-Spray them with baking spray and dust with cocoa powder. (be generous)

100 gr Lindt Hazelnut Chocolate
1/4 cup unsalted butter

1/4 cup icing sugar
1/8 cup all purpose flour
1/4 tsp salt
1/2 TBSP rum
Optional: 1/4 cup chopped hazelnuts

Preheat oven to 425 F.
Place the chopped chocolate and 1/4 cup unsalted butter in a bowl set over a pan of gently simmering water, ensuring the bowl doesn’t touch the water.

Chocolate is good for you. For me. For all of us.
So, let’s make the best Chocolate Mousse Towers.
SHOPPING LIST
Before you start making this fabulous Chocolate Mousse Towers please be sure that
you have the following ingredients.
-Chocolate (white and dark)
-heavy cream
-fresh raspberries
-fresh blueberries
Now if you have all above in your kitchen you are ready to start this baking show.
BAKING TIME
The first thing we are going to make is the White Chocolate Raspberry Cream
Ingredients:
3/4 cup heavy cream
2 and 1/2 cup of white chocolate chips
6 oz or 170 gr fresh Raspberries
Puree raspberries using food processor.
Pour the raspberry mixture through a fine sieve to get rid of seeds. Set aside.

Bring the heavy cream to a boil.
Pour over 2 and 1/2 cup of white chocolate.
Let sit for 5 min.
Then use the mixer and mix for about 3 minutes. It will be smooth.

Allow to cool for a few minutes (if it is not already) and add the raspberry juice.
Mix well.

Refrigerate until cold, at least 4 hours or overnight.
So, you just made your White Chocolate Raspberry Cream.
MAKING CHOCOLATE DISK
Now, let’s make the chocolate disk.
For this you will need only one ingredient – DARK CHOCOLATE!
I used Lindt chocolate.
100 gr Dark Link (70% cocoa)
Cut the chocolate into small pieces.
Melt the chocolate in a bowl set in a saucepan half-filled with hot water.
Cut 2 stripes of parchment paper. The size is 14 inch long and 3 inch wide.
Very quickly spread the chocolate on the paper stripes.
Let cool until on the point of setting. (You will know. It is still soft but not melting)
Using the cookie cutter cut into the shape you like.
When the chocolate is firm, very carefully peel the paper away from the disk.
Now, you can store in the fridge. (up to one week).
ASSEMBLE THE CHOCOLATE TOWERS
Prepare about 1/2 cup of blueberries for decoration.
Fill the pastry bag with White Chocolate Raspberry Cream.
Use 1M or 2D frosting tip.
Pipe out a small rouse on chocolate disk,
Arrange a few blueberries around the rose.
Set the chocolate disk on top and press down gently.
Pipe another rose and add blueberries.
Cover with 3rd chocolate disk.

Today we are going to make the perfect vanilla cupcake. This recipe is the only one you will ever need if you want to make cupcakes.
The recipe is 100% success. So, I will repeat again 100% success.

Vanilla Cupcake
Ingredients:
1 and 1/4 cup cake flour
1tsp salt
2 tsp baking powder
1/2 baking soda
3/4 cup sugar
2 large eggs
1 1/2 tsp vanilla extract
1/2 cup oil (Crisco – soybean oil)
1/2 cup buttermilk
Instructions:
Sift cake flour, salt, baking powder and baking soda. Set flour mix aside.
Using an electric mixer beat 2 eggs for about 1 min. (medium speed- KitchenAid mixer)
Add 3/4 cup sugar and mix for another minute.
Add vanilla extract, oil and mix for another 2 min.
Next step is to add about half of flour mixture. Mix until incorporated.
Add 1/4 cup buttermilk. Mix.
Add remaining flour. Mix.
Add 1/4 cup buttermilk. Mix.
Be sure that all ingredients are incorporated. The butter will be thin,
Pour batter into a lined muffing pan. (about 3/4 full)
Bake for 15 min at 350 F.
Insert a toothpick in the center. If it comes out clean, cupcakes are done.
Cool the cupcakes.
You will get 12 cupcakes.

Now , we need frosting.
Frosting:
2 and 1/2 cups sifted icing sugar
1/2 cup + 1/8 cup butter
3 TBSP heavy cream
1 tsp vanilla extract
1/8 tsp salt
gel food coloring
Beat butter with a whisk attachment for about 3 min.
Add 1 cup sugar, 3 TBSP heavy cream, 1tsp vanilla extract and 1/8 tsp salt.Mix for 2 min.
Add 1 and 1/2 cup sugar and mix for another 3 min on high speed.

Spoon about 1/3 cup of the frosting into another bowl. Stir in a couple of drops of coloring. I used pink one.

Spread the pink frosting around the edges of a piping bag fitted with a Wilton 1M tip.
Spoon the white frosting in the center.
Place the tip directly on top of the center of the cupcake.
Using steady pressure, pipe a tight spiral around the cupcake.

Strawberry Buttercream Frosting
Made from fresh strawberries – Yes, it it homemade!
Ingredients:
1 lbs strawberries (454 gr)
1 cup unsalted butter
4 1/2 cups icing sugar (you can use less, it is your choice)
1/4 tsp vanilla extract
1/8 tsp salt
1 TBSP whip cream (optional)
Instructions:
Core the strawberries to remove the white center.
Place cleaned strawberries in a food processor and pulse until smooth.
You will have about 1 and 1/4 cup of puree.
Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)
Place strawberry puree in a small saucepan over a medium heat.
Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.

Place the reduced puree into the fridge to allow to cool.

Next Step:
Beat the butter. Be sure that there is no lumps.
Then add 2 1/2 cups of icing sugar and mix until butter and sugar are combined.

Add 1 TBSP of whip cream if needed and wanted.
