Making Mint Nutella Lava Cake

Ingredients

1/2 cup butter

Intense Mint Lindt Chocolate (100 gr)

2 oz semi-sweet chocolate

1/4 cup sugar

3 eggs

1 tsp vanilla

1/2 tsp organic peppermint extract

2 TBSP Nutella

INSTRUCTIONS

Preheat oven to 425 F.

Spray 4 ramekins with baking spray and dust with cocoa powder. Set aside.

Your next step is to chop Lindt Intense Mint chocolate and 2 oz semi-sweet chocolate.

Place 1/2 cup butter, chopped Lindt Mint chocolate and chopped semi-sweet chocolates into a medium heat-proof bowl.

Place the bowl over a saucepan of simmering water.

Stir butter and chocolate occasionally as it softens. Remove.

Add 1/2 tsp organic peppermint extract and stir.

Set aside.

Then using another bowl whisk 3 eggs, 1/4 cup sugar and 1 tsp vanilla extract.

After that add mixed egg mixture into chocolate mixture.

Mix all ingredients together with a wooden spoon or a spatula.

The whole mixture will be about 2 cups.

Using a 1/4 measuring cup, place one scoop of batter into each ramekin.

Add 1/2 TBSP of Nutella in the center of each ramekin. ( I did not freeze Nutella)

Top Nutella with another 1/4 cup of the batter.

Bake at 425 F for 12 minutes.

Important: If you don’t want to bake all of them check the quick note below.

Allow to cool for 3 min.

Cover each ramekin with an inverted plate and turn over.

Optional: Decorate with heavy cream, ice cream, icing sugar. BTW, the cake is perfect on its own.

IMPORTANT NOTE – You can store unbaked ramekins in the fridge for 2 days. Just cover each of them with aluminum foil. When ready to bake, remove aluminum foil and bake at 425 F for 13 minutes. So, yes you can bake only one ramekin and keep the rest in the fridge.

Originally it suppose to be about oatmeal cookies but this pie won my heart and I need it to share now. I like to think you need to make this pie as soon as possible. It will change your life.

Also, if you don’t like to make homemade pie crust you can use store-bought version. It is up to you but our recipe for pie crust is super easy to make. (and so cheap)

In case you are wondering why somebody would use oatmeal in pies I am going to answer to you. And in order to do that I have to go back, way back into 1800. (Hello 1800… I am so happy to escape 2020). BTW, not really. It was bad year too…but I have to give you an answer. (see below)

Making Amish Oatmeal Best Pie

Ingredients

1 unbaked pie shell

3 large eggs, beaten

1 1/4 cups brown sugar, packed

1/2 cup white sugar

3/4 cup milk

1 tsp pure vanilla extract

3 TBSP butter, unsalted and room temperature

1/2 tsp salt

Optional: heavy cream, ice cream

Be sure you have in the freezer homemade pie crust (or use store-bought)

4 cups pasta (See note if you are using 6 inch pan)

1 red or yellow pepper (medium size), chopped

3 eggs (large and organic if you can)

3/4 cups milk (2%)

1/3 cup sour cream (14%)

1 cup shredded mozzarella cheese

1/4 tsp salt

1/2 tsp grounded black pepper

1 tsp oregano

1/8 cup Italian parsley, chopped + more for decoration

3 cloves of garlic, minced

Optional: Feta cheese (as much as you want to)

INSTRUCTIONS

Preheat oven to 400 F.

Line springform with aluminum foil or spray with baking spray. Place on baking sheet.

Using a large saucepan boil salted water and add 4 cups of pasta. Boil for about 8 minutes.

While pasta is cooking, find medium size bowl.

Add eggs, milk, Italian parsley, garlic, salt, pepper, oregano to the bowl and whisk all ingredients.

Then stir in mozzarella cheese and chopped red or yellow pepper.

When pasta is done, drain.

Add hot pasta to cheese mixture.

Stir all ingredients together using the metal spoon.

