I was making preparation for this recipe for a while or since I made Easy Mini Pie Crust or Butter Tart Shells

So, dear my readers have you heard about butter tarts? Are you aware of the anger regarding the raisins? To have them or not? Screw Hamlet and his “To be or not to be”. The real dilemma is here, in Canada.

Do you want raisins in your recipe or not? Since I value the peace more than anything in this life it is your choice if you want to add it or not.

Yes, people love butter tarts in Canada and each province has their own favorite recipes. Speaking of love, Ontario has the Best Butter Tart Festival. As you can see Canada is in love with butter tarts.

For me the best butter tarts are homemade. So, let’s do it.

First step – getting ingredients

  • Butter Tart Shells – FROM 5 STAR COOKIES (or store-bough if you have no time)
  • Eggs
  • Brown Sugar
  • Corn syrup
  • Salt

Making the best Butter Tarts from Canada

Ingredients

butter tart shells (24 or 2 dozen)

Butter Tart Filling

2 eggs

3/4 cup brown sugar

2 TBSP corn syrup

1/4 tsp salt

Optional: walnuts, raisins, pecans

INSTRUCTIONS

Preheat oven to 350 F.

Add the following ingredients to the mixing bowl: eggs, brown sugar, corn syrup and salt.

Mix all ingredients until well incorporated. (about 5 minutes)

Optional: Sprinkle each tart shell with chopped walnuts (or use your whatever is your favorite … like raisins, pecan…)

Pour filling into each shell but don’t fill up, leaving 1/4 inch headspace. (I used 1 TBSP + 1 tsp of butter tart filling). BTW, 1/4 inch is about 5 mm.

Bake at 350 F for about 20 minutes. (start checking after 15 minutes)

Cool it.

Serve at room temperature.

Storage: Store them in the fridge for about 3 days.

How I like to make them?

I like to top butter tart filling with melted chocolate and heavy cream.

Use double boiler method and melt 1 cup chocolate chips with 1 TBSP oil.

Final touch: Sprinkle with chopped walnuts. Super easy and so much fun. And it looks like…

How to make the best mini pie crust and butter tart shells? Or do you want to make just a regular pie crust. All of that and more is here, for you.

Hello from the best pie crust you can imagine.

With this recipe you can make so much. It is the gift that keeps on giving.

So, you can make:

-2 Pie Crust (for 9 inch pie) and 12 tart shells

-or you can make 3 pie crusts (9 inch) or just

-36 butter tart shells or 36 mini pies

This recipe doesn’t need description.

It is the little star made from the big 5 star secret recipe.

But I will say the following about this recipe:

This recipe is scaled-down from my secret recipe. Why?

Because you asked for it. I got so many emails asking me if I can provide recipe that uses less than 5 cups of flour. (not all of you are having KitchenAid Mixer)

So, I did. And now we can start making the best pie crust for your sweet future.

Like always our first step is …

  • CRISCO All-Vegetable Shortening
  • Brown Sugar
  • Flour (all purpose, unbleached)
  • Eggs
  • White Vinegar

ACTION TIME

MAKING Mini Pie Crust or Butter Tart Shells

Ingredients

Mixing Bowl 1

3 TBSP flour

1 lbs shortening

3 TBSP brown sugar

Bowl 2:

1 eggs, large

1 TBS vinegar

3/4 cup water (ice water)

Bowl 3

3 1/2 cups flour (all purpose)

INSTRUCTIONS

Your first step is to add flour, shortening and brown sugar to the mixing bowl. (picture 1)

Mix until combined. Set aside.

In a separate bowl add egg, vinegar and ice water. Mix using a fork. (picture 2)

Then add eggs mixture to the shortening. (picture 3)

Mix all ingredients together.

After that add all flour or 3 and 1/2 cups and mix until all ingredients are combined.

It will be sticky but don’t worry.

Divide dough into 3 equal portions. (see the pictures below)

Wrap each tightly in plastic wrap. (If is to sticky use the metal spoon to transfer dough)

Transfer to the freezer and you can freeze for about 3 months.

-Mix flour, shortening and brown sugar using mixer. Set aside.

-Combine in separate bowl: eggs, vinegar and water. Use fork to mix it.

