Egg salad sandwich is the perfect recipe for the breakfast, lunch or dinner. Also, it is an ideal office lunch solution. Sometimes I make healthy egg salad with lettuce or if I am not on diet I use my favorite bread or store bough bread. So, it is your choice. With homemade bread or with lettuce!

Ingredients

5 eggs, hard boiled

1/3 cup mayo

2 tsp mustard

1/2 tsp salt

1/4 tsp black pepper

1/8 tsp paprika

2 cloves of garlic (minced)

1/2 cup of cooked peas

1 tomato

INSTRUCTION FOR THE BEST EGG SALAD RECIPE

Hard boiled 5 eggs. If you don’t know how check below or check this link

Bring eggs to rolling boil over high heat.

When the water has reached a boil, set the timer for 12 minutes.

Important: Boil the eggs for 12 at medium heat.

If you really like hard, hard boiled eggs set your timer for 15 minutes.

After 12 minutes or your ideal time, remove the saucepan from the heat and let the eggs rest for 10 minutes.

Then drain the hot water and run cold water over eggs until cooled.

Peel and chop the eggs.

Then add to a medium size bowl.

Add mayo, mustard, salt, pepper and mix well.

This is the base simple homemade version.

I liked to add cooked cooled peas and garlic.

Extra special chocolate cookies. Tender chocolaty cookies filled with molten lava and when I say molten lava I really mean the best secret from the Universe. What it can be? Of course, you know it. The Nutella. So be prepared to discover the full meaning of “love at first bite”. I know I did.

The recipe for Nutella lava cookies is very simple. Also, the ingredients are everyday pantry ingredient.

  • brown sugar

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl

-small bowl (for dry ingredients)

-baking sheet (16 by 12 inches)

MAKING Molten Lava Nutella Cookies

Ingredients

9 TBSP Nutella

1/2 cup butter

1/4 cup + 2 TBSP white sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla extract

1/2 cup cocoa

1 cup flour, all purpose

1/2 tsp salt

1 TBSP cinnamon

1/2 tsp baking powder

INSTRUCTIONS FOR MAKING NUTELLA COOKIES

Freeze Nutella ahead of time:

Drop 1 TBSP of Nutella onto parchment paper. Freeze until firm.

It can be 90 minutes or overnight.

MAKING COOKIES

Preheat oven to 350 F.

Line baking sheet with parchment paper or silicone liner. Set aside.

In a small bowl add flour, cocoa, baking soda, salt and cinnamon.

To the mixing bowl add butter and sugars. (image 1)

Mix until incorporated for about 2 minutes.

Then add egg, vanilla extract and mix in. (image 2)

Your next step is to add all dry ingredients. (cocoa, flour, baking powder, cinnamon and salt)(picture 3)

Mix until all ingredients are incorporated. (image 4)

BTW, you are almost done.

Place a piece of cookie dough (2oz) in the palm of your hand and flatten it out like a thick disc .

Place a frozen Nutella in the middle of the dough and wrap the dough around it, rolling it into a ball to seal it.

Then place the cookie on the prepared baking sheet.

Repeat with remaining dough.

Bake at 350 F for 12 minutes.

If you are baking frozen cookies bake for 14 minutes at 350 F.

Remove from oven and sprinkle with ground organic cinnamon.

Freezing the cookies:

The unbaked cookies can be frozen for 6 weeks.

Quick Note for Lava Nutella Cookies

Flour – for this recipe I used all purpose, unbleached flour.

IMPORTANT: When measuring the flour, fluff up the flour in the bag. Then spoon the flour into the cup. Then scrape a knife across the top of the measuring cup to level the flour.

Butter – use unsalted butter.

Eggs – large, organic. The best place to buy organic eggs is the local farmers market.

Vanilla extract – if you can, please use pure vanilla extract. I used homemade version. For the recipe, please check this LINK

Nutella – you can use store bought or homemade version.

Cinnamon – I used organic, ground cinnamon.

For a months and months I was on a secret mission. Testing, testing and testing.