Your next step is to transfer pasta mixture into prepared springform pan.

Baked at 400 F for about 20 minutes.

Remove from oven and top with sour cream, feta cheese and Italian parsley.

MAKING Banana Bread with CRISCO SHORTENING

Ingredients

1 cup sugar

1/2 cup Crisco (all-vegetable shortening)

2 eggs, large

1/2 cup sour cream

2 cups flour (all purpose, unbleached)

1 tsp baking soda

1/4 tsp salt

1 cup mashed bananas (3 medium size, ripe bananas)

3/4 cup walnuts, chopped

1 cup chocolate chips, semi-sweet

INSTRUCTIONS

Preheat oven to 350 F.

In a small bowl add flour, baking soda and salt. Stir until combined. Set aside.

Line 9 by 5 baking pan with aluminum foil. (dull side up)

Add shortening and sugar into mixing bowl.

Mix until smooth.

Then add eggs and sour cream. Mix in.

Your next step is to add mashed bananas and beat until incorporated.

After that add flour mixture and mix until blended.

Stir in walnuts and chocolate chips.

Spread in prepared 9 by 5 pan.

Bake at 350 F for 55 minutes or until toothpick inserted in center comes out clean.

Cool it.

-prepare 9 by 5 baking pan

-add dry ingredients into small bowl: flour, baking soda and salt

-mix shortening and sugar

-add sour cream and eggs

-then add mashed bananas and mix in

-add flour mixture to shortening

Eggs– large, organic and room temperature

Flour-all purpose, unbleached (if you can find)

Chocolate Chips – I used semi-sweet. You can use what you like. (unsweetened..)

Walnuts – if you don’t like walnuts use pecans, hazelnuts.

3 Ways to Quickly Ripen Bananas

Oven Baked Bananas – Place your bananas on a baking sheet. Bake for 15 to 20 minutes at 250 F.

Paper Bag (12 to 24 hours) – Place bananas in a brown paper bag and close loosely. Bananas emit ethylene which creates ripening.

Microwave Method – take a fork and poke through the skin of the peel (on all sides). Place poked bananas in the microwave for 30 seconds. Cool it and check for softness. If you are not satisfy keep going. Place bananas into the microwave for another 30 seconds. Continue until desired ripeness.

I was making preparation for this recipe for a while or since I made Easy Mini Pie Crust or Butter Tart Shells

So, dear my readers have you heard about butter tarts? Are you aware of the anger regarding the raisins? To have them or not? Screw Hamlet and his “To be or not to be”. The real dilemma is here, in Canada.

Do you want raisins in your recipe or not? Since I value the peace more than anything in this life it is your choice if you want to add it or not.

These Canadian treats are sweet, delicious, rich and simply irresistible. The crust is flaky filled with perfectly sticky center.

So, what kind of the perfect butter tarts can you make? (you have many choices…)

Yes, people love butter tarts in Canada and each province has their own favorite recipes. Speaking of love, Ontario has the Best Butter Tart Festival. As you can see Canada is in love with butter tarts.

For me the best butter tarts are homemade. So, let’s do it.

First step – getting ingredients

SHOPPING LIST

  • Butter Tart Shells – FROM 5 STAR COOKIES (or store-bough if you have no time)
  • Eggs
  • Brown Sugar
  • Corn syrup
  • Salt

Making the best Butter Tarts from Canada

Ingredients

butter tart shells (24 or 2 dozen)

Butter Tart Filling

2 eggs

3/4 cup brown sugar

2 TBSP corn syrup

1/4 tsp salt

Optional: walnuts, raisins, pecans

INSTRUCTIONS

Preheat oven to 350 F.

Add the following ingredients to the mixing bowl: eggs, brown sugar, corn syrup and salt.

Mix all ingredients until well incorporated. (about 5 minutes)

Optional: Sprinkle each tart shell with chopped walnuts (or use your whatever is your favorite … like raisins, pecan…)

Pour filling into each shell but don’t fill up, leaving 1/4 inch headspace. (I used 1 TBSP + 1 tsp of butter tart filling). BTW, 1/4 inch is about 5 mm.

