Time to travel. Let’s go to Europe or one of my favorite Balkan’s country called Serbia.

And from Serbia we have the best birthday cake called Vasina Torta or Vasa’s Cake.

This cake has everything dreams are made of and we know what dreams are made of…

Chocolate – Walnut – Orange – More chocolate and keep dreaming. 

Description of Vasina Torta Serbian Vasa’s Cake

There are 3 layers for this cake:

-walnut sponge cake

-chocolate walnut filling with orange juice or simple the best chocolate mixture / chocolate filling

-white cloud made of egg whites, sugar and vanilla

This birthday cake is one of tastiest cakes you will ever make or try. 

Different cream layers makes this special cake the ideal dessert for special occasions. (birthday cake, wedding cake, Christmas Cake…)

Do you want to know a little bit of history regarding this legendary Serbian recipe…

Well, Vasa’s torte dates back to 1908, when it was prepared as a gift from a mother-in-law to Vasa (son-in-law).

Vasa took his wife to Vienna so she could give birth in a better conditions than in Serbia. What a nice husband don’t you think.

His mother in law as the thank you made this special cake. BTW, very expensive cake. Imagine in 1908 oranges were a real treasure in Serbia.

So, my dear readers if you love chocolate filling, orange juice, orange zest and you want to try one of the legendary serbian recipe you are welcome.

To make this dessert you will need to have the following ingredients (check below)

Shopping List for Vasa’s Cake (Vasina Torta)

– eggs (egg yolks and egg whites)

– sugar

– flour

– walnuts (ground nuts)

– icing sugar

– milk

– 1 orange (orange juice, orange peel)

– chocolate 

– butter

-vanilla extract 

Equipment Needed

-large bowl 

-KitchenAid mixer or hand mixer (using paddle attachment)

-medium bowl for flour mixture

-baking sheet (16 by 12 inches)

-large rubber spatula or wooden spoon

-measuring cup

-plastic wrap 

Action Time

Vasina Torta Serbian Vasa’s Cake – Balkan Desserts

Ingredients

6 eggs

7 TBSP sugar

8 TBSP walnuts (ground walnuts)

3 TBSP flour (all purpose flour)

​orange zest

Chocolate Filling

3 cups ground walnuts

4 TBSP milk

1 1/3 cups icing sugar

orange juice from 1 orange

3 oz chocolate, chopped chocolate

1/2 cup butter

4 egg yolks

​3 1/2 TBS sugar

White Cloud

1/2 cup sugar

1 cup water

4 egg whites

1/2 tsp vanilla extract (pure vanilla extract)

Instructions for making Serbian Vasa’s Cake

Line baking sheet with aluminum foil and spray with baking spray. Set aside.

Preheat oven to 375 F.

Separate egg whites from egg yolks.

Add egg whites to the mixing bowl and start mixing gradually adding sugar spoon by spoon.

Keep mixing until the stiff peak is created. (you should be able to turn bowl upside down and nothing should fall out)

Then add in the egg yolks, one at a time and mix until incorporated.

At this point stop using the mixer.

Add the flour, walnuts and orange zest and mix using the wooden spoon or spatula stir until combined.

IMPORTANT:Be sure the walnut / flour mixture is incorporated.

Transfer the Serbian cake to the baking sheet and bake until golden brown.

Remove from the oven and let it cool.

Making Chocolate Filling

Heat milk to boiling point.

Remove from heat and add ground nuts and icing sugar.

​Stir with wooden spoon until incorporated.

Then add chocolate and stir until melted.

Add orange juice and stir again. Let it cool.

Meanwhile mix 4 egg yolks and 3 1/2 TBSP white sugar in the bowl.

Using the double boiler method heat the egg yolks mixture until 158 F or 70 C.

Then remove from the heat and let it cool.

In the mixing bowl mix butter until smooth.

Add cooled egg yolks mixture and mix until incorporated. 

Then add walnut/chocolate mixture and mix everything until smooth.

​BTW, you are almost done. 

You just need to make the white dream sugar syrup topping.

Meringue Top or White Cloud

n a small pot bring sugar and water to boil.

Don’t stir. Just keep cooking until sugar syrup reaches 240 F. 

When syrup is almost ready, begin beating the egg whites until soft white froth forms.

Then, when your syrup reaches 240 F, carefully and slowly drizzle the syrup into the mixing egg whites.

Keep whipping the whites and sugar syrup for another 7 to 9 minutes. (or until you can touch the mixing bowl

and it is not hot)

Also, you will know it is done when the white mixture is stiff and glossy.

Add the pure vanilla extract and mix for a few more seconds.

Assemble of Balkan Dessert

Cut the cake to 9 inch round cake.  

Pour the chocolate filling or thick layer of the cream mixture over the cake layer and spread evenly.

​Cover the entire cake or just the top with the white dream filling.

Decorate as you wish. You can use your favorite chocolate, orange pieces and walnuts.

Transfer to the fridge for a few hours or overnight.

Enjoy and share because you just made the most special cake or one of the best Serbian cakes.

Quick Note

Eggs – I used large, organic eggs.

Chocolate – you can use dark chocolate or semi-sweet chocolate. I love using Lindt 70% Cocoa chocolate.

Walnuts – my favorite place to buy walnuts is Costco. (the best price)
