sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla extract

1/2 cup cocoa

1 cup flour, all purpose

1/2 tsp salt

1 TBSP cinnamon

1/2 tsp baking powder

INSTRUCTIONS FOR MAKING NUTELLA COOKIES

Freeze Nutella ahead of time:

Drop 1 TBSP of Nutella onto parchment paper. Freeze until firm.

It can be 90 minutes or overnight.

MAKING COOKIES

Preheat oven to 350 F.

Line baking sheet with parchment paper or silicone liner. Set aside.

In a small bowl add flour, cocoa, baking soda, salt and cinnamon.

To the mixing bowl add butter and sugars. (image 1)

Mix until incorporated for about 2 minutes.

Then add egg, vanilla extract and mix in. (image 2)

Your next step is to add all dry ingredients. (cocoa, flour, baking powder, cinnamon and salt)(picture 3)

Mix until all ingredients are incorporated. (image 4)

BTW, you are almost done.

Place a piece of cookie dough (2oz) in the palm of your hand and flatten it out like a thick disc .

Place a frozen Nutella in the middle of the dough and wrap the dough around it, rolling it into a ball to seal it.

Then place the cookie on the prepared baking sheet.

Repeat with remaining dough.

Bake at 350 F for 12 minutes.

If you are baking frozen cookies bake for 14 minutes at 350 F.

Remove from oven and sprinkle with ground organic cinnamon.

Freezing the cookies:

The unbaked cookies can be frozen for 6 weeks.

Quick Note for Lava Nutella Cookies

Flour – for this recipe I used all purpose, unbleached flour.

IMPORTANT: When measuring the flour, fluff up the flour in the bag. Then spoon the flour into the cup. Then scrape a knife across the top of the measuring cup to level the flour.

Butter – use unsalted butter.

Eggs – large, organic. The best place to buy organic eggs is the local farmers market.

Vanilla extract – if you can, please use pure vanilla extract. I used homemade version. For the recipe, please check this LINK

Nutella – you can use store bought or homemade version.

Cinnamon – I used organic, ground cinnamon.

And if you are guessing it is the most important cake in my life … you are 100% right. It is the gift that keeps on giving…and giving…Yes, I am talking about one and only…

BEST FERRERO ROCHER CAKE!

DESCRIPTION OF THE BEST FERRERO ROCHER CAKE

You don’t need it. This cake is well-known cake for 5 star cookies blog.

It was made many, many times.

From the first version Ferrero Rocher Torte – I believe in angels then Mini Ferrero Rocher Torte to Mini Chocolate Ferrero Cake-The Best Ever this cake is the STAR. 5 STAR CHOCOLATE NUTELLA CAKE!

Yes, this cake is one of the most popular desserts. Full of hazelnuts, Nutella, cheese and chocolate! How can you not make this recipe?

Last week I made this recipe for my best friends. She wanted chocolate dessert for her office party.

So, I made it. The cake was an absolute hit.

And because of that I decide to share this recipe again.

Also, the cake size is 9 by 5. (remember working 9 to 5 and you need Ferrero cake 9 by 5)

SHOPPING LIST

  • eggs (organic)
  • sugar
  • hazelnuts
  • cocoa
  • Nutella
  • Philadelphia cheese
  • chocolate
  • corn syrup
  • heavy cream
  • flour
  • wafers

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl (for the cake and the filling)

-small sauce pan

-baking sheet (16 by 12 inches)

ACTION TIME

THE BEST FERRERO ROCHER CAKE

Ingredients

5 large eggs

6 TBSP sugar

2 1/2 cups grounded Hazelnuts

3 TBSP flour

2 TBSP cocoa powder

2 tsp baking powder (no aluminum)

Nutella FILLING

12 oz Philadelphia cheese

3 cups Nutella

1 1/4 cup heavy cream

1 cup hazelnuts

and 1 1/2 cup crushed Wafers

Chocolate Glaze

6 oz semisweet chocolate, chopped

2 TBSP corn syrup

1 cup heavy cream

Decoration: shaved chocolate, ground hazelnut, Ferrero Rocher candies.

INSTRUCTIONS

Preheat oven to 350 F.

Line the baking sheet (16 by 12 inch) with aluminum foil.

Spray with baking spray and set aside.

Bowl 1: Add dry ingredients

Sift flour, cocoa and baking powder.

To that mixture add the ground hazelnuts and stir all ingredients together.

What happen? You can’t see the flour. Like I said the boss is Hazelnuts.

Now, let’s mix eggs and sugar.

So, add to the mixing bowl eggs and sugar.