Bake at 350 F for about 20 minutes. (start checking after 15 minutes)

Cool it.

Serve at room temperature.

Storage: Store them in the fridge for about 3 days.

I like to top butter tart filling with melted chocolate and heavy cream.

Use double boiler method and melt 1 cup chocolate chips with 1 TBSP oil.

Hello from the best pie crust you can imagine.

With this recipe you can make so much. It is the gift that keeps on giving.

So, you can make:

-2 Pie Crust (for 9 inch pie) and 12 tart shells

-or you can make 3 pie crusts (9 inch) or just

-36 butter tart shells or 36 mini pies

This recipe doesn’t need description.

It is the little star made from the big 5 star secret recipe.

But I will say the following about this recipe:

This recipe is scaled-down from my secret recipe. Why?

Because you asked for it. I got so many emails asking me if I can provide recipe that uses less than 5 cups of flour. (not all of you are having KitchenAid Mixer)

So, I did. And now we can start making the best pie crust for your sweet future.

Like always our first step is …

  • Brown Sugar
  • Flour (all purpose, unbleached)
  • Eggs
  • White Vinegar

ACTION TIME

MAKING Mini Pie Crust or Butter Tart Shells

Ingredients

Mixing Bowl 1

3 TBSP flour

1 lbs shortening

3 TBSP brown sugar

Bowl 2:

1 eggs, large

1 TBS vinegar

3/4 cup water (ice water)

Bowl 3

3 1/2 cups flour (all purpose)

INSTRUCTIONS

Your first step is to add flour, shortening and brown sugar to the mixing bowl. (picture 1)

Mix until combined. Set aside.

In a separate bowl add egg, vinegar and ice water. Mix using a fork. (picture 2)

Then add eggs mixture to the shortening. (picture 3)

Mix all ingredients together.

After that add all flour or 3 and 1/2 cups and mix until all ingredients are combined.

It will be sticky but don’t worry.

Divide dough into 3 equal portions. (see the pictures below)

Wrap each tightly in plastic wrap. (If is to sticky use the metal spoon to transfer dough)

Transfer to the freezer and you can freeze for about 3 months.

-Mix flour, shortening and brown sugar using mixer. Set aside.

-Combine in separate bowl: eggs, vinegar and water. Use fork to mix it.

-Add egg mixture to shortening

-Then add flour

-Mix, divide and freeze.

HOW TO ROLL OUT PIE CRUST for MINI PIES or Butter Tart Shells

This is very important: Your first step is to take out your pre-made frozen dough the night before.

When you are ready to roll out your dough, use generous amount of flour on your surface and rolling pin. (this is important step since this dough loves the flour)

Place the dough on floured surface. Cover the dough with more flour.

Using your rolling pin, gently roll it from the center out, turning the dough with your hands as you go.

Roll the pie crust out to 1/8″ thickness.

This doesn’t need to be perfect. You are making mini pies or butter tarts shells.

Then use cookie cutter, large, round size. I used 3 and 1/2 inch or 9 cm.

Cut out 12 circles from the pie crust. Re-roll any scrap pieces of pie.

Place each pie circle into the cavity of a standard 12-count muffin pan.

Please, be sure to gently press the pie dough down and around the sides.

Transfer the muffin pan into the freezer for about 2 hours.

Remove from freezer, cover with plastic wrap then aluminum foil and return to the freezer. (until ready to use)

And you just made mini pie crust or butter tart shells for your future recipe.

FINAL NOTE

The best recipe for mini pie crust or butter tart shells.

From this recipe you can make 36 mini pies or 36 butter tart shells. You can also make 3 regular size pies (9 inch).

It is your choice. And you have so many of them when it comes to this recipe.

However, the following sentence is not giving you a choice: This dough MUST BE FROZEN before being used.

