If not 5 star cookies have solution for you, which is…you guess – Baking. And for today the baking is GF! It is my favorite and the best gluten free recipe you will ever try. I call it Golden Recipe. So easy, so delicious!
So, let me describe why is this best gluten free recipe and why you should make it?

Gluten free easy summer dessert is the blast from the past. Yes, this cake has the history. Very successful and winning history. And when you make this recipe you will forget the flour. (sorry flour…this is not a discrimination)
It is so good that no one will be able to resist this GF dessert. Spectacular gluten free dessert. Not even your crazy uncle who don’t believe in GF. What else can I say? This dreamy summer recipe is made with very creamy filling in between two golden layers of light and sunshine. Add to that fresh, sweet, summer strawberries from your favorite farmers market and you have the winner. The best GF golden recipe.

SHOPPING LIST
- eggs (large, organic)
- sugar
- white chocolate chips
- heavy cream
- strawberry jam
- fresh strawberries
- Whip It
- semi-sweet chocolate (for decoration, so it is optional)
EQUIPMENT NEEDED
-your favorite mixer (my favorite is the best one – KitchenAid Mixer)
-2 mixing bowl
-2 round baking pans (6 or 7 inches)
ACTION TIME
Making Gluten Free Easy Summer Dessert
Ingredients
6 large eggs (organic) separated
1 bag of white chocolate chips (225 gr Hershey’s)
1/2 cup sugar
1/4 cup warm water
Filling
3 cups heavy cream
1 bag of Whip It
1/2 cup strawberry jam
1/2 cup strawberries, chopped
3 TBSP strawberry jam
6 whole strawberries for decoration
Instructions
Prepare 2 round pans and line them with parchment paper. (picture 1)
Your first step is to make 2 golden cakes.
So, let’s start with melting white chocolate chips.
Add 1/4 cup water to white chocolate chips and melt it using double boiler method.
Mix until white chocolate is melted and smooth. Set aside to cool slightly. (picture 2)
Meanwhile, find two mixing bowls.
(One will be for egg yolks, the other for egg whites.)
Mixing bowl 1
Add 6 egg yolks into the bowl number 1.
Mix until egg yolks are pale and thick. (4 to 5 minutes)
Then fold in the melted, cooled white chocolate. Set aside.
BOWL NUMBER 2 (EGG WHITES)
In a bowl number two, mix 6 egg whites until foamy.
Add 1/2 cup sugar and whip until soft meringue.
Your next step is very important – transfering egg whites from the bowl 2 to bowl 1
Gently fold 1/3 whipped egg whites into yolk/white chocolate mixture.
Fold until incorporated. Use the spatula.
IMPORTANT: DON’T USE THE MIXER
Then quickly fold in the remaining whites and gently folded until no streaks remain.
Pour butter into prepared 2 round pans. (6 or 7 inches)
Bake at 350 F for about 30 to 35 minutes.
Cool cakes in pans.
Make Filling for GF easy summer dessert
Mix heavy cream and Whip It. (if you don’t have whip it, just mix the heavy cream)
Add strawberry jam.
Mix all ingredient together until incorporated.
In a small bowl stir together 1/2 cup fresh chopped strawberries and strawberry jam.
Assembly Line
Layer 1 + Filling + Chopped fresh strawberries and jam + Layer 2 +Filing
Decorate with whole strawberries and shaved chocolate.
Keep in the fridge for 8 hours or overnight.
Enjoy and share.

White chocolate chips -I used Hershey’s (package of 225 gr Hershey’
EGGS – please use fresh, organic eggs
Strawberry jam – I used seedless strawberry jam.
Strawberry – use fresh strawberries from your garden, farmers market or your favorite store
Whip It – It is one of my favorite product by Dr. Oetker. If you can’t find it or don’t have it in your country just make the filling without the whip it.