Mix on high speed for about 9 minutes or until tripled in volume.

Our next step is to combine dry and wet ingredients.

Using the spatula fold dry ingredients into the eggs, in 3 additions. (slowly)

SUPER IMPORTANT: Please, pay attention to this step.

Be very gently when mixing dry ingredients into the eggs mixture.

I will repeat again. Be sure the flour hazelnuts mixture is mixed or incorporated into the eggs mixture.

Pour batter into prepared pan and bake at 350 F for about 15 to 17 minutes.

Use a toothpick to check if the cake is done.

Remove from the oven.

Cool it for about 2 to 3 hours.

While cake is resting, make the Nutella filling.

How to Make THE BEST Nutella Filling

Add cheese to the mixing bowl and mix until smooth.

Then transfer to the plate.

Using the same bowl mix the heavy cream for 2 minutes.

Then add cheese and mix until two ingredients are incorporated.

After that add Nutella and mix quickly. (for a minute or two)

Then add crushed Wafers and hazelnuts.

Stir all ingredients using your favorite spatula.

And you just made the best Nutella filling.

MAKING CHOCOLATE GLAZE FOR Best Ferrero Rocher Cake

Heat the cream until almost boiling.

Add chopped chocolate and corn syrup to the bowl.

Pour the heated cream over the chocolate and corn syrup mixture.

Let sit for 5 minutes.

Gently mix until smooth.

And yes, you just made the best chocolate glaze.

ASSEMBLY for Best Ferrero Rocher Cake

You can refrigerate the cake for a few hours. It will be easier to handle.

You need to cut 3 layers of the cake. The size is 9 by 5. (The leftovers will be used for recipe 2)

Place the first layer of the cake to a serving plate.

Add Nutella filling, second layer cake.

Then add Nutella filling and the third layer of the ferrero rocher cake.

Return to fridge until filling is set.

Note: At this point, I find it is important to chill the cake before continuing to help the Nutella filling firm up.

Pour the chocolate glaze over the best ferrero cake.

Decorate with shaved chocolate, Ferrero chocolate candies, ground hazelnuts, icing sugar.

Layer the bottom of the dish with ferrero cake pieces (it can be cubes or any shape as long as you cover the bottom)

Finally top everything with Nutella filling.

Decorate with ground hazelnuts, Ferrero chocolate candies.

Transfer to fridge until ready to serve.

This would be the perfect dessert for party, Christmas gift or just a treat for yourself.

Light, creamy and fluffy. Yes, I know. This is your dream dessert. So elegant and so simple.

If you never heard about this French dessert, the classic cream puffs are filled with whipped cream. How lovely. And of course our recipe today is going to take cream puffs to a whole new level. Nutella Chocolate Level.

The filling for this recipe is made of only two ingredients, Nutella and heavy cream. Since Nutella is asking for chocolate…well we have the chocolate icing. How perfect!

BTW, this dessert can be for your next party, office lunch or just the perfect family dessert for Sunday.

So, in order to make this recipe you will need to buy the following ingredients. Please check the list called…

SHOPPING LIST

  • flour (all purpose, unbleached)
  • butter
  • eggs
  • heavy cream
  • Nutella
  • chocolate (semi sweet or your favorite kind)
  • oil
  • vanilla extract
  • salt

Equipment Needed for this recipe

Mixer (I used KitchenAid mixer)

Mixing bowl

baking sheet (12 by 16 inch)

ACTION TIME

MAKING Chocolate Nutella Cream Puffs-French Best

Ingredients

3/4 cup water

1/4 + 1/8 cup butter (unsalted)

1/2 tsp salt

3/4 cup flour

3 eggs (large size)

Nutella Cream Filling

1 cup heavy cream

Whip It (optional)

3/4 cup Nutella

1/2 tsp vanilla extract

Chocolate Icing

1 cup chocolate chips

1 TBSP oil

INSTRUCTIONS

Preheat oven to 375 F.

Line baking sheet with parchment paper or silicone baking mat.

In a medium saucepan, on medium-high heat bring water,salt and butter to boil.

Quickly stir in the flour with a wooden spoon.

Continue to stir until mixture until mixture pull away from walls of the pan. (3 to 5 min)

Remove from heat and transfer into a bowl to cool slightly, about 5 min.

Add eggs, one at the time, stirring vigorously until well incorporate into batter.

Important: For this step you can use the mixer. (if you want to)

It will look like this (check the picture below)

Transfer the pate a choux to a large pastry bag. Pipe 2 inch rounds each into prepared pan. (or the shape you like).

Bake puffs for 30 min, until they rise, and golden brown in color.

