  • Butter, sugar, cocoa,egg
  • Milk, graham crumbs
  • Walnuts
  • Coconut
  • Margarine
  • Custard powder
  • Icing sugar
  • Mint extract
  • Chocolate
  • Oil

ACTION TIME

MAKING MINT NANAIMO BARS

Ingredients

1/2 cup butter

1/4 cup sugar

1/3 cup cocoa

1 egg

2 tsp vanilla extract

1 cup coconut

2 cups graham crumbs

1/2 cup walnuts, finely chopped

Middle Layer 

1/2 cup margarine

5 TBSP milk

4 TBSP Bird’s custard powder

3 1/2 cups icing sugar

2 tsp mint extract

drops of green food coloring (use to your taste)

Top Layer

5 oz chocolate

1 TBSP oil

INSTRUCTIONS

Line 9 x 9 inch square pan with aluminum foil. Set aside.

In a medium saucepan over low heat combine the butter, sugar,cocoa, egg until the mixture boils.

Boil for 2 minutes and add vanilla extract.

Remove from heat and stir graham crumbs, coconut and walnuts.

Press evenly into a 9 inch pan.

Chill in the freezer for a few hours or overnight.

Making Green Filling of JOY

Using a mixing bowl combine custard powder and milk.

Stir until smooth.

Add icing sugar, margarine and mint extract.

Mix using the whisk attachment for about 5 minutes. (high speed)

Then add a few drops of green color and mix until combined.

Note: Use as much as you wanted of green color.

Spread the filling evenly over the base and return to fridge of freezer while you make the topping.

Top Layer – Chocolate Nirvana

Using a double boiler method melt 5 oz chocolate and 1 TBSP of oil.

Spread over the second layer of JOY.

Decorate as you wish.

Keep in the fridge until the chocolate is set.

Cut, enjoy and share.

Nutella Cheese Carrot Cake – Hello Happy

Hello my dear readers,

Another day and another cake.

Nutella Cheese Carrot Cake

Ingredients

3 eggs

1½ cups sugar

1 cup oil

2 cups AP flour

1 TBS cinnamon

¼ tsp salt

1 tsp baking soda

1 tsp vanilla extract

3 cups carrots

1½ cup walnuts

Nutella Filling

1 1/2 cups Nutella

1/8 cup heavy cream

Cheese Filling

1 and 1/2 package (12 oz) cream cheese

1 1/4 cup heavy cream

1 and 3/4 cups icing sugar

1/2 TBSP vanilla extract

Instructions

Heat oven to 350 F.
Line baking sheet 16 x 11 with aluminum foil.
Mix sugar,oil and eggs.
Add flour, cinnamon, baking soda, salt and vanilla extract.
Stir in carrots and walnuts.
Pour into pan.

Bake until toothpick inserted in center comes out clean. (Mine was for about 25 min).
Cool it.

Make Nutella Filling

Mix heavy cream until firm.
Add Nutella and mix until incorporated for about 1 minute.
Keep in the fridge.

Make Cheese Filling

Mix cream cheese for about 3 minutes.
Add icing sugar, vanilla extract and mix until incorporated.
Set aside.
In another bowl mix heavy cream until firm.
Add heavy cream into cheese mixture and mix all ingredients together for about 1 minutes.
Keep in the fridge.
Now, you have everything:
-baked cake
-Nutella filling
-Cheese filling
Our next step is to cut the cake into 3 equal strips, size 4.5 x 11. ( you will have extra cake strip 2.5×11)

ASSEMBLING TIME

Begin assembling by placing 1 of the 3 cake pieces on parchment paper.
Spread the Nutella filling on top of the first layer.
Place the second layer on top and spread cheese frosting.
Place third layer and spread cheese frosting.
Decorate as you wish.

Keep the cake in the fridge for about 8 hours before … the best part.

Instructions

In food processor add 2 1/2 cups walnuts and blend into a fine meal. (about 2 minutes)

Add 2 TBSP maca powder and 1 TBSP vanilla extract. Blend for a few seconds.