6 Mozzarella cheese sticks

Yellow mustard (as much as you wish)

3 tomatoes

Optional: onions, garlic, ketchup or just add your favorite toppings.

Description of Mozzarella Cheese Sticks

Homemade mozzarella sticks only require 3 simple ingredients:

  • Mozzarella cheese
  • Breadcrumbs
  • Eggs

The sticks are baked, not fried, but still golden and crisp on the outside and so cheesy on the inside. Yes, they are so ooey-gooey, cheese and melty.

You can serve them with your favorite sauce. (marinara sauce for me)I like to eat mozzarella sticks for breakfast, lunch, dinner or any time I crave cheese. These will be a hit with your whole family. From Monday to Sunday this is your recipe. Easy as 1, 2, 3.

Making Mozzarella Cheese Sticks Oven Baked Golden Perfection

Ingredients

9 Mozzarella cheese sticks

1 cup breadcrumbs

2 eggs, large

INSTRUCTIONS

The cheese sticks I used are 3.5 inch long with width of 1 inch.

Then I wrap them into plastic wrap and place into the freezer for a few hours or overnight.

This step is super important.

Placing cheese sticks in the freezer is important to prevent the cheese from melting too quickly in the oven.

Line baking sheet with aluminum foil. Don’t spray with baking spray. Set aside.

Mix eggs in the bowl or deep plate.

Then use another bowl to add breadcrumbs.

Deep the frozen cheese sticks into the eggs, then place in the plate with breadcrumbs, then again into the egg and breadcrumbs.

So, each cheese stick goes to the following steps: egg-breadcrumbs-egg-breadcrumbs – baking sheet.

Repeat the process with the remaining cheese sticks.

Your next step is to place cheese sticks back into the freezer. (for about 3 hours or overnight)

When you are ready to bake preheat oven to 450 F.

Bake cheese sticks for 9 minutes.

Serve with your favorite sauce, sour cream, garlic.

-Freeze cheese sticks for a few hours or overnight

-Deep each stick into eggs, breadcrumbs, eggs, breadcrumbs and place into baking sheet

-Return to the freezer for 3 hours or overnight

-Bake at 450 F for 9 minutes

-Serve with your favorite sauce

Mozzarella Cheese Sticks

Making Mozzarella Cheese Sticks Oven Baked Golden Perfection

Yield: Serving 3 people
Prep Time: 21 minutes
Cook Time: 9 minutes
Total Time: 30 minutes

Say cheese, turn your oven on and make oven golden perfection called Mozzarella Cheese Sticks.

Let me repeat, cheese sticks are oven baked.

Ingredients

  • 9 Mozzarella cheese sticks
  • 1 cup breadcrumbs
  • 2 eggs, large

Instructions

    The cheese sticks I used are 3.5 inch long with width of 1 inch.

    Then I place them into the freezer for a few hours or overnight.

    This step is super important. Placing cheese sticks in the freezer is important to prevent the cheese from melting too quickly in the oven.

    Line baking sheet with aluminum foil. Don't spray with baking spray. Set aside.

    Mix eggs in the bowl or deep plate.

    Then use another bowl to add breadcrumbs.

    Deep the frozen cheese sticks into the eggs, then place in the plate with breadcrumbs, then again into the egg and breadcrumbs.

    So, each cheese stick goes to the following steps: egg-breadcrumbs-egg-breadcrumbs - baking sheet.

    Repeat the process with the remaining cheese sticks.

    Your next step is to place cheese sticks back into the freezer. (for about 3 hours or overnight)

    When you are ready to bake preheat oven to 450 F.

    Bake cheese sticks for 9 minutes.

    Serve with your favorite sauce, sour cream, garlic..

-Deep each stick into eggs, breadcrumbs, eggs, breadcrumbs and place into baking sheet

-Return to the freezer for 3 hours or overnight

Ingredients

Chocolate Chip Cookie Filling

2 eggs, large

1/2 cup brown sugar

1/2 cup white sugar

3/4 cup butter, unsalted and room temperature

1/2 cup flour, all purpose

1 cup chocolate chip cookies (Nestle or what you have, semi-sweet chocolate chips)

1 cup walnuts

INSTRUCTIONS

Preheat oven to 325 F.