Let cool on sheets on wire racks.

Puffs can be stored at room temperature for up to 1 day.

Making the Nutella Filling

Mix heavy cream and Whip It (if using) until firm.

Then add Nutella and mix until incorporated. (just a few seconds).

Then add the vanilla extract and stir with the spatula or wooden spoon.

Now, if you have your cooled puffs and Nutella filling you are ready for the next step.

Chocolate Icing

Melt chocolate and oil using the double boiler method. Set aside.

To Assemble

Gently cut the tops off the cream puffs.

Spoon or pipe the Nutella filling into empty shells.

Cover with the top.

And you are almost done.

Cover the top of cream puffs with melted chocolate or dust with icing sugar.

Refrigerate until ready to eat.

Eggs – use large, organic eggs (Farmers market or your local store)

Heavy Cream – I used 35%

Nutella – My favorite place to buy Nutella is the Costco. (the best price)

WHIP IT – Dr. Oetker product which is the cream stabilizer.

Butter – unsalted (use your favorite brand)

I already asked that question. And Universe is working on the solution. Until then I will keep making and repeating this recipe until you discover and share this golden joy of the recipe.

Description of Christmas Schmoo Torte Recipe

This torte is the Canada best recipe. Or to be more specific it is Manitoba regional iconic cake. Packed with pecans, heavy cream and caramel sauce. Can be illegal if borders for cake exist.

I made this torte many, many times.One of them went into this post Shmoo Torte – a gooey torte with a mysterious past (Winnipeg). So, now you are wondering why I am doing it again?

Well, my original recipe was for 9 inch cake pan and I was not on diet.

Now, I am but I am not about to give up on tortes, cakes or desserts. So, I was thinking to make a smaller version of my favorite cake, Shmoo Torte.

Smaller version got another letter so it is now, Schmoo torte. Did I confuse you? Of course I did. But it is not my fault.

The name is what is so confusing. It can be Schmoo or Shmoo. Because of that the Universe is taking so much time to make it viral. But with the help of God, Dr. Google and you my sweet baking nation it is the time to share this recipe. With the whole sweet world. From Europe to China to USA this recipe is the recipe that MUST be made.

Because we need something to unify us and this is it. The torte from Canada called Schmoo Torte or Shmoo. Who cares?

The recipe is the same. Delicious Canadian layer cake with whipped cream filling and homemade caramel sauce.

SHOPPING LIST

  • eggs
  • sugar
  • flour (all purpose, unbleached)
  • pecan
  • heavy cream
  • cream of tartar
  • baking powder
  • pure vanilla extract
  • Whip It (optional)
  • butter (unsalted)
  • brown sugar

EQUIPMENT NEEDED

-your favorite mixer (I like to use KitchenAid)

-mixing bowl

-6 inch baking pan (2 of them)

ACTION TIME

Making Christmas Schmoo Torte Recipe-Canada Best

Ingredients

3 egg whites + 1/4 cup sugar

3 egg yolks + 1/4 cup sugar

1/8 tsp cream of tartar

1/2 tsp vanilla extract

1/4 cup AP flour

1/2 tsp baking powder

1/2 cup chopped pecans

Filling

2 1/2 cups whipping cream

3 TBSP icing sugar

1 Whip It (optional)

Caramel Sauce

1 cup whipping cream

1/4 cup butter

1 cup brown sugar

INSTRUCTIONS FOR SCHMOO TORTE

Preheat oven to 325 F.

Line two of 6 inch cake pans with parchment paper. Set aside.

Separate egg whites from yolks.

In bowl number 1 beat egg whites until almost stiff.

Add 1/8 tsp of cream of tartar and very gradually add 1/4 cup of sugar.

Mix well.

In a bowl number 2 beat 3 egg yolks until light. Add 1/4 cup sugar and vanilla.

Mix all ingredients well. (for about 3 minutes).

Now fold egg whites into yolk mixture.

Sift 1/8 cup flour and 1/2 tsp baking powder.

Use a spatula to mix flour into eggs mixture.

Be sure that no streaks of flour remain.

Now sift another 1/8 cup of flour.

Mix again using a spatula.

Fold in 1/2 cup chopped pecans.

Pour batter into prepared pans.

Bake for about 27 min or until a toothpick inserted in the center comes out clean.

Remove from oven and cool it.

Making Filling and Assembly

For the filling whip the cream, Whip It (if using) with icing sugar.

Place bottom cake layer and add half of the whip cream filling.

Top with remaining layer.

Use remaining whipped cream to cover the top and side of cake.

Decorate with pecans and caramel sauce.

Chill for at last 6 hours or overnight.

