And since tennis is considered a white sport I wanted to make something special, easy and white.
It is called White Chocolate and Wafer Hazelnut Filling.
You need only 2 ingredients:
-white chocolate chips and wafer with hazelnut filling
In the food processor, whiz wafer cookies until reduced to crumbs. (Just think how Novak Djokovic whizzed Murray). Set aside.
Melt the white chocolate chips using double boiler.
Pour melted chocolate onto prepared baking sheet and spread out into a large rectangle or any shape you want to.
Add 1/4 cup of wafer crumbs and press into chocolate. Keep pressing until wafer are inside of the chocolate.
Be sure wafer crumbs are inside of white chocolate.
Set in the refrigerator to chill for 30 minutes or until no longer wet-looking. It will look like the picture below.
Cut into pieces and share with all people you love..If you have nobody to love (that’s sad), send your love towards tennis no 1 player, Novak Djokovic.

Instructions
Line a small baking sheet with parchment paper or a silicone baking mat. Set aside.

Yes, you can. You need to find a blue glass bottle and fill it up with water, close with a cork or a plastic cap. (DO NOT USE A METAL CAP)
Then, put the bottle in direct sunlight from one hour to 12 hrs. (no more then 12 hrs)
Remove for use.

Yes, I am talking about making homemade butter. Do you even remember what kind of butter it is?
Pure, unadulterated, rich and creamy and fatty, and above all, your own creation.
If you want your butter to be “the best one” you need and you must pay attention to the quality of the milk.
So, my tip number one: Buy the high quality milk (the best one you can find and afford).
I like to say I want milk from happy cows-cows that have been happily munching grass. It will produce richer, sweeter tasting milk and cream—which translates into better butter.
For this recipe you need only one ingredient:
Whipping Cream (2 cups). It has to be room-temperature cream.
Put 2 cups of cream into mixer and whip it on high speed for about 10 min.
It will initially whip up into whipped cream but keep going.
The whipped cream will get thicker and thicker, like whipped butter. Keep whipping. You will see sudden change
when the milk fat and solids separate out dramatically, leaving thin liquid behind.
What you see is the butter fat separating from the buttermilk.
Be sure to use your kitchen towel to cover up any open areas to avoid splashing.
Very important: Please drain away all of that buttermilk and use it for your favorite recipe.
To finish the butter, pour 2 cups of your ice water over the butter, into the mixer, and rinse the remaining buttermilk out of the butter by running mixer on medium speed.
Once again, drain the excess water at the bottom of the mixing bowl
Repeat the cold water rinse (3 or 4 times), until water is clear after mixing. Drain any remaining water into sink.
The more thoroughly you rinse, the longer your butter will last.
Using your spatula, loosen the butter from the whisk and press butter fat onto the side of the mixing bowl to remove any excess water.
Then pack it into an airtight container or into some plastic wrap. It can store it in the fridge for up to 2-4 weeks.

DO NOT OPEN OVEN DOOR TO EARLY IN THE BAKING, when the structure of the puffs wasn’t yet solidified.
DO NOT OVERLOAD YOUR BAKING SHEET.
BE SURE TO HAVE AT LEAST 2 INCHES OF SPACE BETWEEN THE PUFFS WHEN YOU PIPE THEM.
BAKE CREAM PUFFS USING TEMPERATURE OF 400F. THE HIGH HEAT PROVIDES A RAPID RISE WITH A HOLLOW CENTER.
TURN THE OVEN OFF AND LET THEM COOL WITH THE DOOR AJAR FOR 10 MIN.

1.What is choux paste?
Choux paste is one of the foundational doughs of pastry making. It is used for eclairs, classic French cakes, profiteroles.
The preparation of the dough is unique and starts on top of the stove. Flour, butter and water are heated until the mixture resembles mashed potatoes.
Off the heat, eggs are stirred in until the mixture is enough soft to pipe through a pastry bag.
2. My cream puffs have points when I finish piping? What should I do?
Dampen your index finger into cold water and just smooth it. This step is important because if you don’t smooth them, little peaks will burn black before the puffs are baked through.
Also, you need to improve your piping technique. Hold the pastry bag about 1 inch from the parchment paper and squeeze out a round of pastry. When it is size you want , stop squeezing the bag before you lift it away.
3. How do I store cream puffs?
If you will be using them in 24 hrs you can store unfilled puffs in a resealable plastic bag at room temperature.
You can freeze them for up to 2 weeks.

Use a large saucepan to cook the batter. You will need plenty of room for vigorous stirring.Â

Simple ingredients and incredible dessert.
Ingredients
1/2 cup water
1/4 cup butter (unsalted)
1/4 tsp salt
1/2 cup flour
2 eggs (large size)
Filling
1 cup heavy cream
1/2 tsp vanilla extract
Whip It (optional)
Instructions
Preheat oven to 375 F.
Line baking sheet with parchment paper or silicone baking mat.
In a medium saucepan, on medium-high heat bring water,salt and butter to boil.
Quickly stir in the flour with a wooden spoon.
Continue to stir until mixture until mixture pull away from walls of the pan. (3 to 5 min)
Remove from heat and transfer into a bowl to cool slightly, about 5 min.
Add eggs, one at the time, stirring vigorously until well incorporate into batter.
Important: For this step you can use the mixer. (if you want to)
When you follow steps above you will see the following mixture:
Transfer dough into a pastry bag
Pipe puffs into prepared baking sheet. The size I used is 2 inch rounds (I was able to make 11)
Bake for 30 min at 375 F. Let puffs cool.
Making Filling
Add the heavy cream and Whip It into the mixing bowl.
Mix until done. (3 to 5 minutes).
Add pure vanilla extract and stir it.
To Assemble
Gently cut the tops off the cream puffs.
Spoon or pipe the heavy cream filling into empty shells.
Cover with the top.
And you are almost done.
Cover the top of cream puffs with icing sugar.
Refrigerate until ready to eat.

Coffee Chocolate Walnut Cookies
Ingredients
9 TBSP unsalted butter (127 gr)
1/4 cup sugar
1/2 cup brown sugar
2 TBSP finely ground coffee beans
1 tsp vanilla
1 large egg
1 cup AP flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts
1/2 cup chocolate covered raisins
1/4 cup yogurt covered raising
5 oz or 140 gr dark good quality chocolate (chopped into small pcs)
1/2 cup chocolate chips
Instructions
In separate bowl whisk together the flour, baking soda and salt .
In the bowl of electric mixer beat the butter for 2 min.
Gradually add the sugars and beat at high speed for 2 min.
Add the egg, vanilla, ground coffee and mix until blended.
Reduce the speed and add the flour mixture.
Mix until completely blended.
Add the walnuts, chocolate, chocolate chips, chocolate and yogurt covered raisins and mix it using wooden spoon.
Refrigerate the dough overnight.
Preheat the oven to 375 F.
Scoop the dough (capacity 1 3/4oz) onto the prepared baking sheet.
Bake for 11 min.
Store the cookies in an airtight container at room temperature for up to 1 week.