Trying, trying and trying…and I almost was certain that this post will never happen until I discover the one and only…

KEURIG MAGIC FROTHER!

And then the stars started to sing, 5 of them …. homemade cappuccino and latte. And as I was looking at the sky I went to Superstore and bought the little magical machine that will change my coffee life in the way I can’t explain.

Yes, I know the addict is speaking…and sharing with you the best solution for homemade cappuccino or latte. And we finally have it.

DESCRIPTION OF HOMEMADE CAPPUCCINO

What is a good cappuccino?

Well, let me start with this. It has three layers.

One part of coffee + one part of the steamed milk + one part of magical white foam!

Yes, three layers of magic that will go into your body, touch your soul in the way that human can’t and make you so happy. And really what is the happiness if not cup of cappuccino, tea or coffee? Yes, I know! Or should I say I know that I know nothing. Not really, it was opinion of Socrates and he knew nothing about the cappuccino.

Speaking of history, when the cappuccino drink was introduced in Italy, it was named after Cupuchin friars. Why? Because of the color. Yes the color of the Capuchin robe is similar to the color of the espresso mixed with frothed milk.

So, to make cappuccino at home you need to follow 3 steps:

  • Prepare the espresso or coffee
  • Create the frothy milk
  • Find your magical cup and pour into it.

HOW EASY WAS THAT? SUPER EASY!

EQUIPMENT REQUIRED

-KEURIG – Milk frother

ACTION TIME

How to make homemade CAPPUCCINO USING KEURIG FROTHER

Ingredients

milk (3.25%)

INSTRUCTIONS for Homemade Cappuccino

Brew the coffee. Use your favorite method. Also, you can make this homemade coffee or this one

Pour the coffee into your favorite cappuccino cup.

I used 1/4 cup of coffee.

FROTH THE MILK using KEURIG

Add 1/2 cup milk or enough milk to fill to the minimum line.

Place lid and place frother on frother base.

Press the top button. (HOT FROTHING)

You will hear the sound of magic.

Working and making the best milk froth.

After about 2 minutes the button flashes then turns off which means the magic happen.

Remove the lid and enjoy for the moment.

The white foam is in front of you but don’t dream too much.

Your favorite cup with the coffee at the bottom is waiting.

Pour the white magic on top of your favorite coffee.

First you will pour the hot steamed milk and then the most amazing magical foam will follow.

You will need the small spoon to transfer all of that white magic on top of steamed milk.

Again, enjoy for a second or longer.

Garnish your favorite cappuccino with ground cinnamon, chocolate or nutmeg. (you can use sprinkles if you like…or anything your little heart is desired or asking for. Yes, please be generous to yourself.)

Quick Note for Keurig Frothing Success

MILK – use 3.25% . Yes, this was my magical secret success.

If you use 2% milk – did not work for me. Yes, it did not. To be honest, yes I got the foam but not like when I use 3.25% milk.

Almond Milk – I did not try. Let me know if it works for you.

So, let me share the secret for success using Keurig frother!

A latte has way more steamed milk than cappuccino. Also, the top foam is way lighter.

And visually a cappuccino is distinctly layered (you can see dark coffee bottom, then steamed milk and top white foam perfection. For the latte the espresso and steamed milk are blended together.

Also, because the latte is made with more milk … it has more calories.

How to make the best homemade cappuccino vs latte using Keurig frother.

Yes, you don't need Starbucks cappuccino recipe.

You need 5 star cookies recipe and frother.

Ingredients

  • coffee
  • milk (3.25%)

Instructions

    Brew the coffee. Use your favorite method. Also, you can
    make this homemade coffee

    Pour the coffee into your favorite cappuccino cup.

    I used 1/4 cup of coffee.

    FROTH THE MILK using KEURIG

    Add 1/2 cup milk or enough milk to fill to the minimum line.

    Place lid and place frother on frother base.

    Press the top button. (HOT FROTHING)

    You will hear the sound of magic.

    Working and making the best milk froth.