-Add egg mixture to shortening

-Then add flour

-Mix, divide and freeze.

HOW TO ROLL OUT PIE CRUST for MINI PIES or Butter Tart Shells

This is very important: Your first step is to take out your pre-made frozen dough the night before.

When you are ready to roll out your dough, use generous amount of flour on your surface and rolling pin. (this is important step since this dough loves the flour)

Place the dough on floured surface. Cover the dough with more flour.

Using your rolling pin, gently roll it from the center out, turning the dough with your hands as you go.

Roll the pie crust out to 1/8″ thickness.

This doesn’t need to be perfect. You are making mini pies or butter tarts shells.

Then use cookie cutter, large, round size. I used 3 and 1/2 inch or 9 cm.

Cut out 12 circles from the pie crust. Re-roll any scrap pieces of pie.

Place each pie circle into the cavity of a standard 12-count muffin pan.

Please, be sure to gently press the pie dough down and around the sides.

Transfer the muffin pan into the freezer for about 2 hours.

Remove from freezer, cover with plastic wrap then aluminum foil and return to the freezer. (until ready to use)

And you just made mini pie crust or butter tart shells for your future recipe.

FINAL NOTE

The best recipe for mini pie crust or butter tart shells.

From this recipe you can make 36 mini pies or 36 butter tart shells. You can also make 3 regular size pies (9 inch).

It is your choice. And you have so many of them when it comes to this recipe.

However, the following sentence is not giving you a choice: This dough MUST BE FROZEN before being used.

2 eggs, large

1/2 cup brown sugar

1/2 cup white sugar

3/4 cup butter, unsalted and room temperature

1/2 cup flour, all purpose

1 cup chocolate chip cookies (Nestle or what you have, semi-sweet chocolate chips)

1 cup walnuts

INSTRUCTIONS

Preheat oven to 325 F.

Add eggs to the mixing bowl and mix until foamy and pale in color.

Add both sugars and mix again.

Then add flour and mix until flour is incorporated.

Your next step is to add butter. Beat until incorporated.

Stir in chocolate chips and chopped walnuts.

Remove the pie from the freezer.

Spoon the chocolate chip mixture into pie shell.

Bake for 55 minutes at 325 F or until knife inserted comes out clean.

Cool it.

Eggs – I use large, organic. My favorite place to buy eggs is the local farmers market.

Butter – This recipe is using unsalted butter but if you don’t have it, use salted one.

Chocolate Chips – For this chocolate chip pie I used semi-sweet chocolate chips but you can use the one you like. Unsweetened, dark chocolate chips….It is your choice really)

Walnuts – they are expensive. My favorite place to buy walnuts is Costco.

This pumpkin pie recipe is my favorite recipe. Yes, the best homemade pumpkin pie. The one and only Thanksgiving dessert you will ever need.

Description of Easy Pumpkin Pie

This pie is light and fluffy, made with real heavy cream, pumpkin and blend of spices. The base for this pie is my homemade pie crust which you already have in your freezer. This really is the easiest pie or super easy pumpkin pie.

This recipe is MUST HAVE for Thanksgiving, but you can make it every month or every Friday if you want to. I am not judging you.

MAKING EASY PUMPKIN PIE

Ingredients

9 inch prepared pie crust

2 cups canned pumpkin

1 1/2 cups heavy cream

1/2 cup white sugar

1/3 brown sugar

3 large egg

1/8 tsp salt

1 TBSP ground cinnamon

1/4 tsp nutmeg

1 cup walnuts, chopped

Optional: 1 1/3 cups heavy cream

1 pouch Dr. Oetker Whip It

INSTRUCTIONS

Preheat oven to 425 F. Place a baking sheet on the rack while preheating the oven.

Making PUMPKIN Pie Filling

Using a small bowl mix 3 eggs with fork. Set aside.

In a large mixing bowl add the following:

pumpkin, white and brown sugar, heavy cream, lightly beaten eggs, cinnamon, salt and nutmeg.

Mix all ingredients. Set aside for a second.

Remove pie crust from the freezer.

Cover the base with chopped walnuts.

Pour the pie filling over the walnuts.

Set the pie on the baking sheet and bake at 425 F for 15 minutes.

