Ingredients
1 1/3 cup almond milk
1 cup dates (chopped)
3 oz chocolate (unsweetened)

Using a double boiler method melt the chocolate. Set aside.
In a blender add almond milk and chopped dates.
Blend until smooth.
Then add melted chocolate and blend until all ingredients are happy together.

IMPORTANT: This recipe can be made using 5 by 9 pan or regular 8 by 8 glass pan. The choice is yours.

Making Easy Strawberry Tiramisu Recipe
Ingredients
2 egg yolks
1/4 cup regular white sugar
8 oz cream cheese (you can use Philadelphia or mascarpone cheese)
1/2 cup icing sugar
1 cup heavy cream
1/2 TBSP pure vanilla extract
1 TBSP hazelnut extract or rum
1 cup strawberries, sliced into small pieces
4 TBSP of strawberry jam
package of ladyfingers
1 1/4 cups strong coffee
cocoa and strawberries for decoration
Instructions for making tiramisu dessert
So line 9 by 5 pan or 8 by 8 glass pan with aluminum foil. Set aside. (If you are making 9 by 5 prepare 2 mini jars for mini strawberry tiramisu).
Important:
Make very strong coffee. Then add hazelnut extract and pure vanilla into hot coffee. Stir all ingredients together. Set aside to cool until you make the cheese filling.
Making Cheese Filling
Add egg yolks and sugar to the mixing bowl.
Mix at high speed for about 6 minutes.
Then add 8 oz of Philadelphia cheese (room temperature) and mix until combined.
Your next step is to add icing sugar and mix it in. (1 minute)
In another mixing bowl mix heavy cream. (check important note)
Add whipped heavy cream to the cheese mixture and quickly mix. (until combined)
Then add pure vanilla extract and stir until combined. Set aside.
Make Strawberry Jam Combo
In another small bowl combined sliced strawberries and the strawberry jam.
How to assemble the tiramisu?
Dip ladyfingers into coffee mixture and place into 9 by 5 pan.
(I used 3 whole + 3 trimmed ladyfingers for the bottom)
Spread half of the cheese mixture on top of ladyfingers.
Cover with strawberry jam combo.
Repeat process with the second layer of ladyfingers and finish with cheese cream mixture.
Dust with cocoa magic.
And now the SECRET: Cover and transfer to the fridge for 24 hrs. (Yes, I know). This is the secret.
After 24 hours you will taste the best homemade tiramisu EVER!
Before you serve decorate with fresh strawberries.

Quick Note
Cheese – I use the best cheese called Philadelphia cream cheese. (original, don’t use light version)
Eggs – this recipe is using raw egg yolks. So be sure to use fresh, organic eggs. If you are afraid of raw egg yolks, you can cook egg yolks using double boiler method.
Ladyfingers – check Walmart, Superstore, Safeway or any food store.
Strawberries – use fresh strawberries. Visit your local Farmers market for the best strawberries.
Strawberry jam – use homemade jam or just the jar bought from the store
Heavy Cream – use 33% or higher
Icing sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.
Cocoa – I used organic from Costco. If you don’t like the taste of cocoa use shaved chocolate or ground coffee

Starbucks Best Banana Bread Recipe
Ingredients
2 cups flour (all purpose)
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 cup oil
1 egg
1 1/8 cup sugar
2 TBSP buttermilk
1 tsp vanilla extract
3/4 cup mashed bananas (ripe bananas)
1 cup chopped walnuts
3/4 cup mini chocolate chips
INSTRUCTIONS FOR MAKING BANANA BREAD LOAF
Preheat oven at 325 F.
Line loaf pan with aluminum foil or parchment paper.
In your favorite bowl add dry ingredients: flour, cinnamon, baking soda and salt.
Stir until combined. Set aside.
In the mixing bowl add sugar, oil and egg.
Mix until combined.
Add flour mixture to the egg mixture and mix until all ingredients are combined.
The mixture will be thick. (don’t worry it will be perfect when you bake)
Your next step is to add buttermilk, vanilla and mashed bananas.
Mix until combined.
Then add mini chocolate chips and stir with the wooden spoon. (or spatula)
Pour into a prepared loaf pan and sprinkle walnuts over the top.
Be sure walnuts are covering every single inch of the bread. (be super generous)
Bake at 325 F until done. For me it was 72 minutes.
Remove from the oven and cool for 15 minutes.
Then remove the best banana bread from the pan and cool on a wire rack. (if you can wait)
If you can’t wait like me and you like it hot … well, just slice it and enjoy. (who cares…)

