Hello my dear readers!
Today we are going to make the perfect vanilla cupcake. This recipe is the only one you will ever need if you want to make cupcakes.
The recipe is 100% success. So, I will repeat again 100% success.
Before we start let’s see our finished products.
Now, if your body is full of positive energy and you have glass of wine near you we can start our baking show.

Now, let’s do it!
Ingredients:
1 and 1/4 cup cake flour
1tsp salt
2 tsp baking powder
1/2 baking soda
3/4 cup sugar
2 large eggs
1 1/2 tsp vanilla extract
1/2 cup oil (Crisco – soybean oil)
1/2 cup buttermilk
Instructions:
Sift cake flour, salt, baking powder and baking soda. Set flour mix aside.
Using an electric mixer beat 2 eggs for about 1 min. (medium speed- KitchenAid mixer)
Add 3/4 cup sugar and mix for another minute.
Add vanilla extract, oil and mix for another 2 min.
Next step is to add about half of flour mixture. Mix until incorporated.
Add 1/4 cup buttermilk. Mix.
Add remaining flour. Mix.
Add 1/4 cup buttermilk. Mix.
Be sure that all ingredients are incorporated. The butter will be thin,
Pour batter into a lined muffing pan. (about 3/4 full)
Bake for 15 min at 350 F.
Insert a toothpick in the center. If it comes out clean, cupcakes are done.
Cool the cupcakes.
You will get 12 cupcakes.
Now , we need frosting.
Frosting:
2 and 1/2 cups sifted icing sugar
1/2 cup + 1/8 cup butter
3 TBSP heavy cream
1 tsp vanilla extract
1/8 tsp salt
gel food coloring
Beat butter with a whisk attachment for about 3 min.
Add 1 cup sugar, 3 TBSP heavy cream, 1tsp vanilla extract and 1/8 tsp salt.Mix for 2 min.
Add 1 and 1/2 cup sugar and mix for another 3 min on high speed.
Spoon about 1/3 cup of the frosting into another bowl. Stir in a couple of drops of coloring. I used pink one.
Spread the pink frosting around the edges of a piping bag fitted with a Wilton 1M tip.
Spoon the white frosting in the center.
Place the tip directly on top of the center of the cupcake.
Using steady pressure, pipe a tight spiral around the cupcake.
Be proud of yourself! You did it. It looks fantastic.

If you make homemade pizza dough, you will notice the difference between that and store bought pizza dough.
Now, let’s prepare our toppings. It is really your choice.
I will give you the list of possibilities:
-Mozzarella cheese, grated
-Feta cheese
– Mushrooms, thinly sliced
-Peppers
-Italian sausage
-Pepperoni
-Ham
-Pesto
-Chopped fresh basil
-Onions
-Oregano
…..
Preheat oven to 405 F.
Flatten your dough ball with your hands and stretch out into a round or any shape that you like.
Brush dough top with organic olive oil.
Spread with tomato sauce or traditional pizza sauce.
After that add toppings of your choice.
For me: mushrooms, spinach, mozzarella cheese, feta cheese, basil, oregano
Keep adding your toppings…spinach….
My favorite, the one and the only Mr. cheese and Dr. basil.
Do you see your perfect picture?
To finish sprinkle with an organic dry oregano and olive oil. Bake for 25 min at 405 F.
Now is the best part. Eating….
Find your knife and fork if you are that kind of pizza eater…you know the theater kind of people.
You can also load your plate, use your hands and enjoy! I know I will and I did! Don’t judge me….

I like to say “Take a little time and enjoy the best homemade pizza dough”.
Why??? Well keep reading…
This recipe is very simple and it only takes 15 minutes to prepare.
On top of that you will need just a few ingredients which you probably already have. (let’s hope…)
The ingredients are:
-flour, instant or active yeast, sugar, salt, olive oil and water
Simple, don’t you think?
Yes, I know. It is the best homemade pizza dough recipe. For you and your family.
So, don’t forget. Enjoy and share.
Important: For this recipe you don’t need the mixer but you can use it if you want to. (spoon is all you need).
-Please be sure that you get a soft dough and to let it rise in a warm place.
Note for busy mums or busy people:
–Freezes well.
So, let’s make the homemade pizza dough.
ACTION MODE …
1 cup + 3/4 cup + 1/8 cup AP flour (almost 2 cups)
1 tsp instant yeast or active yeast
1 cup water (you will use 1/4 cup + 3/4 cup)
2 TBSP olive oil
1 tsp salt
1/4 tsp sugar
If using the active yeast:
In a bowl, combine 1/4 cup of water, yeast and sugar. Let stand for 5 min.
Add 3/4 cup warm water, 2 TBSP olive oil, 1 tsp salt.
If using the instant yeast:
In a bowl, combine 1/4 cup of water, yeast, salt and sugar. Let stand for 1 min.
Add 3/4 cup warm water, 2 TBSP olive oil.
Mix all ingredients together using a metal spoon.
Add 1 cup of flour and mix with a spoon.
After you mix with 1 cup of flour it will look like this.
Then add 3/4 cup of flour and keep mixing
until the spoon say: “Leave me alone your hard working bitch!”
Trust me, you will hear it. At this point retire your spoon unless you want the conflict to escalate.
Since I know your are kind and peaceful human being you will start using your hands at this point.
Calmly and surely. (don’t be afraid, you need to practice)
Knead dough until smooth, adding more flour by TBSP. You will know. If you add 2 TBSP of flour and
dough is happy you can stop at that point. You don’t need to use all 1/8 cup of flour.
Transfer to prepared bowl and coat with olive oil.
Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.
And you have it, your homemade pizza dough. Congratulations!
If you want to freeze, you can wrap the pizza dough in plastic and freeze in a freezer bag for up to 3 months.
If you want to make smaller pizza divide into half before freezing.

