- butter
- icing sugar
- eggs
- flour
- raspberry jam
- almond and vanilla extract
- cherries (candied)

MAKING EMPIRE COOKIES

Ingredients
1 cup butter
3/4 cup icing sugar
3 egg yolks
1/2 TBSP vanilla extract
2 +1/2+ 1/8 cups flour (AP)
Raspberry jam
Icing for Empire Cookies
1 1/2 cups icing sugar
3 TBSP warm water
1/2 TBSP almond extract
Instructions for making Imperial Cookies
Line 3 baking trays with parchment paper.
Set aside.
Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)
Add egg yolks and vanilla extract and mix for about 1 minute.
Add sifted flour and stir until blended.
Shape into a disc and wrap in plastic wrap.
Chill for about 3 hours.
After chilling….
Time to play with your dough…
Roll it out to 1/4 inch thick.
Cut out the cookies using any cookie cutter you like.
Place the cookies on the baking tray with 1 inch space between them.
Bake cookies at 350 F for 10 minutes.
(it should be lightly browned around the edges)
Cool the cookies.
Spread half of the cookies with 1/2 TBSP raspberry jam and top with remaining cookies.
Repeat with the remaining cookies.
Icing for the Empire Cookies
Combine icing sugar, almond extract and enough hot water to make a thin icing.
Â
Frost tops of cookies and decorate with a small piece of candied cherry.
Say thank you.
Allow icing to dry. (about 1 hour)
Keep them in airtight container. (3 days)

Please use room temperature butter. (allow the butter to sit out on the counter for about 2 hours)
Room temperature butter is about 65 to 67 F.
You can test using your finger. It should make an indent and not slide down into the butter.

Yes, you can freeze the cookie dough. (for about 3 months)
Also, baked cookies can be frozen. (without filling and icing)