Now, let’s make a sauce.

How to make CARAMEL SAUCE

1 cup whip cream

1/4 cup butter

1 cup brown sugar.

Bring 1/2 cup of whip cream and 1/4 cup of butter to boil.

Add 1 cup brown sugar and 1/2 cup whip cream.

Return to boil.

Reduce heat and boil for about 5 minutes.

Remove from heat and cool.

QUIPMENT NEEDED

-your favorite mixer (I like to use KitchenAid)

-baking sheet (11 by 17 inches)

Reform Torta Easy Chocolate Recipe for you

MAKING Reform Torta Easy Chocolate Dessert

Ingredients

8 egg whites

8 TBSP sugar

1 TBSP flour, all purpose and unbleached

14 TBSP grounded walnuts

Chocolate Filling

8 egg yolks

8 TBSP sugar

2 oz chocolate, chopped

2/3 cup butter

1 tsp vanilla extract

Decoration:

2 cups heavy cream

1 Whip It (optional)

INSTRUCTIONS FOR Reform CAKE

Line an 11×17 sheet pan with parchment paper. (don’t spray with baking spry)

Preheat oven to 375 F.

In a small bowl add flour and grounded walnuts. Set aside.

Beat egg whites while slowly adding the sugar. (add sugar by TBSP, S-L-O-W-L-Y)

Eggs whites should be beaten until stiff peaks.

Then stop the mixer and carefully fold in the mixture of flour and ground walnuts.

Be sure walnuts and flour are incorporated into egg white mixture.

Pour the batter into prepared baking sheet.

Bake at 375 F for about 12 minutes or until done.

Remove from the oven and cool.

When you are ready to assembly, cut the cake into 3 equal peaces. (5 by 11)

Chocolate Filling for Reform Torte

Very quickly mix the egg yolks and sugar. (just for a minute)

Then using a double boiler method cook the yolks and sugar on a medium heat for about 10 minutes or until thickens up. (for some people 15 minutes or shorter)

Stir constantly until yolks thickens up.

Then add the chopped chocolate and stir until melted.

Take of the heat, add vanilla and cool it.

In a mixing bowl mix the butter.

Then add the half of cooled chocolate mixture.

Mix everything and then add the rest of chocolate mixture.

Again mix until the chocolate filling is smooth.

Ok, you just made the best chocolate filling.

IMPORTANT for double boiler method: First let water boil for the bottom pot and then add the top pot with mixture of egg yolks and sugar.

ASSEMBLY OF THE REFORM TORTA

Lay first piece, cover with chocolate filling.

Then cover with second piece of the cake.

Add the rest of the chocolate filling.

Cover with the third piece of the cake. (5 by 11)

At this point I like to transfer the cake into the fridge or freezer.

While the cake is resting in the fridge, mix the heavy cream and Whip it (if you are using it)

Cover the whole cake with heavy cream and decorate with shaved chocolate and ground walnuts.

Quick Note

Butter – I used organic, unsalted butter. For this recipe the butter must be at room temperature.

Chocolate – I used semi sweet chocolate but you can use dark or unsweetened.

Eggs – use large, organic eggs (say hello to your local farmers market)

Walnuts – I bought the walnuts from the Costco. (in my opinion the best price. $15 for 1 kg)

    ASSEMBLY OF THE REFORM TORTA

    Lay first piece, cover with chocolate filling.

    Then cover with second piece of the cake.

    Add the rest of the chocolate filling.

    Cover with the third piece of the cake. (5 by 11)

    At this point I like to transfer the cake into the fridge or freezer.

    While the cake is resting in the fridge, mix the heavy cream and Whip it (if you are using it)

    Cover the whole cake with heavy cream and decorate with shaved chocolate and ground walnuts.

DESCRIPTION OF THE BEST OPERA CAKE RECIPE

 I can’t say enough about this cake. But let me start with this statement: The PERFECT FRENCH DESSERT! Rich French dessert!

This cake is made with layers of almond sponge, coffee syrup, white coffee buttercream and very easy chocolate ganache.

The recipe is time consuming but quite easy to prepare. Please, please don’t be intimidated by number of ingredients or the steps to make this cake. It is worth it.