    After about 2 minutes the button flashes then turns off which means the magic happen.

    Remove the lid and enjoy for the moment.

    The white foam is in front of you but don't dream to much.

    Your favorite cup is waiting.

How can I describe the most perfect cookies on this somewhat “crazy planet”?

Let me start with:

Let me stop there… I can keep going but what is the point. We need to make cookies as soon as possible and trying to describe the perfection is just waste of my time and yours. And since time is the money we need to start with my favorite life activity called shopping. And for successful shopping we need …

SHOPPING LIST

  • butter
  • light brown sugar
  • dark brown sugar
  • white sugar
  • eggs
  • flour (all purpose)
  • cake flour
  • mini chocolate chips
  • regular chocolate chips
  • Nutella
  • baking soda (no aluminum)
  • salt

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl

-saucepan (to melt butter)

-small bowl (for dry ingredients)

-baking sheet (16 by 12 inches)

Chocolate Chip Cookie Recipe

Ingredients

1 cup butter, unsalted

3/4 cup light brown sugar

1/4 cup white sugar

1 cup dark brown sugar

1/2 tsp pure vanilla extract

1 egg and 1 egg yolk

2 cups sifted flour (sift then measure)

1/2 cup sifted cake flour

1 tsp salt

1/2 tsp baking soda

1 cup mini chocolate chip cookies

2/3 cup regular chocolate chip cookies

INSTRUCTION FOR THE BEST COOKIES

Add flour, baking soda and salt to the plastic bowl. Set aside.

Place butter in a saucepan and melt over low heat until almost melted. (about half is melted).

Remove from heat and cool for 10 minutes.

Add cooled butter to the mixing bowl.

To the butter add all 3 kind of sugars and whisk to combine.

Then add egg, egg yolk and mix until incorporated.

Your next step is to add vanilla and mix in.

BTW, you are almost done.

Just add dry ingredients or the flour mixture.

Mix until all ingredients are incorporated.

Fold in mini and regular chocolate chips.

Wrap the mixing bowl with plastic wrap and transfer to the fridge for about 30 minutes.

Preheat oven to 325 F.

Line baking sheet with parchment paper.

Make dough into balls (2 oz each) and place into prepared baking sheet.

Bake at 325 for 12 minutes.

If you are using the frozen balls bake for 14 minutes.

Cool the cookies.

MAKING NUTELLA CHOCOLATE CHIP COOKIES SANDWICHES

Spread 1 1/2 TBSP of the Nutella on the flat side of half of the cookies and put the remaining cookies on top.

OPTIONAL: Cover the top of the cookie with caramel sauce. (and to add more magic, sprinkle the salt over the caramel)

Food gift! This can be gift for your family, friends or just excellent cake to bring to the office parties.

And if you are guessing it is the most important cake in my life … you are 100% right. It is the gift that keeps on giving…and giving…Yes, I am talking about one and only…

BEST FERRERO ROCHER CAKE!

DESCRIPTION OF THE BEST FERRERO ROCHER CAKE

You don’t need it. This cake is well-known cake for 5 star cookies blog.

It was made many, many times.

From the first version Ferrero Rocher Torte – I believe in angels then Mini Ferrero Rocher Torte to Mini Chocolate Ferrero Cake-The Best Ever this cake is the STAR. 5 STAR CHOCOLATE NUTELLA CAKE!

Yes, this cake is one of the most popular desserts. Full of hazelnuts, Nutella, cheese and chocolate! How can you not make this recipe?

Last week I made this recipe for my best friends. She wanted chocolate dessert for her office party.

So, I made it. The cake was an absolute hit.

And because of that I decide to share this recipe again.