Add 10 pitted chopped dates.

Blend for 30 seconds.

Roll into tablespoon-sized balls (or any size you like).

Coat with coconut.

Making Chocolate Chip Brownie Cookies

I used this recipe for chocolate chip cookies

Chocolate Chip Cookies

You can use your own chocolate chip cookie recipe.

Ingredients

1 cup chilled unsalted butter

1/2 cup white sugar

1 cup dark brown sugar

2 large cold eggs

1 tsp vanilla

2 cups AP flour

1 cup cake flour

1tsp salt

1 tsp baking powder

1/4 tsp baking soda

1 TBSP corn starch

2 cups semisweet chocolate chips ( I used Ghirardelli)

1 cup toasted chopped walnuts

Directions:

Cube 1 cup of chilled butter into 1″ pieces.

Put white and brown sugar in stand mixer bowl and mix until well combined.

Add cold cubed butter and continue mixing for about 5 min.

Add eggs, one at a time until well incorporated.

Add 1 tsp vanilla and mix.

In a bowl combing all purpose and cake flour,salt, baking powder, baking soda and corn starch.

Whisk until all dry ingredients are well mixed.

Add flour mixture to butter mixture and mix until fully incorporated.

Add 2 cups of chocolate chips and 1 cup of walnuts and mix by hand.

Refrigerate cookie dough from 2 hrs.

Scoop and roll balls of dough. The size is 1 TBSP.

Freeze them.

For this recipe you will need 6 of frozen chocolate chip cookies

Now, let’s make the brownies.

Brownies

Ingredients

1/2 cup unsalted butter

1/2 cup cocoa

1 cup sugar

2 eggs

1/2 cup AP flour

1 tsp salt

1/2 tsp vanilla extract

Instructions

Preheat oven to 350 F.

Line a 6 cup muffin tin with cupcake liners.

Melt 1/2 cup butter and 1/2 cup cocoa on low heat.

Add 1 cup sugar and stir constantly for about 5 minutes.

Remove from heat and cool for 5 minutes.

Add first egg and mix well.

Add second egg and mix well.

Then add 1/2 cup flour, 1 tsp salt and 1/2 tsp vanilla extract.

Mix well all ingredients by hand.

Assembly Time – Chocolate Chip Cookies and Brownies

In each cupcake liner add brownie batter using the ice cream scoop. (size 2 oz)

Drop frozen chocolate chip cookie dough in the middle of each brownie.

Bake at 350 F for about 23 to 25 minutes.

Cool it.

ACTION TIME – Ingredients

Ingredients

1/2 cup unsalted butter

1/2 cup cocoa

1 cup sugar

2 eggs

1/2 cup AP flour

Instructions for making brownies

BTW for this recipe you don’t need a mixer.

Preheat oven to 350 F.

Line a 6 cup muffin tin with cupcake liners.

Melt 1/2 cup butter and 1/2 cup cocoa on low heat.

Add 1 cup sugar and stir constantly for about 5 minutes.

Remove from heat and cool for 5 minutes.

Add first egg and mix well.

Add second egg and mix well.

Then add 1/2 cup flour, 1 tsp salt and 1/2 tsp vanilla extract.

Mix well all ingredients by hand.

Make chocolate chip cookies according the recipe you selected.

Important: Defrost your phyllo dough. Don’t use frozen phyllo because it will crack.

Again, be sure the phyllo is defrosted.

(put the package of phyllo in the refrigerator the night before you are going to make the baklava)

The first step is to make filling which is super easy.

Mix 4 eggs and 1 cup sugar for about 5 minutes.

Add 1 cup oil and 1 cup yogurt and mix all ingredients for a minute.

Add 1/2 TBSP baking powder and mix it in.

Set aside.

Ground 5 cups of walnuts using a food processor.

Set aside.

Assembly Station for Baklava Easy Recipe

Oil 9×13 pan using 1 TBSP oil.

