DESCRIPTION of Spinach Cheese Easy Pie
This recipe can be your breakfast, lunch, dinner or it can be a great appetizer, snack, side dish. So, yes this can be your main course. Serve with very healthy cold Greek yogurt or cold kefir. There is something in that combo, hot pie and cold yogurt that makes me happy. Another option is to serve with homemade salad.
This classic dish is made with phyllo sheets layered with spinach and cheese filling. Yes, yes and yes. My grandmother used to make her own phyllo sheets and so will we. (just kidding). We are using the store bought phyllo sheets. (thank you for 21 century)
The spinach cheese filling is super easy to make. Just a few ingredients sleeping together and sharing the magic of easy homemade pie.
So, what ingredients do we need in order to make this pie. Let’s check our ….
SHOPPING LIST
- phyllo pastry sheets (thawed)
- spinach (fresh)
- feta cheese
- ricotta cheese
- eggs
- yogurt (Greek)
- sour cream (14%)
- eggs
- oil (olive or use your favorite)
- salt
- black pepper (ground)
EQUIPMENT NEEDED
-big bowl (plastic or glass)
-1 medium size bowl
-4 cups measuring cup or bowl (for cheese sauce)
-9 by 13 baking pan (I used glass)
Making Spinach Cheese Easy Pie
Ingredients
1 package of phyllo pastry sheets
2 cups ricotta cheese
1 1/2 cups feta cheese
1 package of fresh spinach (312 gr)
4 eggs
1 1/2 tsp salt
1 tsp ground black pepper
3 TBSP sour cream (14%)
Pie sauce
1 1/2 cup Greek yogurt (or use plain yogurt)
1/2 cup oil
INSTRUCTIONS
Preheat oven to 400F.
In a large bowl, thoroughly combined ricotta cheese, feta cheese, eggs, salt and pepper. Set aside.
Important: Use salt and pepper to your taste.
Your next step is to chop the spinach into the medium size bowl.
Transfer the chopped spinach into the cheese mixture and stir until all ingredients are combined.
Making pie sauce – add yogurt and oil into the bowl. Just stir using the wooden spoon. Set aside.
Now, you just made spinach cheese filling and pie sauce.
Your next step is assemble of the pie.
Grease 9×13 pan with oil. (use 3 TBSP oil,be generous)
Place 3 sheets of phyllo into prepared 9×13 pan, with their ends crossing.
Lightly brush it with yogurt oil mixture.
Continue with 3 more sheets of phyllo. (be sure each is brush with yogurt oil mixture).
Then spread 1/3 of the total filling. (for me it was about 1 1/2 cups).
Add another 3 sheets of phyllo. (be sure each is brush with yogurt oil mixture)
Your next step is to add spinach cheese filling.
Then repeat one more time: 3 sheets of phyllo + spinach cheese filling.
Now those ends that are hanging on the sides put over the filling.
Top with 2 sheets (folded so that fits the size of 9×13). It doesn’t need to be perfect.
Top with the yogurt oil mixture.
And you are almost done, just spread 3 TBSP of sour cream over the pie. (as evenly as you can)
Bake at 400 F for about 50 minutes or until golden brown.
Remove from the oven and cover with kitchen towel for about 30 minutes.
Slice into desired size.
Optional: You can top with more sour cream, feta cheese or yogurt.
Enjoy and share.
Quick Note
Feta cheese – for this recipe we used the feta cheese from the Superstore. (TRE STELLE FETA CHEESE)
Eggs – large, organic from the local farmers market
Ricotta cheese – for this recipe we used – check the picture
Yogurt – I used organic Greek yogurt
Oil – my choice is always olive oil. If you don’t have it use the oil you use every day.
FINAL NOTE for Spinach Cheese Easy Pie
This is the magical pie from the Balkan.
It is very popular dish in Serbia, Bulgaria, Croatia, Bosnia. So, if you can’t afford to travel…well you can bake.
So, bake the dish from East Europe and share. Share until hurts.
