APRICOT COCONUT BALLS

What can I say about this recipe?
-Delicious and super easy to make.
-It is a perfect portable snack to have on hand.
-No bake recipe.You don’t need oven for this recipe.
-healthy recipe, no added sugar

- COCONUT
- ORANGES

APRICOT COCONUT BALLS
*************************************

Ingredients
1 cup apricots
1 cup walnuts
1 orange
1/3 cup coconut
3 mandarin (small)
1/4 coconut to coat balls
Instructions
Roughly chop the dried apricots into small pieces and place into a glass bowl.
Set aside.
Squeeze the juice from 1 orange and mandarins into a small pot and bring to boil.
Take off the heat and pour over chopped apricot.
Let them soak for about 1/2 hour.
After 1/2 hour find your food processor.
It will do all job for you.
So put all ingredients into food processor:
-soaked apricot, 1 cup of walnuts, 1/3 cup coconut
Process until the mixture is like a fine crumb mixture.
It should be sticky when you pinch a small amount between your fingers.
You can add more orange juice if it is too dry.
Roll tablespoons of the mixture into a small balls and then into coconut to coat.
Chill in the fridge for about 45 minutes.
Enjoy and share.

STORAGE
-Store apricot balls in a covered container in the fridge for 2 weeks.