Place a sheet of phyllo in the prepared pan and add 1 cup filling.

Add second sheet of phyllo and 1 cup filling.

Add third sheet of phyllo, 1 cup of filling and 1 1/2 cups of ground walnuts.

Repeat all steps above.

Meanwhile, make the syrup.

The Syrup

Bring water, sugar and lemon pieces to boil and boil for about 5 minutes.

The recipe that will satisfy all your sweet cravings.

Yes, ladies and gentlemen, I did it again.

Ingredients

-CAKE

5 oz semisweet chocolate, (chopped)

1/4 cup cocoa

1 1/2 cups boiling water

4 large eggs

1 cup butter

1 1/4 cups brown sugar

1/4 cup white sugar

1/2 cup Greek yogurt

1 tsp rum

1 1/2 cups flour (AP)

1 tsp baking soda

1/2 tsp salt

Chocolate Mousse

5 oz semisweet chocolate (chopped)

7 TBSP butter

2 large eggs, separated

1 TBSP sugar

3/4 cup heavy cream

1/4 tsp rum

Coconut – Almond Filling

6 large egg yolks

2/3 cup sugar

1/4 cup butter, unsalted

150 ml evaporated milk

1/2 cup coconut

1 cup almonds, ground

Glaze

5 oz semisweet chocolate, chopped

1 and 1/2 TBSP corn syrup

1 cup heavy cream

Instructions

-for the cake

Coat 13×18 baking sheet with baking spray. (or do line with aluminum foil and spray)

Preheat oven to 325 F.

In a bowl mix 1 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt.

Set aside.

Put 5 oz chopped chocolate and 1/4 cup cocoa in a saucepan.

Add 1 1/2 cups boiling water and mix until all ingredients are combined and melted.

Set aside to cool.

Meanwhile, beat 1 1/4 cups brown, 1/4 cup white sugar and 1 cup unsalted butter. (about 5 minutes)

Add 4 eggs, one at a time, beating well after each addition.

Then add 1/2 cup Greek yogurt and 1 tsp rum.

Mix everything together.

Reduce mixer speed to low.

You will add flour and chocolate mixture this way:

1/3 flour mix, add 1/2 chocolate mixture,mix, add 1/3 flour mix, add 1/2 chocolate mixture.

Mix. Finish with the flour mixture.

Pour the mixture into 13×18 prepared baking sheet.

Bake at 325 for about 20 to 25 minutes.

Cool it.

Chocolate Mousse

Melt the chocolate and butter using a double boiler method.

Set aside to cool.

Whip 2 egg whites using a whisk attachment for 1 minute.

Add 1 TBSP sugar and whip until to soft peaks. Set aside.

In another bowl mix 3/4 cup heavy cream.

Using a small bowl combine 2 egg yolks and rum.

Add egg yolks mixture to cooled melted chocolate.

Mix everything together by spatula.

Fold in the whipped egg whites.

Then fold in whipped cream.

Be kind when folding.

Coconut-Almond Filling

Combine 6 large egg yolks, 1/4 cup butter, 2/3 cup sugar and

150 ml evaporated milk in a larger saucepan.

Cook over medium heat, stirring constantly until the mixture is thick.

For me it was 17 minutes.

!!!So, be prepared to stir non-stop for about 15 to 20 minutes.

After the filling is cooked transfer to a stand mixer and whip until cooled and fluffy.

Used whisk attachment.

Add coconut and ground almonds.

Cover and keep in the fridge until ready to use. (up to 5 days)

Glaze

Heat 1 cup heavy cream until almost boiling.

Pour it over chopped chocolate and corn syrup mixture.

Let sit for 5 minutes.

Gently mix until smooth.

Pour the glaze over the bombes.

ALMOST DONE

Assemble the chocolate bombes

Scoop ¼ cup of the chocolate mousse into each mold.

Make it even and pretty. Freeze for ½ hour.

Using a round cookie cutter, cut 15 circles from your chocolate cake.