Also, the cake size is 9 by 5. (remember working 9 to 5 and you need Ferrero cake 9 by 5)

SHOPPING LIST

  • eggs (organic)
  • sugar
  • hazelnuts
  • cocoa
  • Nutella
  • Philadelphia cheese
  • chocolate
  • corn syrup
  • heavy cream
  • flour
  • wafers
  • baking powder

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl (for the cake and the filling)

-small sauce pan

-baking sheet (16 by 12 inches)

ACTION TIME

THE BEST FERRERO ROCHER CAKE

Ingredients

5 large eggs

6 TBSP sugar

2 1/2 cups grounded Hazelnuts

3 TBSP flour

2 TBSP cocoa powder

2 tsp baking powder (no aluminum)

Nutella FILLING

12 oz Philadelphia cheese

3 cups Nutella

1 1/4 cup heavy cream

1 cup hazelnuts

and 1 1/2 cup crushed Wafers

Chocolate Glaze

6 oz semisweet chocolate, chopped

2 TBSP corn syrup

1 cup heavy cream

Decoration: shaved chocolate, ground hazelnut, Ferrero Rocher candies.

INSTRUCTIONS

Preheat oven to 350 F.

Line the baking sheet (16 by 12 inch) with aluminum foil.

Spray with baking spray and set aside.

Bowl 1: Add dry ingredients

Sift flour, cocoa and baking powder.

To that mixture add the ground hazelnuts and stir all ingredients together.

What happen? You can’t see the flour. Like I said the boss is Hazelnuts.

Now, let’s mix eggs and sugar.

So, add to the mixing bowl eggs and sugar.

Mix on high speed for about 9 minutes or until tripled in volume.

Our next step is to combine dry and wet ingredients.

Using the spatula fold dry ingredients into the eggs, in 3 additions. (slowly)

SUPER IMPORTANT: Please, pay attention to this step.

Be very gently when mixing dry ingredients into the eggs mixture.

I will repeat again. Be sure the flour hazelnuts mixture is mixed or incorporated into the eggs mixture.

Pour batter into prepared pan and bake at 350 F for about 15 to 17 minutes.

Use a toothpick to check if the cake is done.

Remove from the oven.

Cool it for about 2 to 3 hours.

While cake is resting, make the Nutella filling.

How to Make THE BEST Nutella Filling

Add cheese to the mixing bowl and mix until smooth.

Then transfer to the plate.

Using the same bowl mix the heavy cream for 2 minutes.

Then add cheese and mix until two ingredients are incorporated.

After that add Nutella and mix quickly. (for a minute or two)

Then add crushed Wafers and hazelnuts.

Stir all ingredients using your favorite spatula.

And you just made the best Nutella filling.

MAKING CHOCOLATE GLAZE FOR Best Ferrero Rocher Cake

Heat the cream until almost boiling.

Add chopped chocolate and corn syrup to the bowl.

Pour the heated cream over the chocolate and corn syrup mixture.

Let sit for 5 minutes.

Gently mix until smooth.

And yes, you just made the best chocolate glaze.

ASSEMBLY for Best Ferrero Rocher Cake

You can refrigerate the cake for a few hours. It will be easier to handle.

You need to cut 3 layers of the cake. The size is 9 by 5. (The leftovers will be used for recipe 2)

Place the first layer of the cake to a serving plate.

Add Nutella filling, second layer cake.

Then add Nutella filling and the third layer of the ferrero rocher cake.

Return to fridge until filling is set.

Note: At this point, I find it is important to chill the cake before continuing to help the Nutella filling firm up.

Pour the chocolate glaze over the best ferrero cake.

Decorate with shaved chocolate, Ferrero chocolate candies, ground hazelnuts, icing sugar.

Use your favorite small trifle bowl or whatever you have.

Layer the bottom of the dish with ferrero cake pieces (it can be cubes or any shape as long as you cover the bottom)

Then add the best Nutella filling.

Top Nutella filling with raspberry jam and the ferrero cake pieces. (as much as you want to)

Finally top everything with Nutella filling.

Decorate with ground hazelnuts, Ferrero chocolate candies.

Transfer to fridge until ready to serve.

This would be the perfect dessert for party, Christmas gift or just a treat for yourself.

In a medium saucepan, on medium-high heat bring water,salt and butter to boil.

Quickly stir in the flour with a wooden spoon.