Then reduce the temperature to 350 F and bake for additional 45 to 55 minutes or until pie is set.

How to check if pie is baked? Insert knife into the filling about 1 inch from the side. If it come out almost clean it is done.

Remove the pie from the oven and cool.

Whipped Cream: In the mixing bowl mix heavy cream and Whip it.

Top the pie with whipped cream and decorate with pumpkin and cinnamon spices.

-Make pumpkin pie filling by adding all ingredients into bowl and mixing it.

-Remove prepared pie crust from the freezer

-Cover pie crust with chopped walnuts

-Pour the filling over pie crust with walnuts

-Bake at 425 F for 15 minutes then reduce the oven temperature to 350 F and bake until pie is done. (45 to 55 minutes)

-Remove from oven, cool and top with whipped cream.

-Decorate with pumpkin and cinnamon spices.

Eggs – use large, organic and room temperature

Pumpkin – I used canned pumpkin. Be sure it is PUMPKIN PURE (not pie filling)

Heavy Cream – I used 35%

Pie Crust – I used homemade but you can use store bought pie crust.

Walnuts – I like to cover base of the pie with chopped walnuts. If you are allergic, don’t use walnuts. Just pour the pumpkin filling on top of frozen base.

Why should you use walnuts (if you are not allergic)?

It adds flavor and it also prevents the crust from becoming soggy.

SUPER EASY PUMPKIN PIE

Yield: SERVES 8 TO 9 PEOPLE
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes

This EASY PUMPKIN PIE is light and fluffy, made with real heavy cream, pumpkin and blend of spices.

The base for this pie is my homemade pie crust which you already have in your freezer.

Ingredients

  • 9 inch prepared pie crust
  • 2 cups canned pumpkin
  • 1 1/2 cups heavy cream
  • 1/2 cup white sugar
  • 1/3 brown sugar
  • 3 large egg
  • 1/8 tsp salt
  • 1 TBSP ground cinnamon
  • 1/4 tsp nutmeg
  • 1 cup walnuts, chopped
  • Optional: 1 1/3 cups heavy cream
  • 1 pouch Dr. Oetker Whip It

Instructions

    Preheat oven to 425 F. Place a baking sheet on the rack while preheating the oven.

    Making PUMPKIN Pie Filling

    Using a small bowl mix 3 eggs with fork. Set aside.

    In a large mixing bowl add the following:

    pumpkin, white and brown sugar, heavy cream, lightly beaten eggs, cinnamon, salt and nutmeg.

    Mix all ingredients. Set aside for a second.

    Remove pie crust from the freezer.

    Cover the base with chopped walnuts.

    Pour the pie filling over the walnuts.

    Set the pie on the baking sheet and bake at 425 F for 15 minutes.

    Then reduce the temperature to 350 F and bake for additional 45 to 55 minutes or until pie is set.

    How to check if pie is baked? Insert knife into the filling about 1 inch from the side. If it come out almost clean it is done.

    Remove the pie from the oven and cool.

    Whipped Cream: In the mixing bowl mix heavy cream and Whip it.

    Top the pie with whipped cream and decorate with pumpkin and cinnamon spices.

    Store in the fridge.

Yes, I am not kidding. This is my secret recipe. And I am going to share.

Maybe because it is 2020 and life is so out there that I need something NORMAL, something to hold me “IN” HAPPY!

And I know it is not just me…it is YOU and YOU and YOU and we ALL need “cozy happy life.”

What is more cozy and happy than the PIE?

Even if you don’t like pies, there is something in the air when pie is being made. And that “something” I am about to share.

DESCRIPTION OF PIE DOUGH RECIPE

One and only pie crust recipe I use. This is the recipe from one of the most famous bakery. (trust me, I did not steal the recipe. I paid for it).This recipe is old fashioned and made for your pie hungry heart.

BTW, if you ever made pie crust, you know it can be tricky. On top of that you are wondering why people said “as easy as pie”.

But trust me this recipe is “as easy as pie”. It is made with a few simple ingredients:

  • shortening
  • brown sugar
  • flour
  • eggs
  • vinegar
  • water

Super flaky, ridiculously easy to make, tender and turns out perfectly every single time. Yes, this pie is the best gift you can give to yourself. (forget family, friends, coworkers…you can be selfish for a moment)

So, let’s start with ingredients you need to buy. It is only 5!

