This torte is the Canada best recipe. Or to be more specific it is Manitoba regional iconic cake. Packed with pecans, heavy cream and caramel sauce. Can be illegal if borders for cake exist.
Well, my original recipe was for 9 inch cake pan and I was not on diet.
Now, I am but I am not about to give up on tortes, cakes or desserts. So, I was thinking to make a smaller version of my favorite cake, Shmoo Torte.
Smaller version got another letter so it is now, Schmoo torte. Did I confuse you? Of course I did. But it is not my fault.
The name is what is so confusing. It can be Schmoo or Shmoo. Because of that the Universe is taking so much time to make it viral. But with the help of God, Dr. Google and you my sweet baking nation it is the time to share this recipe. With the whole sweet world. From Europe to China to USA this recipe is the recipe that MUST be made.
Because we need something to unify us and this is it. The torte from Canada called Schmoo Torte or Shmoo. Who cares?
The recipe is the same. Delicious Canadian layer cake with whipped cream filling and homemade caramel sauce.

Making Christmas Schmoo Torte Recipe-Canada Best
Ingredients
3 egg whites + 1/4 cup sugar
3 egg yolks + 1/4 cup sugar
1/8 tsp cream of tartar
1/2 tsp vanilla extract
1/4 cup AP flour
1/2 tsp baking powder
1/2 cup chopped pecans
Filling
2 1/2 cups whipping cream
3 TBSP icing sugar
1 Whip It (optional)
Caramel Sauce
1 cup whipping cream
1/4 cup butter
1 cup brown sugar
INSTRUCTIONS FOR SCHMOO TORTE
Preheat oven to 325 F.
Line two of 6 inch cake pans with parchment paper. Set aside.
Separate egg whites from yolks.
In bowl number 1 beat egg whites until almost stiff.
Add 1/8 tsp of cream of tartar and very gradually add 1/4 cup of sugar.
Mix well.
In a bowl number 2 beat 3 egg yolks until light. Add 1/4 cup sugar and vanilla.
Mix all ingredients well. (for about 3 minutes).
Now fold egg whites into yolk mixture.
Sift 1/8 cup flour and 1/2 tsp baking powder.
Use a spatula to mix flour into eggs mixture.
Be sure that no streaks of flour remain.
Now sift another 1/8 cup of flour.
Mix again using a spatula.
Fold in 1/2 cup chopped pecans.
Pour batter into prepared pans.
Bake for about 27 min or until a toothpick inserted in the center comes out clean.
Remove from oven and cool it.
Making Fillingand Assembly
For the filling whip the cream, Whip It (if using) with icing sugar.
Place bottom cake layer and add half of the whip cream filling.
Top with remaining layer.
Use remaining whipped cream to cover the top and side of cake.
Decorate with pecans and caramel sauce.
Chill for at last 6 hours or overnight.
Now, let’s make a sauce.
How to makeCARAMEL SAUCE
1 cup whip cream
1/4 cup butter
1 cup brown sugar.
Bring 1/2 cup of whip cream and 1/4 cup of butter to boil.
Add 1 cup brown sugar and 1/2 cup whip cream.
Return to boil.
Reduce heat and boil for about 5 minutes.
Remove from heat and cool.

