Easy recipe for the best carrot cake made with chopped walnuts, grated carrot, ground ginger and more.

  • heavy cream
  • maple syrup

-KitchenAid mixer or hand mixer (using paddle attachment)

-medium bowl for flour mixture

-baking sheet (16 by 12 inches)

Big Carrot Walnut Ginger Cake Recipe

Ingredients

5 eggs (large eggs)

1 cup buttermilk

2 2/3 cups white sugar

1 cup olive oil

2 2/3 cups all purpose flour

1 1/2 TBSP cinnamon

1/2 TBSP ground ginger

1 TBSP baking soda

2 1/3 cups carrot (grated carrots)

1 can crushed pineapple (398 ml)

2 cups chopped walnuts

3TBSP crystallized ginger, finely chopped

1 1/8 cup shredded coconut

​Cream Cheese Maple Icing

10 oz cream cheese (Philadelphia cheese room temperature)

3/4 cup butter

1/2 cup heavy cream

3 TBSP maple syrup

8 cups icing sugar (powdered sugar)

Instructions for making the best Carrot Cake

Line baking sheet (16 by 12 inches) with aluminum foil or parchment paper.

Spray with baking spray. 

Your first step is to add dry ingredients to the separate bowl.

Add all purpose flour, baking soda, ground ginger and cinnamon.

Stir all dry ingredients and set aside.

Next step – wet ingredients

In a large mixing bowl add eggs, oil, butter milk and sugar.

Mix well all wet ingredients on high speed  or until all ingredients are incorporated.

Then add dry ingredients and mix.

After mixing dry ingredients with wet ingredients you are almost done.

You need to add the following to the mixture: pineapple, grated carrots, coconut and crystallized ginger.

Mix until incorporated.

Pour the best cake batter into prepared pan.

Bake at 325 F for about 35 to 40 minutes.

For me the best carrot cake was baked in 36 minutes.

Please use cake tester to check if cake is done.

Remove from the oven and let the cake cool.

How to make Cream Cheese Maple Icing

To make the best carrot cake recipe you need to make the best cream cheese icing.

Your first step is to add cream cheese to the bowl of a mixer.

Mix on a high speed until smooth.

Then add butter and continue beating until smooth.

In a separate large bowl mix heavy cream.

Add heavy cream to the cheese/butter mixture and mix until incorporated.

BTW, you are almost done.

Add maple syrup and 6 cups of icing sugar (powdered sugar) and mix until incorporated.

Keep adding icing sugar until you get consistency you like or spreadable consistency you like to work with. ( I added 8 cups of icing sugar)

IMPORTANT: You can add up to 10 cups of icing sugar.

Assembly of Big Carrot Cake

Take your cooled cake and cut into 6 by 12 inch size. (you will have some extra cake)

Spread cream cheese maple icing on the first layer of the carrot cake.

Add second layer and cover with remaining icing.

Decorate with walnut pieces, grated ginger and cinnamon.

Transfer to the fridge for a few hours or overnight.

Eggs – I used large, organic eggs.

Cream Cheese – for this recipe we used Philadelphia cream cheese. You can use your favorite brand.

Pineapple – 1 can of crushed pineapple. (I did not use juice)

Walnuts – the best place to buy it is Costco.