Add eggs to the mixing bowl and mix until foamy and pale in color.

Add both sugars and mix again.

Then add flour and mix until flour is incorporated.

Your next step is to add butter. Beat until incorporated.

Stir in chocolate chips and chopped walnuts.

Remove the pie from the freezer.

Spoon the chocolate chip mixture into pie shell.

Bake for 55 minutes at 325 F or until knife inserted comes out clean.

Cool it.

Serve with your favorite ice cream or whipped cream. Sprinkle with shaved chocolate.

Eggs – I use large, organic. My favorite place to buy eggs is the local farmers market.

Butter – This recipe is using unsalted butter but if you don’t have it, use salted one.

Chocolate Chips – For this chocolate chip pie I used semi-sweet chocolate chips but you can use the one you like. Unsweetened, dark chocolate chips….It is your choice really)

Walnuts – they are expensive. My favorite place to buy walnuts is Costco.

This pumpkin pie recipe is my favorite recipe. Yes, the best homemade pumpkin pie. The one and only Thanksgiving dessert you will ever need.

Description of Easy Pumpkin Pie

This pie is light and fluffy, made with real heavy cream, pumpkin and blend of spices. The base for this pie is my homemade pie crust which you already have in your freezer. This really is the easiest pie or super easy pumpkin pie.

This recipe is MUST HAVE for Thanksgiving, but you can make it every month or every Friday if you want to. I am not judging you.

  • eggs, large
  • brown sugar
  • white sugar
  • ground cinnamon
  • nutmeg

MAKING EASY PUMPKIN PIE

Ingredients

9 inch prepared pie crust

2 cups canned pumpkin

1 1/2 cups heavy cream

1/2 cup white sugar

1/3 brown sugar

3 large egg

1/8 tsp salt

1 TBSP ground cinnamon

1/4 tsp nutmeg

1 cup walnuts, chopped

Optional: 1 1/3 cups heavy cream

1 pouch Dr. Oetker Whip It

INSTRUCTIONS

Preheat oven to 425 F. Place a baking sheet on the rack while preheating the oven.

Making PUMPKIN Pie Filling

Using a small bowl mix 3 eggs with fork. Set aside.

In a large mixing bowl add the following:

pumpkin, white and brown sugar, heavy cream, lightly beaten eggs, cinnamon, salt and nutmeg.

Mix all ingredients. Set aside for a second.

Remove pie crust from the freezer.

Cover the base with chopped walnuts.

Pour the pie filling over the walnuts.

Set the pie on the baking sheet and bake at 425 F for 15 minutes.

Then reduce the temperature to 350 F and bake for additional 45 to 55 minutes or until pie is set.

How to check if pie is baked? Insert knife into the filling about 1 inch from the side. If it come out almost clean it is done.

Remove the pie from the oven and cool.

Whipped Cream: In the mixing bowl mix heavy cream and Whip it.

Top the pie with whipped cream and decorate with pumpkin and cinnamon spices.

-Bake at 425 F for 15 minutes then reduce the oven temperature to 350 F and bake until pie is done. (45 to 55 minutes)

-Remove from oven, cool and top with whipped cream.

-Decorate with pumpkin and cinnamon spices.

QUICK NOTE

Eggs – use large, organic and room temperature

Pumpkin – I used canned pumpkin. Be sure it is PUMPKIN PURE (not pie filling)

Heavy Cream – I used 35%

Pie Crust – I used homemade but you can use store bought pie crust.

Walnuts – I like to cover base of the pie with chopped walnuts. If you are allergic, don’t use walnuts. Just pour the pumpkin filling on top of frozen base.

Why should you use walnuts (if you are not allergic)?

It adds flavor and it also prevents the crust from becoming soggy.