SHOPPING LIST for Pie Crust

  • CRISCO All-Vegetable Shortening
  • Brown Sugar
  • Flour (all purpose, unbleached)
  • Eggs
  • White Vinegar

ACTION TIME

MAKING PIE CRUST

Ingredients

1/3 cup flour

2 lbs shortening

1/3 cup brown sugar

2 eggs, large

1 TBS + 2 tsp vinegar

1 1/2 cups water

7 cups flour (all purpose)

INSTRUCTIONS

Add to the mixing bowl the following ingredients:

flour, shortening and brown sugar. Mix until combined. Set aside.

In a separate bowl add eggs, vinegar and ice water. Mix using a fork.

Then add eggs mixture to the shortening.

Mix all ingredients together.

Your next step is to add 3 cups of flour and mix in.

Then add the rest of flour or 4 cups.

Mix all ingredients or until the flour is incorporated.

IMPORTANT: This dough will be sticky but once it’s frozen and thawed out it will be soft and easy to work.

Divide dough into 6 equal portions or into 3. (it is your choice. If you divide by 3 you will make 2 pies each time)

Wrap each tightly in plastic wrap. (don’t worry if is sticky. You can use spoon to transfer dough)

Then transfer to the freezer.

HOW TO ROLL OUT PIE CRUST

So, let me help you.

Your first step is to take out your pre-made frozen dough the night before.

When you are ready to roll out your dough, use generous amount of flour on your surface and rolling pin.

Place the dough on floured surface. Cover the dough with more flour.

Using your rolling pin, gently roll it from the center out, turning the dough with your hands as you go.

The idea is: turn-roll-turn-roll-turn-roll and so on….(you got idea, I hope)

IMPORTANT: Flour your surface and the top of the dough to prevent from sticking.

Don’t worry, this recipe likes a lots of flour. So be generous.

Your next question is how much to roll?

Roll the dough to fit your pie dish.

I am using 9 inch pie dish so I like to roll it a little longer, like 12 inch circle.

Transfer the dough to a 9 inch pie dish.

Press in and then use knife to trim extra.

After pressing it in, prick the base and the sides of the pie with a fork.

IMPORTANT! Prick the pie dough with the fork so that steam escapes while it’s baking.

DESCRIPTION

This cake is the easiest cake to make. Very simple base or sponge cake base made using 2 eggs.

Once you have the base, you can start building your the most amazing Nutella cake:

  • Layer of Nutella
  • Yellow filling
  • Hazelnuts
  • Chocolate Filling

Decoration: grounded hazelnuts, grated chocolate, whip cream

Important: You will make Yellow filling and Chocolate filling from one simple recipe. (yes, it is that easy. 2 for 1).

Now, are you ready to become the most famous domestic goddess? Of course you are. You are also ready for our favorite part of life called: Shopping. So, let’s start with the ingredients you need to buy.

MAKING NUTELLA EASIEST CAKE

Ingredients

Cake Base

2 eggs, large

1/3 cup regular, white sugar

1/3 cup flour (all purpose, unbleached)

1/8 tsp baking powder

Filling (Yellow and Chocolate)

5 egg yolks

1/3 cup +1 TBSP sugar

2 packages Dr. Oetker Vanilla puddding (can’t use instant)

3 3/4 cups milk (2%)

1/2 cup butter, unsalted

1/3 cup icing sugar

3 oz chocolate, semi-sweet (or use unsweetened)

1 cup Nutella

1/2 cup hazelnuts, grounded or chopped

Optional: Jaffa cakes, Oreo cookies…

INSTRUCTIONS

How to make Nutella cake base.

Preheat oven to 350 F.

Line bottoms of 6 inch cake pans with parchment paper. (do not grease the sides or the bottom). Set aside.

Mixing Bowl:

First mix eggs and sugar for about 6 minutes.

Mix until the mixture becomes thick, fluffy and triples in volume, for about 6 minutes.

Your next step is adding the flour. You are not going to use mixer at this point.

