I am sure you are not surprise. After all the ferrero chocolate candy is one of the most popular chocolate products in the world.
So, are you ready to make this easy recipe for you, your family or friends?
To make this cake you need to buy the following ingredients listed under the list called…
SHOPPING LIST FOR HAPPY BIRTHDAY CAKE
- eggs (organic)
- sugar
- hazelnuts
- cocoa
- Nutella
- Philadelphia cheese
- chocolate
- corn syrup
- heavy cream
- flour
- baking powder
Equipment Needed
-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)
-mixing bowl (for the cake and the filling)
-glass or plastic bowl for dry ingredients
-small sauce pan (to make chocolate glaze)
-baking sheet (16 by 12 inches)
ACTION TIME
MAKING Happy Birthday Ferrero Cake
Ingredients
5 large eggs
4 TBSP sugar
2 1/2 cups grounded Hazelnuts
3 TBSP flour
2 1/2 TBSP cocoa powder
2 tsp baking powder (no aluminum)
Nutella FILLING
8 oz Philadelphia cheese
2 1/4 cups Nutella
3/4 cup heavy cream
Chocolate Glaze
6 oz dark chocolate, chopped (Lindt 70% cocoa)
2 TBSP corn syrup
1 cup heavy cream
Decoration: Nutella hot chocolate bombs, cappuccino bombs, sprinkles, lazy ground hazelnut, Ferrero Rocher candies.
INSTRUCTIONS

Our first step is making the cake.
Preheat oven to 350 F.
Line the baking sheet (16 by 12 inch) with aluminum foil.
Spray with baking spray and set aside.
Bowl 1: Add dry ingredients
Sift flour, cocoa and baking powder.
To that mixture add the ground hazelnuts and stir all ingredients together. Set aside.
Your next step will involve your favorite mixer (KitchenAid) and mixing bowl.
To the mixing bowl add fresh, room temperature eggs and sugar.
Mix on high speed for about 9 minutes or until tripled in volume.
The next step is to combine dry and wet ingredients. (remember bowl 1)
Using the spatula fold dry ingredients into the eggs, in 3 additions. (slowly)
SUPER IMPORTANT: Please, pay attention to this step.
Be very gently when mixing dry ingredients into the eggs mixture.
I will repeat again. Be sure the flour hazelnuts mixture is mixed or incorporated into the eggs mixture.
Pour batter into prepared pan and bake at 350 F for about 15 to 17 minutes.
Use a toothpick to check if the cake is done.
Remove from the oven.
Cool it for about 2 to 3 hours.
IMPORTANT: YOU CAN MAKE THIS CAKE DAYS AHEAD, COOL AND FREEZE.
HOW TO MAKE NUTELLA FILLING
Add cheese to the mixing bowl and mix until smooth.
Then transfer to the plate.
Using the same bowl mix the heavy cream for 2 minutes.
Then add cheese and mix until two ingredients are incorporated.
After that add Nutella and mix quickly. (for a minute or two)
Stir all ingredients using your favorite spatula.
And you just made the best Nutella filling.
MAKING CHOCOLATE GLAZE FOR Happy Birthday Ferrero Cake
If you are not on diet and you are not watching amount of sugar, you can make this chocolate glaze with semi-sweet chocolate.
Add chopped chocolate and corn syrup to the bowl.
Then heat the cream until almost boiling.
Pour it over chocolate and corn syrup mixture.
Let sit for 5 minutes.
Gently mix until smooth.
And yes, you just made the best chocolate glaze.
ASSEMBLY OF THE BEST CHOCOLATE CAKE
To make mini layer cakes, use knife and cut the ferrero cake into the sizes you like your birthday cake to be.
My choice is 5 by 5 square cakes. (you select the number you like).
Now, if you have your mini cakes we can start our assembly line.
Place the bottom layer of the cake to a plate.
Important: You can make this birthday cake using 2 or 3 layers.
Add Nutella filling, second layer cake, Nutella filling and then add the third layer of the ferrero rocher cake. Return to fridge until filling is set. (see note below why is this important)
Note: At this point, I find it is important to chill the cake before continuing to help the Nutella filling firm up. Usually, 30 minutes is enough.
Keep going until you use all mini cakes you have from 16 by 12 inches size.
Important: Keep all your mini cakes in the fridge until you are ready for chocolate icing.
EASY RECIPE CHOCOLATE ICING
BTW, you are almost done.
You just need to pour the best chocolate glaze over the cakes.
Then decorate with Nutella bombs, cappuccino bombs, shaved chocolate, ground hazelnuts, icing sugar and my favorite candies. Ferrero Rocher Candies!
Quick Note for Ferrero Cake Recipe

Cheese – for this recipe I used the Philadelphia cheese. (use light version) It has to be the room temperature. You can replace with any cream cheese you are using for baking.
Chocolate – For this recipe I used Lindt chocolate 70% cocoa. You can use semi sweet if you are not on diet.