MAKING Reform Torta Easy Chocolate Dessert
Ingredients
8 egg whites
8 TBSP sugar
1 TBSP flour, all purpose and unbleached
14 TBSP grounded walnuts
Chocolate Filling
8 egg yolks
8 TBSP sugar
2 oz chocolate, chopped
2/3 cup butter
1 tsp vanilla extract
Decoration:
2 cups heavy cream
1 Whip It (optional)
INSTRUCTIONS FOR Reform CAKE
Line an 11×17 sheet pan with parchment paper. (don’t spray with baking spry)
Preheat oven to 375 F.
In a small bowl add flour and grounded walnuts. Set aside.
Beat egg whites while slowly adding the sugar. (add sugar by TBSP, S-L-O-W-L-Y)
Eggs whites should be beaten until stiff peaks.
Then stop the mixer and carefully fold in the mixture of flour and ground walnuts.
Be sure walnuts and flour are incorporated into egg white mixture.
Pour the batter into prepared baking sheet.
Reform Torta – how to make base cake
Bake at 375 F for about 12 minutes or until done.
Remove from the oven and cool.
When you are ready to assembly, cut the cake into 3 equal peaces. (5 by 11)
Chocolate Filling for Reform Torte
Very quickly mix the egg yolks and sugar. (just for a minute)
Then using a double boiler method cook the yolks and sugar on a medium heat for about 10 minutes or until thickens up. (for some people 15 minutes or shorter)
Stir constantly until yolks thickens up.
Then add the chopped chocolate and stir until melted.
Take of the heat, add vanilla and cool it.
In a mixing bowl mix the butter.
Then add the half of cooled chocolate mixture.
Mix everything and then add the rest of chocolate mixture.
Again mix until the chocolate filling is smooth.
Ok, you just made the best chocolate filling.
IMPORTANT for double boiler method: First let water boil for the bottom pot and then add the top pot with mixture of egg yolks and sugar.
ASSEMBLYOF THE REFORM TORTA
Lay first piece, cover with chocolate filling.
Then cover with second piece of the cake.
Add the rest of the chocolate filling.
Cover with the third piece of the cake. (5 by 11)
At this point I like to transfer the cake into the fridge or freezer.
While the cake is resting in the fridge, mix the heavy cream and Whip it (if you are using it)
Cover the whole cake with heavy cream and decorate with shaved chocolate and ground walnuts.

I can’t say enough about this cake. But let me start with this statement: The PERFECT FRENCH DESSERT! Rich French dessert!
This cake is made with layers of almond sponge, coffee syrup, white coffee buttercream and very easy chocolate ganache.
The recipe is time consuming but quite easy to prepare. Please, please don’t be intimidated by number of ingredients or the steps to make this cake. It is worth it.

MAKING French Opera Cake Recipe
4 eggs, separated and at room temperature
2 egg at room temperature
1/2 cup + 1/4 sugar
1 cup ground almonds
12 TBSP cake and pastry flour, sifted
Ganache Layer
1 1/2 cup heavy cream
12 oz or 350 gr baking chocolate, chopped
Italian Buttercream
4 egg whites, room temperature
1 cup + 4 TBSP sugar
4 TBSP water
2 cups butter, room temperature
2 TBSP cappuccino or coffee extract
1 1/2 tsp vanilla extract
Coffee Syrup
3/4 cup hot coffee
2 TBSP sugar
Chocolate Brush
1/3 cup chocolate chips, melted
Chocolate Glaze for Cake
1/3 cup from the Ganache Layer
1/4 cup chocolate chips
2 TBSP oil
Instructions for the best Opera Cake
Making the cake:
Preheat oven to 400F.
Line an 11×17 sheet pan with parchment paper.
Whip 4 egg yolks, 2 whole egg with 1/2 cup sugar. Use whip attachment.
Using high speed beat until thick and pale.
In another bowl mix 1 cup of almonds and 12 TBSP cake and pastry flour, sifted.
Using bowl number 3, whip 4 egg whites on high speed until foamy, then slowly add 4 TBSP sugar.
Whip until they hold a soft peak when the beaters are lifted.
Now, let’s take next step very carefully.
Fold the whipped whites into the yolks mixture in two additions.
After that add almond/flour mixture. Fold all ingredients together.
IMPORTANT: Take out 1 1/4 cups of the batter and pour into prepared 6 inch pan.
The rest of the batter pour into prepared baking sheet pan and spread the batter evenly.
Bake the cake for about 9 to 10 minutes at 400 F or until done. Cool it.
Then bake your second cake, 6 inch pan for about 7 to 8 minutes or until done.