Add the flour, baking powder and fold with a spatula. Stop mixing when no streaks of flour remain.

Be sure the flour is incorporated.

Important #3: Do not over-mix.

Pour the batter into 6 inch prepared pan.

Bake for about 19 minutes but start checking after 15 minutes. ( be sure to check using the toothpick)

Insert the wooden toothpick near the center of the cake. If it comes out clean, the cake is done.

Cool the cake. Remove from the pan.

Making Nutella Cake Filling

Add 5 eggs yolks and sugar into the mixing bowl. Mix for about 3 minutes.

Then add 2 Dr. Oetker Vanilla pudding and 1/2 cup milk. (room temperature).

Mix until all ingredients are incorporated. (another minute or two)

Meanwhile, add 3 1/4 cup cold milk into large pot.

Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from heat, transfer to the mixing bowl, cover with plastic wrap and let it cool.

While the filling is cooling, mix butter and icing sugar until incorporated. (2 minutes)

Add cooled yellow filling to the mixed butter.

Mix all ingredients until incorporated.

MELTING CHOCOLATE

Melt chocolate using the double method. Cool it. Set aside.

ASSEMBLY OF Easy Nutella Cake

Using the same 6 inch removable pan start building the cake.

Place sponge cake at the bottom of the pan.

Add 1 cup Nutella (or as much to cover the base of the cake).

Cover the Nutella with Jaffa cakes or Oreo cookies.

Add half of yellow filling on the top of Jaffa cakes or Oreo cookies.

Sprinkle with grounded hazelnuts.

Stop assembly for a second or until you make chocolate filling.

Important: Add melted, cooled chocolate to the second half of yellow filling. Mix until incorporated.

Pour chocolate filling on top of yellow filling.

Transfer the whole cake to the fridge for 6 hours or overnight.

NEXT DAY:

Decorate with hazelnuts, shaved chocolate or whip cream.

  • add chocolate filing on top of yellow filling
  • decorate as you wish

Quick Note

Jaffa Cakes – you can buy in the Walmart (international section) or check amazon.

Hazelnut – use toasted hazelnuts. Do you know how to toast hazelnut? Check the LINK

Yellow Filling – If you want you can divide yellow filling into two separate bowls. Add melted chocolate to second part and mix it. So, you can do assembly faster but you will have two bowls to clean.

Butter – I used organic. It is expensive but I wanted to use the best ingredients for this Nutella cake.

Chocolate – I used semi-sweet. You can use your favorite. (unsweetened, 70% cocoa… and so on)

Vanilla Pudding – YOU CAN’T USE INSTANT. It has to be Dr. Oetker. (check the picture below)

    Mix until the mixture becomes thick, fluffy and triples in volume, for about 6 minutes.

    Your next step is adding the flour. You are not going to use mixer at this point.

    Add the flour, baking powder and fold with a spatula. Stop mixing when no streaks of flour remain.

    Be sure the flour is incorporated.

    Important #3: Do not over-mix.

    Pour the batter into 6 inch prepared pan.

    Bake for about 19 minutes but start checking after 15 minutes. ( be sure to check using the toothpick)

    Insert the wooden toothpick near the center of the cake. If it comes out clean, the cake is done.

    Cool the cake. Remove from the pan.

    Making Nutella Cake Filling

    Add 5 eggs yolks and sugar into the mixing bowl. Mix for about 3 minutes.

    Then add 2 Dr. Oetker Vanilla pudding and 1/2 cup milk. (room temperature).

    Mix until all ingredients are incorporated. (another minute or two)

    Meanwhile, add 3 1/4 cup cold milk into large pot.

    Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

    Return to heat and stir non stop for about 3 minutes or until thickness.

    Remove from heat, transfer to the mixing bowl, cover with plastic wrap and let it cool.

    While the filling is cooling, mix butter and icing sugar until incorporated. (2 minutes)

    Add cooled yellow filling to the mixed butter.

    Mix all ingredients until incorporated.

    MELTING CHOCOLATE

    Melt chocolate using the double method. Cool it. Set aside.

    ASSEMBLY OF Easy Nutella Cake

    Using the same 6 inch removable pan start building the cake.

    Place sponge cake at the bottom of the pan.