Ingredients
4 l of milk
1/2 cup of sour cream
Instructions for making easy homemade cheese
Coat the bottom of the saucepan with sour cream.
Then pour the milk into the saucepan.
Cover with lid, then with kitchen towel and let it sit for 48 hours.
Important: Keep it on your room temperature. Don’t transfer to the fridge. (Kitchen counter is the location)
After 48 hours:
Find the second large saucepan. (it can be large bowl too)
Put the strainer on top of the saucepan.
Cover with kitchen towel and then with the cheesecloth.
Pour the cheese from the other saucepan.
All the liquid (the whey) will drain and be collected in the saucepan below.
Don’t do anything for 15 minutes, just let it happen on its own.
Then lift the cheese cloth and kitchen towel at the same time and start twisting and squeezing to remove the liquid. This has to be very gently twist and squeeze.
Then let it sit like that for about 10 hours. (don’t do anything)
After 10 hours remove the cheesecloth and kitchen towel and transfer cheese to the plate.
Season with salt, black pepper, red paprika, garlic, Italian parsley or anything you like.
Also, you can eat without the salt if you are on diet or don’t like to use the salt.

Easy Pecan Chocolate Cookies
Ingredients
1/2 cup butter, unsalted
1/4 cup white sugar
1/2 brown sugar
1/2 tsp pure vanilla extract
1 egg
1 cup flour (all purpose, unbleached)
1/8 tsp salt
1/2 tsp baking soda
1 cup chopped toasted pecans
3/4 cup chocolate chips (it can be mini chocolate chips)
half Lindt chocolate, chopped
Instructions for making cookies
First step is to add dry ingredients to the bowl which is all purpose flour, salt and baking soda.
Stir until all dry ingredients are combined. Set aside.
Your step 2 is to cream butter with both sugars.
Then add egg and mix until smooth.
Add vanilla extract and mix for a few seconds.
Then add flour mixture to batter mixture and mix until fully incorporated.
Add all chocolates and pecans and mix by hand.
Using ice cream scoop, form cookie dough balls. (4 oz)
Cover with plastic wrap and freeze for 3 hours or until the dough balls are frozen.
Place in freezer plastic bags.
You can freeze for about 3 months.
Bake at 350 F for 13 to 14 minutes.
If you don’t freeze the cookies bake for 12 minutes or until done.

Making Coffee Chocolate Mousse Recipe
Ingredients
1 cup milk
2 TBSP sugar
1 TBSP instant coffee
2 oz chocolate, chopped
1 1/2 TBSP cornstarch
Decoration: coffee, chocolate or cocoa
Instructions for making chocolate recipe
Add milk, sugar, chocolate and coffee powder into small saucepot.
Over a medium heat bring all ingredient to a simmer, whisking until the chocolate is melted.
In another small cup add cool coffee and cornstarch. Mix until incorporated.
Then mix cornstarch coffee mixture into hot chocolate mixture.
Keep stirring over medium heat until it returns to a simmer point. (about 3 minutes)
Pour the chocolate coffee mixture into 2 small glasses and place plastic wrap on top of it.
Important: Plastic wrap needs to touch the chocolate mixture directly. (You don’t want the skin on top of chocolate)
Transfer to the fridge for 3 hours or overnight.
Decorate and enjoy.