Cool it. Cover and freeze 6 inch cake for another recipe.
Now, lets make the ganache layer.
HOW TO MAKE CHOCOLATE GANACHE FOR FRENCH OPERA CAKE
Important: this ganache can be made the day before. Store in the fridge, covered until ready to use.
Now, back to the recipe.
Chop the baking chocolate.
Heat the cream until it just begins to simmer.
Pour cream over baking chocolate.
Let this sit for a minute, then start stirring using a spatula.
Stir until the chocolate is fully melted and the ganache is smooth.
Set aside to cool. Then transfer to the fridge for a few hours or overnight.
Italian Buttercream Instructions
Whip 4 egg whites with 4 TBSP sugar on high speed until just past foamy.
Use 1 cup sugar and 4 TBSP of water and bring to a full boil over high heat.
Boil until sugar hits 240 F on a candy thermometer.
With the mixer on medium speed, carefully add the hot sugar to the whipped whites by pouring it
down the side of the bowl, then increase the speed and whip until the whites cooled to room temperature (6 to 8 minutes)
Making Italian Buttercream for the French Opera Cake Recipe
Add the butter, a few pieces at a time until combined.
Add the cappuccino/coffee extract and vanilla extract.
Mix all ingredients well.
Coffee Syrup Instructions
Stir 3/4 cup hot coffee and 2 TBSP sugar until sugar dissolves.
ASSEMBLY CAKE
Assembly of French Opera Cake Recipe
Remove the sheet of cake and cut cake into 3 rectangles size 5×11. If you have extra eat it.
Brush the bottom of one of the layers with the melted chocolate chips.
Put into fridge to firm.
Once it is firm place this layer chocolate-side down on a flat cake board or platter.
Brush it with coffee syrup.
Spread half of the buttercream on top.
Add second cake layer.
Brush with coffee syrup, spread with 2/3 of the cooled ganache.
Place the third cake layer.
Brush with coffee syrup.
Spread with the remaining Italian buttercream over top.
The final step is to spread chocolate glaze.
Re-warm 1/3 chocolate ganache, add 1/4 cup chocolate chips and 2 TBSP oil.
Stir until smooth.
Spread over the top of the cake .
Chill until set.
Decoration for French Opera Cake Recipe
Chocolate cover coffee beans, coffee buttercream, ground almonds, shaved chocolate or use your imagination.
IMPORTANT: Trim away the sides of the cake to reveal clean layers, then slice it into size you want to.

This recipe can be your breakfast, lunch, dinner or it can be a great appetizer, snack, side dish. So, yes this can be your main course. Serve with very healthy cold Greek yogurt or cold kefir. There is something in that combo, hot pie and cold yogurt that makes me happy. Another option is to serve with homemade salad.
This classic dish is made with phyllo sheets layered with spinach and cheese filling. Yes, yes and yes. My grandmother used to make her own phyllo sheets and so will we. (just kidding). We are using the store bought phyllo sheets. (thank you for 21 century)
The spinach cheese filling is super easy to make. Just a few ingredients sleeping together and sharing the magic of easy homemade pie.