    Add 1 cup Nutella (or as much to cover the base of the cake).

    Cover the Nutella with Jaffa cakes or Oreo cookies.

    Add half of yellow filling on the top of Jaffa cakes or Oreo cookies.

    Sprinkle with grounded hazelnuts.

    Stop assembly for a second or until you make chocolate filling.

    Important: Add melted, cooled chocolate to the second half of yellow filling. Mix until incorporated.

    Pour chocolate filling on top of yellow filling.

    Transfer the whole cake to the fridge for 6 hours or overnight.

    NEXT DAY:

    Decorate with hazelnuts, shaved chocolate or whip cream.

Making BANANA CAKE RECIPE WITH NUTELLA FROSTING

Ingredients

1/2 cup butter (unsalted)

1 cup white sugar

1/2 cup brown sugar

2 eggs, large

1 tsp pure vanilla extract

3/4 cup mashed ripe bananas

1/2 cup sour cream (14%)

3/4 cup chocolate chips

1/2 cup walnuts, chopped

2 cups flour (all purpose, unbleached)

2 tsp cinnamon

1 tsp baking soda

Nutella Frosting

1 cup Nutella

1/2 cup heavy cream

1/2 tsp Whip It

INSTRUCTIONS

Preheat oven to 350 F.

Line 9 by 13 pan with aluminum foil. Set aside.

Add the butter, white sugar and brown sugar to the mixing bowl. Mix until incorported (3 minutes)

Then add eggs, one at the time. Mix in.

Your next step is to add pure vanilla extract and mashed bananas.

In another bowl add flour, cinnamon and baking soda.

After that add half flour mixture to the egg mixture. Mix in.

Then add sour cream and mix in again.

Finish with the rest of flour mixture and mix everything together.

Then add chocolate chips and walnuts.

Stir using the spatula.

Pour the batter into prepared 9 x 13 pan.

Bake at 350 F for about 30 minutes or until done.

Cool before frosting.

Mix heavy cream and Whip it together.

Add Nutella and quickly mix. (about 1 minute)

5 oz chocolate (semi-sweet or use your favorite kind…unsweetened)

2 Tbsp oil

Just melt chocolate and oil (use double boiler method)

No frosting – Base Banana Cake

If you like plain banana recipe and you don’t like Nutella frosting or chocolate icing then just make the base banana cake.

Slice to your favorite size and enjoy.

-Mix butter and both sugars

-Add eggs, vanilla, bananas

-Dry ingredients bowl: flour, cinnamon, baking soda

Flour – I used all purpose, unbleached.

Eggs – Large, organic. Be sure the eggs are room temperature.

Bananas – I used 3 medium size bananas. (very dark bananas, ripe)

Butter – unsalted, room temperature

Baking soda – no aluminum (super important to me). You can buy baking soda and powder in the healthy stores or organic section of any food store

Sour cream – full fat and I used 14%

Let’s start with Christmas baking this second. And I am going to start with my first Christmas Recipe 2020 called ….

Description of No Bake Nanaimo Bars

Legend has it that a local housewife from Nanaimo created this recipe for a magazine cooking contest. And of course she won first prize. Because of her we know that Nanaimo is the city in British Columbia. Do you see how powerful baking is? You can learn geography and enjoy the best no-bake bars. So, let’s learn a little more about very Canadian traditional Nanaimo bars.

It consist of three layers: the first one or the base is made of wafer crumbs, walnuts and coconut. The middle layer is made of custard icing and the top layer is the chocolate ganache. Easy, don’t you think.

I made many versions of this recipe like Mint Nanaimo Bars , Cappuccino Nanaimo Bars, Peanut Butter Nanaimo Bars, Kit Kat Nanaimo Bars, Raspberry Nanaimo Bars and more…Yes, this is my favorite recipe for many reason. And it started in December of 1995 when in IGA store I bought my first box of Nanaimo bars…and the love story started…

So, let’s make the best Canadian recipe from British Columbia, city Nanaimo.