(wink…wink) Because of that our recipe today is quick and healthy dessert. Please take this healthy into “healthy”. So, let me tell you a little about this healthy no bake dessert.

ACTION TIME
Making Healthy Fig Wafer Recipe
Ingredients
1 cup sugar
1/2 cup water
2 cups figs, chopped
3 cups ground walnuts
1 TBSP lemon juice
Wafer sheet (you will need 2)
INSTRUCTIONS FOR HEALTHY FIG DESSERT
Add water and sugar to a large sauce pan.
Bring to heat until water boils.
Then, let it boil on medium heat for 3 minutes. (image 1 below)
Remove from heat and add chopped figs and lemon juice.
Then add ground walnuts until you get enough thick mixture.
For this recipe I added 3 cups of walnuts.
Important: add more ground walnuts or chopped figs if you need it.
Stir until all ingredients are incorporated.
Let it cool for 10 minutes.
Meanwhile, unwrap the wafer sheets. Remove 2 from the package.
Place first wafer sheet on a hard surface.
Pour the fig filling and evenly distribute the filling to all sides. (use knife, spoon or whatever you have)
Top everything with second wafer sheet.
Then cover the cake with aluminum foil and place heavy object on top of it.
For the heavy object I like to use books. (You can use what you have)
Leave it overnight or 6 to 8 hours.
NEXT DAY – CUT THE Healthy Wafer Cake
Use sharp knife and cut the cake into desired sizes and shapes.
Keep cake in the fridge for about 5 days. (be sure it is wrap in plastic wrap or aluminum foil)

Description of Homemade Easy Marshmallows Recipe
2023 will be extra special when you slice into this chocolate masterpiece to reveal surprise inside.
If you don’t like surprises … well let me start by saying that this marshmallow cake is made of two simple layers using the ingredients you already have in your kitchen. Eggs, sugar, flour and ground walnuts.
Then two simple layers are connected with sunshine yellow filling and cookie crumbles filling. The whole torte is covered with the most amazing chocolate filling and heavy cream. Did I mention between two layers there is something special…White, fluffy and full of chocolate. Yes, I know. This is an elegant dessert you dream about.
Now, to make dream our reality we must get all ingredients under the list we called…

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)
-mixing bowl
-glass or plastic bowl for dry ingredients
-2 round baking pan (6 inches)
-medium or larger sauce pan
ACTION TIME