SHOPPING LIST
phyllo pastry sheets (thawed)
spinach (fresh)
feta cheese
ricotta cheese
eggs
yogurt (Greek)
sour cream (14%)
eggs
oil (olive or use your favorite)
salt
black pepper (ground)
EQUIPMENT NEEDED
-big bowl (plastic or glass)
-1 medium size bowl
-4 cups measuring cup or bowl (for cheese sauce)
-9 by 13 baking pan (I used glass)
Making Spinach Cheese Easy Pie
Spinach Cheese easy pie-easy recipe
Ingredients
1 package of phyllo pastry sheets
2 cups ricotta cheese
1 1/2 cups feta cheese
1 package of fresh spinach (312 gr)
4 eggs
1 1/2 tsp salt
1 tsp ground black pepper
3 TBSP sour cream (14%)
Pie sauce
1 1/2 cup Greek yogurt (or use plain yogurt)
1/2 cup oil
INSTRUCTIONS
Preheat oven to 400F.
In a large bowl, thoroughly combined ricotta cheese, feta cheese, eggs, salt and pepper. Set aside.
Important: Use salt and pepper to your taste.
Your next step is to chop the spinach into the medium size bowl.
Transfer the chopped spinach into the cheese mixture and stir until all ingredients are combined.
Making pie sauce – add yogurt and oil into the bowl. Just stir using the wooden spoon. Set aside.
Now, you just made spinach cheese filling and pie sauce.
Your next step is assemble of the pie.
Grease 9×13 pan with oil. (use 3 TBSP oil,be generous)
Place 3 sheets of phyllo into prepared 9×13 pan, with their ends crossing.
Lightly brush it with yogurt oil mixture.
Continue with 3 more sheets of phyllo. (be sure each is brush with yogurt oil mixture).
Then spread 1/3 of the total filling. (for me it was about 1 1/2 cups).
Add another 3 sheets of phyllo. (be sure each is brush with yogurt oil mixture)
Your next step is to add spinach cheese filling.
Then repeat one more time: 3 sheets of phyllo + spinach cheese filling.
Now those ends that are hanging on the sides put over the filling.
Top with 2 sheets (folded so that fits the size of 9×13). It doesn’t need to be perfect.
Top with the yogurt oil mixture.
And you are almost done, just spread 3 TBSP of sour cream over the pie. (as evenly as you can)
Bake at 400 F for about 50 minutes or until golden brown.
Remove from the oven and cover with kitchen towel for about 30 minutes.
Slice into desired size.
Optional: You can top with more sour cream, feta cheese or yogurt.

Feta cheese – for this recipe we used the feta cheese from the Superstore. (TRE STELLE FETA CHEESE)

This is the magical pie from the Balkan.
It is very popular dish in Serbia, Bulgaria, Croatia, Bosnia. So, if you can’t afford to travel…well you can bake.
So, bake the dish from East Europe and share. Share until hurts.

MAKING Oatmeal Chocolate best cookies
Ingredients
1 cup flour (all purpose, unbleached)
1 1/3 cups oats
1/2 baking powder
1 tsp baking soda
1/2 cup butter, unsalted
1 egg, large
1/2 brown sugar
1/2 cup white sugar
1 1/2 tsp pure vanilla extract
3/4 cup chocolate chip cookies
Coffee Buttercream
2/3 cup heavy cream (33% or higher)
2 1/4 cups white chocolate chips
1 TBSP instant coffee
2 TBSP butter, unsalted
Cheese Filling
6 oz cream cheese
3 cups icing sugar
1 tsp pure vanilla extract
INSTRUCTIONS
Line a baking sheet with parchment paper. (or aluminum foil or silicone mat)
Preheat oven to 350 F.
Add the whole oats into the food processor and process until turns into smaller pieces.
Then transfer into the bowl and add flour, baking soda and baking powder. Set aside.
In a stand mixer or large bowl add butter, white and brown sugar.
Mix for about 2 minutes.
Then add egg and vanilla and mix until incorporated.
To the mixture above add dry ingredients and mix until all ingredients are just combined. (just a few seconds)
Then fold in the chocolate chip cookies.
Using an ice cream scoop (2 oz), shape each cookie and transfer into baking sheet. (6 cookies per sheet)
Bake cookies at 350 F for 11 minutes or until done.
Remove and cool the cookies.
From this recipe I got 12 large cookies or 6 sandwiches.

Ingredients
2/3 cup heavy cream (33% or higher)
2 1/4 cups white chocolate chips
1 TBSP instant coffee
2 TBSP butter, unsalted
INSTRUCTIONS
Add chocolate chips to the mixing bowl.
In a small sauce pan add heavy cream and 1 TBSP of instant coffee.
Bring until almost boiling stirring the coffee until is dissolved.
Pour the hot coffee heavy cream mixture over the white chocolate chips.
Cover with aluminum foil and let it sit for about 3 minutes.
Then stir until smooth.
Then add the butter and mix all ingredients together.
Allow to cool at room temperature and then move to the fridge for a few hours or overnight.
You can eat this cream by itself or you can add to the cookies, cakes, lava cakes and so on.

