Making Mozzarella Cheese Sticks Oven Baked Golden Perfection
Ingredients
9 Mozzarella cheese sticks
1 cup breadcrumbs
2 eggs, large
INSTRUCTIONS
The cheese sticks I used are 3.5 inch long with width of 1 inch.
Then I wrap them into plastic wrap and place into the freezer for a few hours or overnight.
This step is super important.
Placing cheese sticks in the freezer is important to prevent the cheese from melting too quickly in the oven.
Line baking sheet with aluminum foil. Don’t spray with baking spray. Set aside.
Mix eggs in the bowl or deep plate.
Then use another bowl to add breadcrumbs.
Deep the frozen cheese sticks into the eggs, then place in the plate with breadcrumbs, then again into the egg and breadcrumbs.
So, each cheese stick goes to the following steps: egg-breadcrumbs-egg-breadcrumbs – baking sheet.
Repeat the process with the remaining cheese sticks.
Your next step is to place cheese sticks back into the freezer. (for about 3 hours or overnight)
When you are ready to bake preheat oven to 450 F.
Bake cheese sticks for 9 minutes.
Serve with your favorite sauce, sour cream, garlic.

This pie is light and fluffy, made with real heavy cream, pumpkin and blend of spices. The base for this pie is my homemade pie crust which you already have in your freezer. This really is the easiest pie or super easy pumpkin pie.

Preheat oven to 425 F. Place a baking sheet on the rack while preheating the oven.

Making PUMPKIN Pie Filling
Using a small bowl mix 3 eggs with fork. Set aside.
In a large mixing bowl add the following:
pumpkin, white and brown sugar, heavy cream, lightly beaten eggs, cinnamon, salt and nutmeg.
Mix all ingredients. Set aside for a second.
Remove pie crust from the freezer.

How to check if pie is baked? Insert knife into the filling about 1 inch from the side. If it come out almost clean it is done.
Remove the pie from the oven and cool.
Whipped Cream: In the mixing bowl mix heavy cream and Whip it.
Top the pie with whipped cream and decorate with pumpkin and cinnamon spices.

Add to the mixing bowl the following ingredients:
flour, shortening and brown sugar. Mix until combined. Set aside.
In a separate bowl add eggs, vinegar and ice water. Mix using a fork.
Then add eggs mixture to the shortening.
Mix all ingredients together.
Your next step is to add 3 cups of flour and mix in.
Then add the rest of flour or 4 cups.
Mix all ingredients or until the flour is incorporated.

MAKING NUTELLA EASIEST CAKE
Ingredients
Cake Base
2 eggs, large
1/3 cup regular, white sugar
1/3 cup flour (all purpose, unbleached)
1/8 tsp baking powder
Filling (Yellow and Chocolate)
5 egg yolks
1/3 cup +1 TBSP sugar
2 packages Dr. Oetker Vanilla puddding (can’t use instant)
3 3/4 cups milk (2%)
1/2 cup butter, unsalted
1/3 cup icing sugar
3 oz chocolate, semi-sweet (or use unsweetened)
1 cup Nutella
1/2 cup hazelnuts, grounded or chopped
Optional: Jaffa cakes, Oreo cookies…
INSTRUCTIONS
How to make Nutella cake base.
Preheat oven to 350 F.
Line bottoms of 6 inch cake pans with parchment paper. (do not grease the sides or the bottom). Set aside.
Mixing Bowl:
First mix eggs and sugar for about 6 minutes.
Mix until the mixture becomes thick, fluffy and triples in volume, for about 6 minutes.
Your next step is adding the flour. You are not going to use mixer at this point.
Add the flour, baking powder and fold with a spatula. Stop mixing when no streaks of flour remain.
Be sure the flour is incorporated.
Important #3: Do not over-mix.
Pour the batter into 6 inch prepared pan.
Bake for about 19 minutes but start checking after 15 minutes. ( be sure to check using the toothpick)
Insert the wooden toothpick near the center of the cake. If it comes out clean, the cake is done.
Cool the cake. Remove from the pan.
Making Nutella Cake Filling
Add 5 eggs yolks and sugar into the mixing bowl. Mix for about 3 minutes.
Then add 2 Dr. Oetker Vanilla pudding and 1/2 cup milk. (room temperature).
Mix until all ingredients are incorporated. (another minute or two)
Meanwhile, add 3 1/4 cup cold milk into large pot.
Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.
Return to heat and stir non stop for about 3 minutes or until thickness.
Remove from heat, transfer to the mixing bowl, cover with plastic wrap and let it cool.
While the filling is cooling, mix butter and icing sugar until incorporated. (2 minutes)
Add cooled yellow filling to the mixed butter.
Mix all ingredients until incorporated.
MELTING CHOCOLATE
Melt chocolate using the double method. Cool it. Set aside.
ASSEMBLY OF Easy Nutella Cake
Using the same 6 inch removable pan start building the cake.
Place sponge cake at the bottom of the pan.
Add 1 cup Nutella (or as much to cover the base of the cake).
Cover the Nutella with Jaffa cakes or Oreo cookies.
Add half of yellow filling on the top of Jaffa cakes or Oreo cookies.
Sprinkle with grounded hazelnuts.
Stop assembly for a second or until you make chocolate filling.
Important: Add melted, cooled chocolate to the second half of yellow filling. Mix until incorporated.
Pour chocolate filling on top of yellow filling.
Transfer the whole cake to the fridge for 6 hours or overnight.
NEXT DAY:
Decorate with hazelnuts, shaved chocolate or whip cream.