MAKING Homemade Easy Marshmallows Recipe
Ingredients
5 egg whites
5 TBSP sugar (white, regular sugar)
7 TBSP ground walnuts
2 TBSP flour
Filling
1 1/2 cups milk
5 egg yolks
1/2 cup sugar + 1 TBSP sugar
2 Dr. Oetker Vanilla pudding
1 TBSP flour
1/2 cup butter, unsalted
2 oz chocolate
1 box of munchmallow cookies (teacakes)
2 cups of heavy cream
Decoration: chocolate, walnuts, sprinkles…
Instructions for making Easy Marshmallows Recipe
Line bottoms of 6 inch cake pans with parchment paper. (do not grease the sides or the bottom).
Preheat oven to 375 F.
Plastic Bowl: Add flour and ground walnuts. Stir it together and set aside.
Mixing Bowl:
First mix eggs whites until foamy and then add sugar and mix until firm peaks and sugar is incorporated.
Your next step is to add the flour/walnut mixture. You are not going to use mixer at this point.
Fold flour and walnuts into eggs mixture using a spatula.
Stop mixing when no streaks of flour remain.
Important:Be sure the flour/walnuts is incorporated.
Homemade Easy Marshmallows Recipe
Pour the batter into 6 inch prepared pan.
I used about 2 cups for each pan.
Bake at 375 F for about 14 minutes or until done. (start checking after 10 minutes)
Remove from the oven and let it cool in pan for about 15 minutes.
Making the Yellow Filling
Add egg yolks, sugar, pudding and flour into 1/3 cup of milk.
Mix with your mixer until smooth.
The rest of the milk and 1 TBSP of sugar transfer to the sauce pan and heat until it boils.
When milk boils remove from the heat and add egg and pudding mixture.
Return to heat and stir non stop for about 5 minutes or until thickness.
Then remove from heat, transfer to the mixing bowl, cover with plastic wrap and let it cool.
Homemade Easy Marshmallows Recipe
While the filling is cooling, mix butter until smooth.
Add cooled yellow filling to the mixed butter.
Mix all ingredients until incorporated.
IMPORTANT: Take 6 tea cookies (munchmallow cookies) and separate marshmallows top from the bottom of the cookie. (check the picture below).USE The BOTTOM OF THE COOKIES AND CRUMBLE INTO SMALL PIECES.
Teacakes or marshmallow cookies
Your next step is to divide yellow or sunshine filling into 3 parts.
One will stay yellow filling, the second one will have crumbs from the tea cookies and third one will be mixed with melted cooled chocolate.
ASSEMBLY of Homemade Easy Marshmallows Recipe
Place first layer of the cake and cover with cookie crumble filling.
On top of cookie crumble filling add 6 marshmallow cookies (just the top of tea cookies)
Cover with yellow filling.
Add second layer cake and top with chocolate filling.
At this point transfer the cake to the freezer or fridge for about 6 hours or overnight.
Next day – Mix heavy cream and cover the whole cake.
Decorate as you wish. You can use shaved chocolate, ground walnuts or sprinkles.

Vanilla pudding – YOU CAN’T USE INSTANT. It has to be Dr. Oetker.
Chocolate – semi-sweet is my choice for chocolate.
Butter – use unsalted, room temperature

bread – cheese – ham – mustard – mayo – mixture of eggs and milk
If you are wondering when to eat this sandwich the answer is simple. Monte Cristo sandwich is for any time of the day. Can be your breakfast, lunch or dinner. Also, this is great idea for Sunday brunch or lazy Friday night when you want to stay inside and just watch TV. The sandwich is made in no time. Super fast and so easy.
Now, to make this sandwich in your house you need to buy the following ingredients.
SHOPPING LIST FOR EASY SANDWICH
bread
ham
cheese (Swiss cheese or cheese you like)
mayo
mustard

milk

Monte Cristo Sandwich
EQUIPMENT NEEDED
-shallow bowl
-non-stick frying pan or cast-iron (whatever you have at home)
ACTION TIME
Easy Monte Cristo Sandwich
Ingredients
4 slices of bread
2 eggs
1/4 cup milk
4 slices ham
2 slices cheese (or you can use 4 slices of Swiss cheese or cheese you like)
salt and pepper to taste
oil for frying
INSTRUCTIONS FOR Making Easy Monte Cristo Sandwich
Add eggs, milk, salt and black pepper into a shallow bowl.
Beat all ingredients until well combined. Set aside.
Lightly grease a small skillet or pan over medium heat.
Spread the mustard on 2 of bread slices.
Add 1 slice of cheese and 2 slices of ham.
Optional: Top ham with another slice of cheese
Then spread the mayonnaise on remaining 2 bread slices.
Close the sandwiches with 2 slices of bread with mayo-side down.
Dip each sandwich into egg/milk mixture to coat on both sides.
Transfer to the pan with hot oil and cook until golden brown on the bottom.
Flip the sandwich carefully using the flat spatula and continue cooking on the other side until golden brown.
Slice and serve.
Optional: Dust with icing sugar just before serving if you like. (I don’t like using icing sugar)
Quick Note
Bread – use white of whole wheat
Cheese – you can use Swiss, Provolone or Gouda cheese.
Eggs – use large, organic and fresh eggs.
Mustard – this is my favorite mustard. I love, love this mustard. On top of that you get free glass.