Are you interested in some kind of sick and depressing game that I called “Do you remember how much the bottle of vanilla extract cost in 2011, 2012, 2013, 2014, 2015?

Right now if you go to the Costco the cost of 473 ml of pure Vanilla Extract is close to $30.00
If this game above is not going to bring you to the homemade solution I don’t know what it will!
So, let’s save some money and make the “HOMEMADE VANILLA EXTRACT” !
You will love it.
So, 3 – 2 – 1 VANILLA EXTRACT STARTS RIGHT NOW!
First you need to find stores that sell alcohol. Don’t get excited. This shopping is only for the homemade vanilla extract.
You need to buy only two ingredients:
-Vodka and vanilla beans.
I bought the vodka from Poland that is 1.14l (about 4 and 1/2 cups).
For this size I use 5 packages of vanilla beans which is 35gr or 15 beans.
Ingredients:
Vodka 1.14 L (about 4 and 1/2 cups)
Vanilla Beans (35 gr or 15 beans)
Directions:
Use a knife to split the bean in half (cut lengthwise down each vanilla bean, splitting them in half, leaving an 1/2 inch at the end connected.
Put vanilla beans in a bottle. Add 4 and 1/2 cups of vodka.
Close bottle and store in a cool, dry place for at least 2 months. (up to 6)
Shake the bottle vigorously every day for at least the first week.
By the second or third day the extract should be a bit darker.
Week 2, 3, 4 and 5 – Shake the bottle a few times a week. If you are stressed out shake the bottle every day.
And don’t panic. Just imagine all your problems are turning into vanilla extract. You can handle it and shake it any
day, any time you want to.
Week 6 – You have a very raw vanilla extract. You can use it in your recipe.
As you use the vanilla, simple add in more vodka to replace what you have used.
Last for years.
Since it is the first day of this lovely homemade vanilla extract I added just a touch of green…

The vanilla beans are expensive. I found at the Walmart – 7gr for $4.27! (you get 3 beans). I bought 5.
So, 5 x 4.27 = $21.35
So, the total cost is $30.00 + $21.35 = $51.35 + taxes

For this cake you need only a few ingredients:
eggs, sugar, flour, baking powder.
NOTICE: Buy organic eggs if you want your cake to be in gorgeous, yellow color.
(Visit your local Farmers Market and support your community)
Now, let’s make it happen.
Follow the recipe below.
6 eggs, separated
6 TBSP sugar
6 TBSP flour (AP)
1/8 tsp baking powder
Separate egg whites from yolks.
Whisk the egg whites in a bowl to form stiff peaks.
Gradually add the sugar. (S-L- O-W-L-Y!!!)
Then add egg yolks. Mix.
Gently fold in the flour and baking powder, so that you lose as little air as possible.
Pour the mixture evenly into the pan.
Bake from 10 to 15 min at 375 F.
How do you know if your cake is done?
Insert toothpick into your cake. If comes out clean – cake is baked.
Now, if you finish baking the cake prepare yourself for the next step! It is very, very important step.
Prepare two wet kitchen towel. (Kitchen towels must be wet with warm water).
So, you will have the following situation:
Bottom wet towel + Your CAKE + Top wet towel
After 30 min. check if you can roll up the cake. Please start with a short side of the cake.
If cake refuses to cooperate and still wants to stay straight, please wet the top kitchen towel again.
Cover the cake with wet towel and after 10 min try to roll up. It will work.
Unroll the cake, then spread the Strawberry Buttercream filling, leaving a 1 inch border all around the edges.
Using both hands, roll the cake up.
Then wrap in cling wrap or wet towel and refrigerate. (Also, you can keep it in the freezer)

Made from fresh strawberries – Yes, it it homemade!
1 lbs strawberries (454 gr)
1 cup unsalted butter
4 1/2 cups icing sugar (you can use less, it is your choice)
1/4 tsp vanilla extract
1/8 tsp salt
1 TBSP whip cream (optional)
Core the strawberries to remove the white center.
Place cleaned strawberries in a food processor and pulse until smooth.
You will have about 1 and 1/4 cup of puree.
Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)
Place strawberry puree in a small saucepan over a medium heat.
Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.
Place the reduced puree into the fridge to allow to cool.
Beat the butter. Be sure that there is no lumps.
Then add 2 1/2 cups of icing sugar and mix until butter and sugar are combined.
Add your strawberry puree, vanilla and salt.
Beat together until combined.
Then add 2 cups of icing sugar and mix well until well combined.
Add 1 TBSP of whip cream if needed and wanted.
And you have it, your homemade Strawberry Buttercream Frosting made from fresh strawberries.Enjoy.

To make chocolate ganache you need only 2 ingredients: heavy cream, chocolate chips.
1 cup heavy cream
1 1/2 chocolate chips
Bring 1 cup of the heavy cream to a simmer.
Remove from heat and pour over 1 and 1/2 cup chocolate chips.
Let stand until chocolate has softened. (5 min)
After 5 min. stir with a whisk until smooth and shiny.
Cover any surfaces you want to…even your body! For this post I suggest you cover your cake and enjoy your chocolate moment.
