POLENTA-SHOW TIME!
Ingredients
1/3 cup of polenta
1 1/3 cup water
1/2 tsp salt
Instructions
Pour 1 and 1/3 cup water, 1/2 tsp salt into a medium saucepan and bring to the boil.
Once the water is boiling, add 1/3 cup polenta.
Lower the heat to medium-low and stirring constantly cook the polenta until thickens.
I will repeat again: Stir NON-STOP until thickens and little bubbles “erupt”!
For me it was 4 minutes.
Remove from the heat. Serve…
Use the ice cream scoop to scoop your polenta into a serving dish.
Optional:
Sprinkle with feta cheese or Italian parsley.
Serve with Greek yogurt or sour cream.
