SHOPPING LIST FOR PECAN COOKIES
- flour
- sugar
- butter
- egg
- PECANS
- chocolate chip cookies
- Lindt chocolate (50 gr)
- baking soda
- salt
- vanilla extract
Equipment Needed
-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)
-mixing bowl
-glass or plastic bowl for dry ingredients
-baking sheet (16 by 12 inches)
Easy Pecan Chocolate Cookies
Ingredients
1/2 cup butter, unsalted
1/4 cup white sugar
1/2 brown sugar
1/2 tsp pure vanilla extract
1 egg
1 cup flour (all purpose, unbleached)
1/8 tsp salt
1/2 tsp baking soda
1 cup chopped toasted pecans
3/4 cup chocolate chips (it can be mini chocolate chips)
half Lindt chocolate, chopped
Instructions for making cookies
First step is to add dry ingredients to the bowl which is all purpose flour, salt and baking soda.
Stir until all dry ingredients are combined. Set aside.
Your step 2 is to cream butter with both sugars.
Then add egg and mix until smooth.
Add vanilla extract and mix for a few seconds.
Then add flour mixture to batter mixture and mix until fully incorporated.
Add all chocolates and pecans and mix by hand.
Using ice cream scoop, form cookie dough balls. (4 oz)
Cover with plastic wrap and freeze for 3 hours or until the dough balls are frozen.
Place in freezer plastic bags.
You can freeze for about 3 months.
Bake at 350 F for 13 to 14 minutes.
If you don’t freeze the cookies bake for 12 minutes or until done.

Quick Note
Butter – use unsalted butter. Be sure it is the room temperature.
Chocolate chips– use the best quality you can afford. (Guittard brand, Ghirardelli or your favorite brand)
Chocolate – I used about Lindt chocolate, 70% cocoa. The amount I used is 50 grams. I also used Mint Lindt chocolate, hazelnut Lind chocolate.
Eggs – be sure you are using large, organic eggs. Don’t forget to visit your local farmers market.
Pecans – pecans are not cheap. I find the best price is from Costco.