Preheat oven to 350 F.

MAKING HEALTHY BREAKFAST PROTEIN BITES-Collagen Power Magic
Ingredients
1 1/2 TBSP olive oil
3 cups spinach, chopped
1/8 cup chopped onion
1/2 cup mozzarella cheese
1/3 cup feta cheese
8 eggs
1 cup chopped red peppers
1/4 cup milk
1/3 cup collagen
3 cloves of garlic
1 tsp salt
1/2 tsp black pepper (or use to your taste)
INSTRUCTIONS
Preheat oven to 350 F.
Coat 12 muffin pan with cooking spray. Set aside.
Using a medium nonstick skillet or sauce pan add olive olive, swirl to coat. Add diced onion, saute until almost tender. (2-3 min)
Then add chopped spinach, saute 1 min, stirring constantly.
Cool for 5 minutes.
Add shredded mozzarella cheese, feta cheese, diced red pepper and minced garlic. Stir to combine.
In a small bowl combine 8 eggs, 1/4 cup milk, 1 teaspoon salt, 1/2 teaspoon ground black pepper.
Stir in cheese mixture.
Your next step is to add collagen and stir all ingredients together until the magic is completed.
Then divide your magical mixture with collagen evenly among 12 muffin cups.
Bake at 350 F for about 25 minutes.

When baked remove from the oven and let it cool.
Important:
At this point you can cool the cake, remove from the baking pan and place into the freezer. You can keep it in the freezer for a few days or until you are ready to make the chocolate fillings.

(There will be 2 filling made from one base filling.)
To the mixing bowl add 3 eggs yolks and sugar. Mix for about 3 minutes.
Then add 2 Dr. Oetker Vanilla pudding, flour, corn starch and 1 cup milk. (room temperature).
Mix until all ingredients are incorporated. (another minute or two)
Meanwhile, add 3 cups of the cold milk into the large pot.
Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.
Return to heat and stir non stop for about 3 minutes or until thickness.
Remove from the heat, transfer to the mixing bowl, cover with the plastic wrap and let it cool.
What ELSE you will have to do to finish this filling:(don’t be scared, it is very easy)

whip 1 1/4 cup of the the heavy cream
beat the butter
mix the cooled filling with beaten butter, then add whipped heavy cream. Mix everything together.
divide the filling into 2 equal parts.

Now, you are ready for sunshine filling.
To the second bowl add the chopped chocolate bananas or white chocolate. Stir until incorporated. And you are almost done.
Your next step is…
Assemble of the chocolate cake
Using the same 8 inch removable pan start building the cake. (or 9 inch if you bake the cake in 9 inch pan)
Place the cake base into the pan of your choice.
Then add chocolate filling + yellow sunshine filling

Then add whipped heavy cream and just quickly mix.
Then divide the whole cream between two bowls.
To the first bowl add melted semi sweet or dark chocolate and mix.You just make the chocolate filling.
Now, you are ready for sunshine filling.
To the second bowl add the chopped chocolate bananas or white chocolate. Stir until incorporated. And you are almost done.
Your next step is... Assemble of the chocolate cake
Using the same 8 inch removable pan start building the cake. (or 9 inch if you bake the cake in 9 inch pan)
Place the cake base into the pan of your choice.
Then add chocolate filling + yellow sunshine filling
Cover and transfer to the fridge or freezer for a few hours.
Whip heavy cream and whip it.
Remove the cake from the freezer and add the 3 layer of heavy cream.
Decorate with shaved chocolate and walnuts.

IMPORTANT:
If you can't find Whip It you can use 1/4 tsp of cream of tartar for stabilized whipped cream. (it will hold longer in the fridge)

Chocolate bananas – you can buy online or you can check mini markets or store from Europe in your area. If you can’t find, please use chopped white chocolate. It can be Lindt or Milka White chocolate.
Vanilla pudding – YOU CAN’T USE INSTANT. It has to be Dr. Oetker.
