Brown Magic or Brown Butter

“Once you go black, you never go back….or something like that.

Yes, ladies and gentlemen that happen to me.

Once I brown my amazing, gorgeous butter the magic happen.

That nutty aroma, that magical color can’t be explained.

Simple the best.

And out of this world.

So, if you are willing to learn, I am ready to start today’s lesson.

HOW TO BROWN THE BUTTER?

—————————————————————————

Equipment

-light colored pot

I will repeat, again!

IMPORTANT! Please use a lightly colored pot to brown butter.

ACTION TIME – Brown the BUTTER!

————————————————————————————–

Ingredients

2/3 cup unsalted butter (room temperature)

Instructions

Place 2/3 cup butter in light colored pot.

how to brown the butter from the best food blog 5starcookies-melt room temperature butter
how to brown the butter from the best food blog 5starcookies-melt room temperature butter

Start melting your butter over medium heat.

Begin stirring with a wooden spoon.

First, it will look like nothing is happening.

But be patient. The magic is about to happen.

how to brown the butter from the best food blog 5starcookies-melted butter
how to brown the butter from the best food blog 5starcookies-melted butter

Once butter is melted, it will begin to bubble and foam.

Keep stirring.

how to brown the butter from the best food blog 5starcookies-melted butter will change the color
how to brown the butter from the best food blog 5starcookies-melted butter will change the color

The color will change from sunshine, golden to a toasty brown.

So, what is happening?

The water evaporates and the milk solids say “bye, bye” to butterfat.

The milk solids are heavier than the fat and they sink down to the bottom of the pan.

Shortly, they will begin to brown.

As soon as I see those brown specks, I turn off the heat, take the pot off the stove.

But don’t stop stirring.

Keep stirring for about 1 minute or until you achieve that gorgeous, amber-brown color.

Transfer into a heat proof bowl. .

Use in your favorite recipe or pasta.

Ready for war.

And today, my dear, hardworking baking nation, we are going to win.

Like you never seen before.

And if you still have doubts in your head, stop thinking.

Thinking is overrated.

Just remember, you are a soldier.

And I am your leader, Napoleon Bonaparte.

So, let’s win this macarons war. Together.

In order to win your first step is to believe.

BELIEVE!

Your second step is shopping.

Please, be sure you have all ingredients listed below.

Folding: Cut through the meringue and then fold up and over.

Be sure to scrape the bottom and sides of the bowl.

Add second half of the almond flour mixture and fold using the method above.

Now, the most important question is:

HOW LONG DO I NEED TO FOLD?

pink macarons from the best food blog 5starcookies-add almond flour and mix until batter flows like lava
pink macarons from the best food blog 5starcookies-add almond flour and mix until batter flows like lava

You need to fold until batter flows like lava.

If this answer is confusing, just check the videos of lava or just check lava cakes.

You need to get feeling of your final product.

Another answer is that the batter will fall back into the bowl in a thick ribbon.

Next step is to scoop batter into bag about 2/3 full.

Twist off the top and pipe macarons into desired size.

pink macarons from the best food blog 5starcookies-pipe macarons into desired size
pink macarons from the best food blog 5starcookies-pipe macarons into desired size

Slam or tap your pan 3 times against the counter to release air bubbles.

Let the macarons sit at room temperature for about 45 to 60 minutes.

Macarons will form top skin.

You will be able to touch them and they will not stick to your finger.

Preheat oven to 350 F.

Bake macarons for 11 minutes or just test them.

When you touch the top macarons and they are not moving, it is done.

Remove from the oven and cool.