Continue to stir until mixture until mixture pull away from walls of the pan. (3 to 5 min)

Remove from heat and transfer into a bowl to cool slightly, about 5 min.

Add eggs, one at the time, stirring vigorously until well incorporate into batter.

Important: For this step you can use the mixer. (if you want to)

Transfer the pate a choux to a large pastry bag. Pipe 2 inch rounds each into prepared pan. (or the shape you like).

Bake puffs for 30 min, until they rise, and golden brown in color.

Let cool on sheets on wire racks.

Puffs can be stored at room temperature for up to 1 day.

Making the Nutella Filling

Mix heavy cream and Whip It (if using) until firm.

Then add Nutella and mix until incorporated. (just a few seconds).

Then add the vanilla extract and stir with the spatula or wooden spoon.

Now, if you have your cooled puffs and Nutella filling you are ready for the next step.

Chocolate Icing

Melt chocolate and oil using the double boiler method. Set aside.

To Assemble

Gently cut the tops off the cream puffs.

Spoon or pipe the Nutella filling into empty shells.

Cover with the top.

And you are almost done.

Cover the top of cream puffs with melted chocolate or dust with icing sugar.

Refrigerate until ready to eat.

  • 3/4 cup water

EQUIPMENT NEEDED

-baking pan (8 by 8 or 9 by 9)

ACTION TIME

MAKING Oven Pesto Chicken (Fast Dinner)

Ingredients

2 chicken breast (about 1 lbs or 400 gr)

6 TBSP basil pesto (or as much as you want to)

9 small tomatoes

3/4 cup mozzarella cheese, shredded

1/3 cup feta cheese

INSTRUCTIONS

Preheat oven to 400 F.

Spray baking dish with baking spray. (you can also use olive oil)

Wash chicken and dry with a paper towel.

Season chicken breast with salt and black pepper.

Then place chicken breast in a baking dish. 

Top each chicken with basil pesto. (I used 3 TBSP per chicken breast).

Important: Be sure the basil pesto is spread evenly. (use the spoon)

Your next step is to layer shredded mozzarella cheese and cherry tomatoes.

Bake for about 25 minutes or until internal temperature reaches 165 F.

Remove from the oven and cover with fresh feta cheese.

Let it rest for about 10 minutes and serve immediately.

OPTIONS: You can double this recipe and bake it using 9 by 13 baking dish.

Quick Note for Fast Dinner Recipe

Chicken breast – use organic chicken if you can. Slice chicken breast horizontally to create thinner cutlets.

Tomatoes – I used cherry tomatoes but you can use the regular tomatoes

Description of Christmas Schmoo Torte Recipe

This torte is the Canada best recipe. Or to be more specific it is Manitoba regional iconic cake. Packed with pecans, heavy cream and caramel sauce. Can be illegal if borders for cake exist.

I made this torte many, many times.One of them went into this post Shmoo Torte – a gooey torte with a mysterious past (Winnipeg). So, now you are wondering why I am doing it again?

Well, my original recipe was for 9 inch cake pan and I was not on diet.

Now, I am but I am not about to give up on tortes, cakes or desserts. So, I was thinking to make a smaller version of my favorite cake, Shmoo Torte.

Smaller version got another letter so it is now, Schmoo torte. Did I confuse you? Of course I did. But it is not my fault.

The name is what is so confusing. It can be Schmoo or Shmoo. Because of that the Universe is taking so much time to make it viral. But with the help of God, Dr. Google and you my sweet baking nation it is the time to share this recipe. With the whole sweet world. From Europe to China to USA this recipe is the recipe that MUST be made.

Because we need something to unify us and this is it. The torte from Canada called Schmoo Torte or Shmoo. Who cares?

The recipe is the same. Delicious Canadian layer cake with whipped cream filling and homemade caramel sauce.