Chocolate – I used semi-sweet. You can use your favorite. (unsweetened, 70% cocoa… and so on)

Legend has it that a local housewife from Nanaimo created this recipe for a magazine cooking contest. And of course she won first prize. Because of her we know that Nanaimo is the city in British Columbia. Do you see how powerful baking is? You can learn geography and enjoy the best no-bake bars. So, let’s learn a little more about very Canadian traditional Nanaimo bars.
It consist of three layers: the first one or the base is made of wafer crumbs, walnuts and coconut. The middle layer is made of custard icing and the top layer is the chocolate ganache. Easy, don’t you think.

Making Original Nanaimo Bars
Ingredients
First Layer
1/2 cup butter, unsalted
1/4 cup sugar
1/3 cup cocoa
1 egg
2 tsp vanilla extract
1 2/3 cups graham crumbs
3/4 cup coconut
3/4 cup walnuts, finely chopped
Middle Layer
3/4 cup butter
6 TBSP milk
6 TBSP Bird’s custard powder
4 1/2 cups icing sugar
Top Layer
5 oz chocolate
2 TBSP butter or oil
INSTRUCTIONS
Line 9 x 9 inch square pan with aluminum foil or parchment paper. Set aside.
In a medium size bowl add graham crumbs, coconut and walnuts.
Then using a medium saucepan over low heat combine the butter, sugar,cocoa, egg until the mixture boils.
Boil for 2 minutes and add vanilla extract.
Remove from heat and stir graham crumbs, coconut and walnuts.
Press the base into the prepared lined pan.
Place into to fridge until firm (about 30 minutes).
Making Yellow Custard Icing
Using a mixing bowl combine custard powder and milk.
Stir until smooth.
Add icing sugar and butter.

While I always make them in December, they are actually great any time of year. From January to December this is the perfect dessert served with cappuccino or coffee.

One and only Easy Nanaimo Bars
Ingredients
First Layer
1/2 cup butter, unsalted
1/4 cup sugar
1/3 cup cocoa
1 egg
2 tsp vanilla extract
1 2/3 cups graham crumbs
3/4 cup coconut
3/4 cup walnuts, finely chopped
Middle Layer
3/4 cup butter
6 TBSP milk
6 TBSP Bird’s custard powder
4 1/2 cups icing sugar
Top Layer
5 oz chocolate
2 TBSP butter or oil
Instructions
Line 9 x 9 inch square pan with aluminum foil or parchment paper. Set aside.
In a medium size bowl add graham crumbs, coconut and walnuts.
Then using a medium saucepan over low heat combine the butter, sugar,cocoa, egg until the mixture boils.
Boil for 2 minutes and add vanilla extract.
Remove from heat and stir graham crumbs, coconut and walnuts.
Press the base into the prepared lined pan.
Place into to fridge until firm (about 30 minutes).
Making Yellow Custard Icing
Using a mixing bowl combine custard powder and milk.
Stir until smooth.
Add icing sugar and butter.
