How to make Egg Spinach Breakfast?

Ingredients

(for 1 person)

1 egg, large organic

1/8 cup fresh spinach, chopped

Italian parsley (as much as you like)

1/8 tsp salt

1 tsp olive oil

For 2 people

2 eggs, large organic

1/4 cup fresh spinach

Italian parsley

Salt

1 tsp olive lil

INSTRUCTIONS

Add egg, chopped spinach, Italian parsley and salt to a small bowl or plate.

Mix using the fork. Set aside.

Heat 1 tsp olive oil in nonstick pan until hot.

Pour egg spinach mixture into pan.

Let it cook until top surface of egg is thickened. (no visible liquid egg remains)

Then use the spatula or knife to flip the egg spinach mixture.

Continue cooking for 10 seconds and then slide onto plate.

Serve with green salad.

Follow the same instructions if you are making for 2 people or more.