SHOPPING LIST

  • eggs
  • sugar
  • flour (all purpose, unbleached)
  • pecan
  • heavy cream
  • cream of tartar
  • baking powder
  • pure vanilla extract
  • Whip It (optional)
  • butter (unsalted)
  • brown sugar

EQUIPMENT NEEDED

-your favorite mixer (I like to use KitchenAid)

-mixing bowl

-6 inch baking pan (2 of them)

ACTION TIME

Making Christmas Schmoo Torte Recipe-Canada Best

Ingredients

3 egg whites + 1/4 cup sugar

3 egg yolks + 1/4 cup sugar

1/8 tsp cream of tartar

1/2 tsp vanilla extract

1/4 cup AP flour

1/2 tsp baking powder

1/2 cup chopped pecans

Filling

2 1/2 cups whipping cream

3 TBSP icing sugar

1 Whip It (optional)

Caramel Sauce

1 cup whipping cream

1/4 cup butter

1 cup brown sugar

INSTRUCTIONS FOR SCHMOO TORTE

Preheat oven to 325 F.

Line two of 6 inch cake pans with parchment paper. Set aside.

Separate egg whites from yolks.

In bowl number 1 beat egg whites until almost stiff.

Add 1/8 tsp of cream of tartar and very gradually add 1/4 cup of sugar.

Mix well.

In a bowl number 2 beat 3 egg yolks until light. Add 1/4 cup sugar and vanilla.

Mix all ingredients well. (for about 3 minutes).

Now fold egg whites into yolk mixture.

Sift 1/8 cup flour and 1/2 tsp baking powder.

Use a spatula to mix flour into eggs mixture.

Be sure that no streaks of flour remain.

Now sift another 1/8 cup of flour.

Mix again using a spatula.

Fold in 1/2 cup chopped pecans.

Pour batter into prepared pans.

Bake for about 27 min or until a toothpick inserted in the center comes out clean.

Remove from oven and cool it.

Making Filling and Assembly

For the filling whip the cream, Whip It (if using) with icing sugar.

Place bottom cake layer and add half of the whip cream filling.

Top with remaining layer.

Use remaining whipped cream to cover the top and side of cake.

Decorate with pecans and caramel sauce.

Chill for at last 6 hours or overnight.

Now, let’s make a sauce.

How to make CARAMEL SAUCE

1 cup whip cream

1/4 cup butter

1 cup brown sugar.

Bring 1/2 cup of whip cream and 1/4 cup of butter to boil.

Add 1 cup brown sugar and 1/2 cup whip cream.

Return to boil.

Reduce heat and boil for about 5 minutes.

Remove from heat and cool.

Reform Torta Easy Chocolate Recipe for you

MAKING Reform Torta Easy Chocolate Dessert

Ingredients

8 egg whites

8 TBSP sugar

1 TBSP flour, all purpose and unbleached

14 TBSP grounded walnuts

Chocolate Filling

8 egg yolks

8 TBSP sugar

2 oz chocolate, chopped

2/3 cup butter

1 tsp vanilla extract

Decoration:

2 cups heavy cream

1 Whip It (optional)

INSTRUCTIONS FOR Reform CAKE

Line an 11×17 sheet pan with parchment paper. (don’t spray with baking spry)

Preheat oven to 375 F.

In a small bowl add flour and grounded walnuts. Set aside.

Beat egg whites while slowly adding the sugar. (add sugar by TBSP, S-L-O-W-L-Y)

Eggs whites should be beaten until stiff peaks.

Then stop the mixer and carefully fold in the mixture of flour and ground walnuts.

Be sure walnuts and flour are incorporated into egg white mixture.

Pour the batter into prepared baking sheet.

Bake at 375 F for about 12 minutes or until done.

Remove from the oven and cool.

When you are ready to assembly, cut the cake into 3 equal peaces. (5 by 11)

Chocolate Filling for Reform Torte

Very quickly mix the egg yolks and sugar. (just for a minute)

Then using a double boiler method cook the yolks and sugar on a medium heat for about 10 minutes or until thickens up. (for some people 15 minutes or shorter)

Stir constantly until yolks thickens up.

Then add the chopped chocolate and stir until melted.

Take of the heat, add vanilla and cool it.