  • Butter
  • Sugar
  • Cocoa

  • Chocolate
  • Vanilla extract

Baking pan – Size 8 by 8 or 9 by 9

Mixer

Medium saucepan

Nanaimo Bars Number 1 Recipe -how to make homemade Christmas version

Making Original Nanaimo Bars

Ingredients

First Layer

1/2 cup butter, unsalted

1/4 cup sugar

1/3 cup cocoa

1 egg

2 tsp vanilla extract

1 2/3 cups graham crumbs

3/4 cup coconut

3/4 cup walnuts, finely chopped

Middle Layer

3/4 cup butter

6 TBSP milk

6 TBSP Bird’s custard powder

4 1/2 cups icing sugar

Top Layer

5 oz chocolate

2 TBSP butter or oil

INSTRUCTIONS

Line 9 x 9 inch square pan with aluminum foil or parchment paper. Set aside.

In a medium size bowl add graham crumbs, coconut and walnuts.

Then using a medium saucepan over low heat combine the butter, sugar,cocoa, egg until the mixture boils.

Boil for 2 minutes and add vanilla extract.

Remove from heat and stir graham crumbs, coconut and walnuts.

Press the base into the prepared lined pan.

Place into to fridge until firm (about 30 minutes).

Making Yellow Custard Icing

Using a mixing bowl combine custard powder and milk.

Stir until smooth.

Add icing sugar and butter.

Mix using the whisk attachment for about 3 to 5 minutes. (high speed)

Spread the filling evenly over the base and return to fridge of freezer while you make the topping or chocolate ganache.

Top Layer – Chocolate Ganache

Using a double boiler method melt 5 oz chocolate and butter. (or oil if you are using)

Spread over the second layer.

Refrigerate one more time for at least one hour.

Then cut the Nanaimo Bars to your favorite size or shape.

And you made it. The best traditional Canadian Nanaimo Bars.

STORAGE

Store in airtight container in the fridge for a week.

Another option: Freeze.

Original Nanaimo Bars is my favorite Christmas baking treat since forever.

While I always make them in December, they are actually great any time of year. From January to December this is the perfect dessert served with cappuccino or coffee.

Line a baking pan 9 x 13 with aluminum foil. Spray with baking spray. Set aside.

Preheat oven to 350 F.

Flour mixture:

In a bowl add flour, cocoa, baking soda, cinnamon, salt.

Add the following ingredients to your mixing bowl:

butter, oil and sugar.

Mix until incorporated.

Then add eggs, vanilla and mix until blended.

Your next step is to add buttermilk and mix in.

Then add flour mixture and mix until the flour is blended.

Meanwhile grate the zucchini and add to batter.

Spread the batter into 9 by 13 prepared pan.

Sprinkle chocolate chips and walnuts on batter.

Bake at 350 F for 30 to 35 minutes or until done.

Cool and cut into desired size.

Important: Grate zucchini while flour mixture is being blended with wet ingredients.

Eggs – Use large, organic eggs

Oil – I used Crisco oil

Butter – should be softened

Chocolate Chips – sweet chocolate chips, Hershey’s

Buttermilk – if you don’t have buttermilk you can make your own. Use 1/2 cup of regular milk and add 1/2 TBSP white vinegar. Stir and let it sit for 10 minutes. Use it for this recipe.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 3/4 cup white sugar
  • 2 eggs (large)
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • Flour Mixture
  • 1 tsp cinnamon
  • 2 1/2 cups flour
  • 1/4 cup cocoa (unsweetened)
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1 1/3 cups chocolate chips
  • 1/3 chopped walnuts
  • 1 3/4 cups grated zucchini

Instructions

    Line a baking pan 9 x 13 with aluminum foil. Spray with baking spray. Set aside.

    Preheat oven to 350 F.

    Flour mixture:

    In a bowl add flour, cocoa, baking soda, cinnamon, salt.

    Add the following ingredients to your mixing bowl:

    butter, oil and sugar.

    Mix until incorporated.

    Then add eggs, vanilla and mix until blended.

    Your next step is to add buttermilk and mix in.

    Then add flour mixture and mix until the flour is blended.

    Meanwhile grate the zucchini and add to batter.

    Spread the batter into 9 by 13 prepared pan.

    Sprinkle chocolate chips and walnuts on batter.

    Bake at 350 F for 30 to 35 minutes or until done.

    Cool and cut into desired size.