SHOPPING LIST FOR FRENCH DESSERT

  • eggs
  • sugar
  • almond flour
  • cake and pastry flour
  • chocolate
  • heavy cream
  • butter (unsalted)
  • cappuccino or coffee extract
  • pure vanilla extract
  • coffee
  • oil

QUIPMENT NEEDED

-your favorite mixer (I like to use KitchenAid)

-mixing bowl

-medium size sauce pan

-baking sheet 11 by 17

-6 inch round pan

MAKING French Opera Cake Recipe

4 eggs, separated and at room temperature

2 egg at room temperature

1/2 cup + 1/4 sugar

1 cup ground almonds

12 TBSP cake and pastry flour, sifted

Ganache Layer

1 1/2 cup heavy cream

12 oz or 350 gr baking chocolate, chopped

Italian Buttercream

4 egg whites, room temperature

1 cup + 4 TBSP sugar

4 TBSP water

2 cups butter, room temperature

2 TBSP cappuccino or coffee extract

1 1/2 tsp vanilla extract

Coffee Syrup

3/4 cup hot coffee

2 TBSP sugar

Chocolate Brush

1/3 cup chocolate chips, melted

Chocolate Glaze for Cake

1/3 cup from the Ganache Layer

1/4 cup chocolate chips

2 TBSP oil

Instructions for the best Opera Cake

Making the cake:

Preheat oven to 400F.

Line an 11×17 sheet pan with parchment paper.

Whip 4 egg yolks, 2 whole egg with 1/2 cup sugar. Use whip attachment.

Using high speed beat until thick and pale.

In another bowl mix 1 cup of almonds and 12 TBSP cake and pastry flour, sifted.

Using bowl number 3, whip 4 egg whites on high speed until foamy, then slowly add 4 TBSP sugar.

Whip until they hold a soft peak when the beaters are lifted.

Now, let’s take next step very carefully.

Fold the whipped whites into the yolks mixture in two additions.

After that add almond/flour mixture. Fold all ingredients together.

IMPORTANT: Take out 1 1/4 cups of the batter and pour into prepared 6 inch pan.

The rest of the batter pour into prepared baking sheet pan and spread the batter evenly.

Bake the cake for about 9 to 10 minutes at 400 F or until done. Cool it.

Then bake your second cake, 6 inch pan for about 7 to 8 minutes or until done.

Cool it. Cover and freeze 6 inch cake for another recipe.

Now, lets make the ganache layer.

HOW TO MAKE CHOCOLATE GANACHE FOR FRENCH OPERA CAKE

Important: this ganache can be made the day before. Store in the fridge, covered until ready to use.

Now, back to the recipe.

Chop the baking chocolate.

Heat the cream until it just begins to simmer.

Pour cream over baking chocolate.

Let this sit for a minute, then start stirring using a spatula.

Stir until the chocolate is fully melted and the ganache is smooth.

Set aside to cool. Then transfer to the fridge for a few hours or overnight.

Italian Buttercream Instructions

Whip 4 egg whites with 4 TBSP sugar on high speed until just past foamy.

Use 1 cup sugar and 4 TBSP of water and bring to a full boil over high heat.

Boil until sugar hits 240 F on a candy thermometer.

With the mixer on medium speed, carefully add the hot sugar to the whipped whites by pouring it

down the side of the bowl, then increase the speed and whip until the whites cooled to room temperature (6 to 8 minutes)

Add the butter, a few pieces at a time until combined.

Add the cappuccino/coffee extract and vanilla extract.

Mix all ingredients well.

Coffee Syrup Instructions

Stir 3/4 cup hot coffee and 2 TBSP sugar until sugar dissolves.

ASSEMBLY CAKE

Remove the sheet of cake and cut cake into 3 rectangles size 5×11. If you have extra eat it.

Brush the bottom of one of the layers with the melted chocolate chips.

Put into fridge to firm.

Once it is firm place this layer chocolate-side down on a flat cake board or platter.

Brush it with coffee syrup.

Spread half of the buttercream on top.

Add second cake layer.

Brush with coffee syrup, spread with 2/3 of the cooled ganache.

Place the third cake layer.

Brush with coffee syrup.

Spread with the remaining Italian buttercream over top.

The final step is to spread chocolate glaze.

Re-warm 1/3 chocolate ganache, add 1/4 cup chocolate chips and 2 TBSP oil.

Stir until smooth.

Spread over the top of the cake .

Chill until set.

Decoration for French Opera Cake Recipe

Chocolate cover coffee beans, coffee buttercream, ground almonds, shaved chocolate or use your imagination.

IMPORTANT: Trim away the sides of the cake to reveal clean layers, then slice it into size you want to.

Almond flour – you can buy from the store or if you have the food processor you can make your own.

Chocolate – I used semi sweet chocolate but you can use dark or unsweetened.

Eggs – use large, organic eggs (say hello to your local farmers market)

Heavy Cream – I used 35%

Coffee – I used homemade coffee. You can buy from your favorite coffee shop.