The remaining cake give to your kids or just eat it.

Now, take your mold out of freezer.

Add 2 TBSP of coconut/almond filling to each mold.

Make it even and pretty. (I didn’t)

Then gently press the cake circles on top of Coconut-Almond filling.

Cover with plastic wrap and freeze overnight.

NEXT DAY

Unmold the frozen bombes onto a wire rack.

Pour the chocolate glaze over bombes and refrigerate for a few hours or

until the glaze is set.

Action Time – Meghan Royal Angel Dream Cake

Ingredients

3 oz semisweet chocolate, chopped

1/8  cup cocoa

3/4 cup boiling water

1/2 cup butter,softened

1/2 cup brown sugar

1/4 cup white sugar

2 large eggs

1/4 cup sour cream

1/2 tsp vanilla extract

3/4 cup flour (AP)

1/2 tsp baking soda

1/4 tsp salt


Filling

1 package cream cheese (8 oz)

1/2 +1/8 cup heavy cream

1 1/8 cup icing sugar

1/4 tsp vanilla extract

Icing

5 oz chocolate (chopped)

1 TBSP oil

INSTRUCTIONS

Coat 9 inch round cake pan with baking spray.

Put 3 oz chopped chocolate and 1/8 cup cocoa in a heatproof bowl.

Add 3/4 cup boiling water and whisk until chocolate is melted.

Set aside.

Using a small bowl add 3/4 cup AP flour, 1/2 tsp baking soda and 1/4 tsp salt. Set aside.

Using a stand mixer with the paddle attachment mix butter and both sugars until light and fluffy.

Add 2 eggs, one at a time, beating well after each addition.

Slowly add sour cream and vanilla.

The butter will look curdled at this point. Don’t worry.

Keep going….

First add 1/3 flour mixture, mix, then add..

1/2 chocolate mixture…mix…add

1/3 flour mixture, mix…add

1/2  chocolate mixture…mix …add

1/3 flour mixture…mix all ingredients again.

Pour the batter into prepared 9 inch round pan and bake at 325 F for about 25 minutes.

Start checking after 20 minutes using a toothpick.

Cool completely in the pan.

Make the cheese cream filling

Mix 8 oz cream cheese, 1/4 tsp vanilla and 1 1/8 cup icing sugar.

In another bowl mix 1/2 cup + 1/8 cup heavy cream until stiff.

Gradually fold cream into cheese/sugar mixture.

Spread over chocolate cake.

Refrigerate for about 4 hours or overnight.

Chocolate Icing

Using a double boiler method, melt chocolate and 1 TBSP oil.

Pour over cream cheese mixture.

Return to fridge for 2 hours.

Yes, ladies and gentlemen that happen to me.

Once I brown my amazing, gorgeous butter the magic happen.

That nutty aroma, that magical color can’t be explained.

Simple the best.

And out of this world.

So, if you are willing to learn, I am ready to start today’s lesson.

HOW TO BROWN THE BUTTER?

Equipment

-light colored pot

I will repeat, again!

IMPORTANT! Please use a lightly colored pot to brown butter.

ACTION TIME – Brown the BUTTER!

Ingredients

2/3 cup unsalted butter (room temperature)

Instructions

Place 2/3 cup butter in light colored pot.

Start melting your butter over medium heat.

Begin stirring with a wooden spoon.

First, it will look like nothing is happening.

But be patient. The magic is about to happen.

Once butter is melted, it will begin to bubble and foam.

Keep stirring.

The color will change from sunshine, golden to a toasty brown.

So, what is happening?

The water evaporates and the milk solids say “bye, bye” to butterfat.

The milk solids are heavier than the fat and they sink down to the bottom of the pan.

Shortly, they will begin to brown.

As soon as I see those brown specks, I turn off the heat, take the pot off the stove.

But don’t stop stirring.

Keep stirring for about 1 minute or until you achieve that gorgeous, amber-brown color.

Transfer into a heat proof bowl. .

Use in your favorite recipe or pasta.