In a mixing bowl mix the butter.

Then add the half of cooled chocolate mixture.

Mix everything and then add the rest of chocolate mixture.

Again mix until the chocolate filling is smooth.

Ok, you just made the best chocolate filling.

IMPORTANT for double boiler method: First let water boil for the bottom pot and then add the top pot with mixture of egg yolks and sugar.

ASSEMBLY OF THE REFORM TORTA

Lay first piece, cover with chocolate filling.

Then cover with second piece of the cake.

Add the rest of the chocolate filling.

Cover with the third piece of the cake. (5 by 11)

At this point I like to transfer the cake into the fridge or freezer.

While the cake is resting in the fridge, mix the heavy cream and Whip it (if you are using it)

Cover the whole cake with heavy cream and decorate with shaved chocolate and ground walnuts.

Quick Note

Butter – I used organic, unsalted butter. For this recipe the butter must be at room temperature.

Chocolate – I used semi sweet chocolate but you can use dark or unsweetened.

Eggs – use large, organic eggs (say hello to your local farmers market)

Heavy Cream – I used 35%

Walnuts – I bought the walnuts from the Costco. (in my opinion the best price. $15 for 1 kg)

Reform Torta Easy Chocolate Dessert

Reform Torta Easy Chocolate Dessert

Yield: SERVING 6 PEOPLE

Total Time: 1 hour 2 minutes

This recipe is multi-layered chocolate walnut dessert from East Europe, Serbia.

It is very old traditional recipe made with simple ingredients.

A+ RECIPE FOR CHOCOLATE LOVERS

Ingredients

CAKE

  • 8 egg whites
  • 8 TBSP sugar
  • 1 TBSP flour, all purpose and unbleached
  • 14 TBSP grounded walnuts

CHOCOLATE FILLING

  • 8 egg yolks
  • 8 TBSP sugar
  • 2 oz chocolate, chopped
  • 2/3 cup butter
  • 1 tsp vanilla extract

DECORATION

  • 2 cups heavy cream
  • 1 Whip It (optional)

Instructions

    CAKE

    Line an 11×17 sheet pan with parchment paper. (don't spray with baking spry)

    Preheat oven to 375 F.

    In a small bowl add flour and grounded walnuts. Set aside.

    Beat egg whites while slowly adding the sugar. (add sugar by TBSP, S-L-O-W-L-Y)

    Eggs whites should be beaten until stiff peaks.

    Then stop the mixer and carefully fold in the mixture of flour and ground walnuts.

    Be sure walnuts and flour are incorporated into egg white mixture.

    Pour the batter into prepared baking sheet.

    Bake at 375 F for about 12 minutes or until done.

    Remove from the oven and cool.

    When you are ready to assembly, cut the cake into 3 equal peaces. (5 by 11)

    Chocolate Filling for Reform Torte

    Very quickly mix the egg yolks and sugar. (just for a minute)

    Then using a double boiler method cook the yolks and sugar on a medium heat for about 10 minutes or until thickens up. (for some people 15 minutes or shorter)

    Stir constantly until yolks thickens up.

    Then add the chopped chocolate and stir until melted.

    Take of the heat, add vanilla and cool it.

    In a mixing bowl mix the butter.

    Then add the half of cooled chocolate mixture.

    Mix everything and then add the rest of chocolate mixture.

    Again mix until the chocolate filling is smooth.

    Ok, you just made the best chocolate filling.

    IMPORTANT for double boiler method: First let water boil for the bottom pot and then add the top pot with mixture of egg yolks and sugar.


    ASSEMBLY OF THE REFORM TORTA

    Lay first piece, cover with chocolate filling.

    Then cover with second piece of the cake.

    Add the rest of the chocolate filling.

    Cover with the third piece of the cake. (5 by 11)

    At this point I like to transfer the cake into the fridge or freezer.

    While the cake is resting in the fridge, mix the heavy cream and Whip it (if you are using it)

    Cover the whole cake with heavy cream and decorate with shaved chocolate and ground walnuts.
