The ingredients for this recipe are simple: Dr. spinach, Italian parsley, ricotta cheese, garlic, mozzarella, olive oil and the rye bread.
Optional for this recipe: Gouda cheese and eggs (for me Gouda is must)

- spinach (organic if you can)
- Italian parsley
- ricotta cheese

Making Green Easy Sandwich Recipe
Ingredients
3 cups spinach (fresh, organic if you can)
2 cloves of garlic
1/4 cup Italian parsley
3 TBSP olive oil
1/4 cup mozzarella cheese
salt/black pepper to taste
1/4 cup ricotta cheese
3 slices of Gouda cheese (if you want to)
6 to 10 slices of your favorite bread (Rye bread, WW bread)
Optional: eggs
INSTRUCTIONS FOR MAKING Green Sandwich Recipe
Preheat oven to 375 F.
Line baking sheet with aluminum foil. Set aside.
In the bowl of a food processor add spinach, Italian parsley, garlic, salt and black pepper.
Blend adding the olive oil until completely smooth.
Then add mozzarella cheese and blend for a few seconds.
Spread the spinach mixture onto 3 slices of bread. (it will be thick amount of spinach)
Optional: Top spinach mixture with the Gouda cheese.
Then spread other 3 slices of bread with ricotta cheese and place over the spinach bread slice.
Top the covered sandwich with grated cheese, sprinkle of olive oil and and sweet red paprika.
Bake at 375 F for 10 minutes.
Option 2 for Green Easy Sandwich Recipe
When sandwich is baked top each sandwich with 1 egg, salt and oregano.
Return to over and bake at 400 F for additional 6 minutes or until baked to your liking.
I used cookie cutter to hold the egg on the top of the sandwich.
Serve with my favorite recipe Greek salad or Easy French Salad from Croatia-Let’s Travel.

Quick Note
Spinach – I used fresh, organic spinach.
Ricotta cheese – if you don’t have ricotta cheese use the sour cream or Philadelphia cheese.
Gouda cheese – I love this recipe with Gouda cheese but you can use slices of mozzarella cheese or your favorite cheese.
Italian Parsley – if you don’t have it you can use fresh basil.
Garlic – if you don’t like garlic don’t use.
Bread – I used Rye bread for this recipe. Please use your favorite bread. If you don’t like bread use green leaf lettuce.
